I got the ingredients for these in an antique mason jar from a co-worker for Christmas along with a recipe - I changed the recipe a little - added some coconut - and loved them!!!

2 stick butter, softened
1 c dark brown sugar, packed
1/3 c granulated sugar
1 large egg
2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp salt
1 3/4 c all-purpose flour
1 c old fashioned rolled oats
1 c sweetened grated coconut
1 1/2 c andes peppermint crunch baking chips

Steps:

  • 1. Preheat oven to 300 degrees.
  • 2. Using an electric mixer, cream the butter and sugars until fluffy - about 3 minutes.
  • 3. Beat in egg and vanilla extract.
  • 4. On low speed, add baking soda, salt and then flour. Mix completely.
  • 5. Stir in oats, coconut and 1 cup of baking chips.
  • 6. Measure out 2 tablespoons - form into a ball and place on lightly greased cookie sheet, 2 inches apart. Press lightly and sprinkle with some of the remaining chips. Bake for 20 minutes. Let cool on pan for 2 minutes, then remove to wire rack. these are also good drizzled with dark chocolate!!

The flavor is fabulous, but for some reason, when I baked them, they wouldn't bake through and I had to scrape them off the cookie sheets. They ended up being tasty, slightly chewy blobs... Perhaps someone will be brave enough to try this or to help me figure out how to fix the recipe?

1 cup unsalted butter, softened
1 cup dark brown sugar, packed
1/3 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups flour
1 cup old fashioned oats
1 cup sweetened flaked coconut
1 1/2 cups Andes mint baking chips
1 1/4 cups coarsely chopped pecans (optional)

Steps:

  • Preheat oven to 300 degrees F.
  • Using an electric mixer, cream the butter, brown sugar, and granulated sugar until fluffy (about 3 minutes).
  • Beat in egg and vanilla extract.
  • On low speed, add baking soda and salt, and then flour. Mix completely.
  • Stir in oats, coconut, pecans, and Andes baking chips.
  • Measure out 2 tablespoons for large or 1 tablespoons for small cookies. Place on lightly greased cookie sheet two inches apart. Press lightly with a fork so they are about 1/4 thick (like peanut butter cookies).
  • Sprinkle some of the remaining chips (from the 10 oz. bag) on top of each cookie.
  • Bake for 20 minutes for large cookies or 12-15 minutes for small. Do not overbake.

3/4 Cup butter, softened
1/2 Cup sugar
1/4 Cup brown sugar
2 Tablespoons milk
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
2 3/4 Cups all-purpose flour
1/2 Cup unsweetened baking cocoa
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 Cup dark chocolate chips
1 Cup Andes peppermint crunch baking chips

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.
  • In a the bowl of a stand mixer (or with an electric mixer), cream together butter and sugars. Add in milk, eggs, vanilla extract, and peppermint extract and beat until creamy.
  • In a medium bowl, whisk together flour, baking cocoa, baking soda, and salt. Add dry ingredients to wet ingredients and beat until combined. Stir in dark chocolate chips and peppermint baking chips.
  • Drop by tablespoon full onto prepared baking sheet. Bake for 8-10 minutes or until edges are set. (Middles may appear under-baked but will set as they cool.)
  • Allow cookies to cool for 2 minutes before removing to a wire rack to cool completely.
  • Store in an airtight container.

Buttery, rich peppermint shortbread cookies couldn't be easier to make. Just slice and bake!

1 cup (2 sticks) unsalted butter, softened
¾ cup powdered sugar
1 teaspoon pure vanilla extract
1 teaspoon salt
2 ⅓ cups all-purpose flour
¾ cup Andes peppermint crunch baking chips

Steps:

  • In a stand mixer fitted with the paddle attachment, cream butter, powdered sugar, vanilla, and salt until smooth. Gradually add flour and mix on low until combined. Add Andes baking chips and continue mixing on low until fully combined.
  • On wax paper or parchment paper, form into a 12- to 14-inch log and freeze at least 30 minutes or until firm.
  • When ready to bake, preheat oven to 350°F. Cut the shortbread dough into 1/4-inch slices and bake for 13-15 minutes on parchment lined baking sheets.
  • Note: If you freeze the dough for longer than 30 minutes, you may have to let it set out at room temperature for 30 minutes or so to achieve uniform slices.

1 cup butter, softened
1/2 cup sugar
1 teaspoon peppermint extract
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
Red and green paste food coloring
8 ounces dark chocolate candy coating, melted
3/4 cup crushed peppermint candies

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in extracts. Gradually beat in flour. Divide dough in half; tint 1 portion red and the other green. Wrap each in waxed paper; refrigerate 2 hours or until easy to handle., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until firm. Remove from pans to wire racks to cool completely., Dip half of each cookie into melted candy coating; allow excess to drip off. Sprinkle with crushed candies. Place on waxed paper; let stand until set.

1 box white cake mix (15.25 oz.)(I use Pillsbury)
1 stick butter, melted (8 Tbsp.)
1 egg
1/2 teaspoon peppermint extract
1/2 teaspoon vanilla extract
4 ounces cream cheese, softened
1 cup Oreo cookie chunks
1 cup Andes Peppermint Crunch pieces
1/2 cup dark chocolate chips

Steps:

  • Instructions Combine the cake mix, melted butter, egg, and extracts. Beat until a soft dough forms. Add the cream cheese and beat in gently until combined. Stir in the peppermint crunch pieces and chocolate chips first. Then gently stir in the cookie pieces by hand being careful not to break up the cookie more. Refrigerate dough for at least 30 minutes. Roll the dough into 36 balls. Bake on a cookie sheet at 350 degrees for 9 minutes. Do not over bake. The cookies will be very soft and look undone. Let them sit on the hot cookie sheet for 2 minutes, then gently remove them with a spatula to a piece of wax paper on the counter. Very gently tap the tops of the cookies with the bottom of the spatula to even out the tops. Let them sit until completely cool. Store in a sealed container. Makes 36 cookies.
