SALAD WITH ANCHOVY-MUSTARD VINAIGRETTE
Anchovies add a salty depth of flavor to this bright, garlicky salad dressing. Here it's tossed with radicchio and arugula, but it will work on any full-flavored salad greens. Try it on frisée, spinach or raw baby kale. If you want to make this in a blender, double the quantities so the dressing emulsifies properly. Leftovers will keep in the refrigerator for up to three days.

- To make the dressing, use the flat side of a knife or a mortar and pestle to make a paste out of garlic and a pinch of salt. In a small bowl, whisk together garlic paste, anchovy, mustard and lemon juice. Slowly whisk in oil until combined. Season with salt and pepper and more lemon if desired.
- In a large bowl, toss enough dressing with arugula and radicchio to lightly coat leaves. Serve immediately.

- Combine all ingredients except shallot in a blender, and turn the machine on. A creamy emulsion will form within 30 seconds. Taste, and add more vinegar if necessary, about a teaspoon at a time, until the balance tastes right.
- Add shallot, and turn machine on and off a few times, until shallot is minced within the dressing. Taste, adjust seasoning and serve. (This vinaigrette is best made fresh but will keep refrigerated for a few days. Before using, bring it back to room temperature, and whisk briefly.)

BASIC ANCHOVY VINAIGRETTE
Steps:
- Grate, press, or mince the garlic and combine with the lemon juice, anchovy paste, Dijon, salt and pepper in the bowl of a blender or food processor.
- Drizzle in the oil slowly, along with the tablespoon of water, running the machine on medium-high, until you get a creamy emulsion. Store in a pint jar in the fridge and shake before using.

- Bring a large pan of water to the boil. Cook the beans for 4 mins, so they still have a slight crunch, then scoop out with a slotted spoon into a colander and cool quickly with cold water. Tip the potatoes into the pan, add the eggs and simmer everything for 8 mins. Lift out the eggs, then leave to cool while the potatoes cook for 2 more mins until tender. Drain the potatoes.
- For the dressing, mash the anchovies with the side of a knife, then mix with the vinegar and olive oil in a large bowl. Stir in the beans, potatoes, olives and tomatoes. Peel and halve the eggs. Put the leaves into a large serving bowl, add the potato mix and eggs, then serve.

- Separate romaine leaves. Cut crosswise into 1/2-inch-wide pieces, wash well, and spin dry.
- With a vegetable peeler, shave 1/3 cup parmesan curls.

- In a bowl combine anchovies and 1/4 cup vinegar and let stand 6 hours if using salted anchovies, 2 hours if using bottled or canned. Drain anchovies (debone if using salted) and rinse well. Pat anchovies dry between paper towels and in small food processor blend with garlic until garlic is minced. Add oil, remaining 2 tablespoons vinegar, salt, and pepper and blend dressing until smooth and emulsified. Dressing keeps, covered and chilled, 1 week.

- For the croutons, tear the ciabatta up into bite-sized pieces. Heat 1 tablespoon of oil in a large non-stick frying pan over a medium-high heat. Once hot, tip in the ciabatta and toss well to coat in the oil.
- Cook gently for 5 to 10 minutes, or until crisp and golden; try to resist adding more oil – they will turn golden given a bit of time. Tip onto a plate, then wipe out the pan with kitchen paper and set aside.
- Bring a large pan of salted water to the boil, then add the broccoli and cook until just tender (about 5 minutes for purple sprouting or 3 minutes for tenderstem).
- Fill a bowl with cold water, then lift the broccoli from the pan and into the cold water to cool. Keep the pan of water on the hob.
- Gently lower the eggs into the pan of boiling water and simmer for. 6 minutes, or until they are just soft in the middle. Drain and set aside.
- Tip the broccoli into a colander, then cool the eggs in a fresh bowl of cold water for a few minutes.
- Next, combine 1 tablespoon of oil with the mustard, vinegar and sugar, plus 1 tablespoon of cold water and a little seasoning to make the dressing. Peel, then halve the eggs.
- Put 1 tablespoon of oil in the frying pan, place over a medium heat and fry the garlic for 30 seconds. Toss in the drained broccoli and cook for 2 minutes over a high heat, until starting to colour here and there.
- Spread the broccoli over a platter, then add the eggs, croutons and anchovies. Scatter with the chilli, drizzle over the dressing and serve.
