SPAGHETTI WITH WALNUTS AND ANCHOVIES

Spaghetti With Walnuts and Anchovies image

This is a pared-down version of a recipe that I came across in Nancy Jenkins's informative book on Southern Italian food, "Cucina del Sole." The dish is traditionally part of a meatless Christmas Eve dinner. If you can find freshly harvested walnuts, they'll make this pasta even better.

Provided by Martha Rose Shulman

Categories     dinner, weekday, pastas, main course

Time 20m

Yield Serves four

Number Of Ingredients 8

1/2 cup shelled walnuts (2 ounces)
1/4 cup extra virgin olive oil
3 garlic cloves, minced
4 anchovy fillets, coarsely chopped
3/4 pound spaghetti
1/4 cup minced flat-leaf parsley
freshly ground pepper
1/4 cup freshly grated pecorino (optional)

Steps:

  • Begin heating a large pot of water over high heat. Meanwhile, lightly toast the walnuts on a baking sheet in a 375-degree oven for just a few minutes until fragrant, or in a pan over medium-high heat, stirring constantly. When the walnuts smell like they're beginning to toast, remove them from the heat and transfer to a clean dish towel. Wrap them in the towel, and rub between your hands to remove some of the papery shells. Chop the nuts medium-fine, and set aside.
  • In a wide, heavy skillet or saucepan large enough to accommodate the cooked spaghetti, heat the oil over medium heat and add the garlic. Cook, stirring, until it begins to sizzle, and add the anchovies. Cook, mashing the anchovies with the back of your spoon or with a fork, for about 30 seconds until they begin to fall apart and melt into the oil. Add the walnuts, stir together for about a minute and remove from the heat.
  • When the water comes to a boil, salt generously and add the spaghetti. Cook al dente, following the timing recommendations on the package but checking about a minute before the indicated time. When the pasta is almost done, add 1/4 cup of the pasta water to the pan with the walnuts and anchovies, and reheat over medium heat.
  • When the pasta is ready, drain and toss with the walnut and anchovy mixture. Add the parsley, adjust salt if necessary and add pepper. Serve, passing the pecorino at the table.

SPAGHETTI WITH FENNEL, ANCHOVIES, CURRANTS, PINE NUTS & CAPERS

Spaghetti with fennel, anchovies, currants, pine nuts & capers image

Knock up a no-hassle family supper in under 30 minutes. This spaghetti dish with fennel, anchovies, currants, pine nuts and capers is salty, sweet and simple

Provided by Diana Henry

Categories     Dinner, Lunch, Pasta, Supper

Time 25m

Yield Serves 4-5

Number Of Ingredients 11

2 fennel bulbs
400g spaghetti
50ml extra virgin olive oil
3 garlic cloves , finely sliced
100g jar anchovy fillets in olive oil, roughly chopped
½tsp dried chilli flakes
70g currants , soaked in boiling water for 5 mins and drained
2 ½ tbsp capers , rinsed
1 small pack flat-leaf parsley , leaves picked and finely chopped
75g pine nuts , toasted
good squeeze of lemon juice

Steps:

  • Quarter the fennel bulbs. Remove the coarse outer leaves and trim the tips (cut off and reserve any fronds). Remove and discard the core from each quarter, then chop the rest of the fennel.
  • Cook the spaghetti in a pan of boiling, lightly salted water. Meanwhile, heat the oil in a large frying pan. Sauté the fennel until soft, then add the garlic and cook gently until pale gold. Add the anchovies, press with a wooden spoon, then add the chilli. When the anchovies fall apart, toss in the currants, capers, parsley and most of the pine nuts.
  • Drain the pasta and immediately add it to the frying pan. Add the lemon juice and season to taste. Toss together, then serve straight from the pan or transfer to a large warm serving bowl. Scatter over the remaining pine nuts and any fennel fronds.

ANCHOVY GARLIC SPREAD

Anchovy Garlic Spread image

A change from garlic toast. You need to at least "like" anchovies for this one! Serving size depends on how thick or thin you spread the mixture on each slice of bread.

Provided by Rise3834

Categories     Spreads

Time 8m

Yield 8 slices

Number Of Ingredients 4

1 can flat anchovy
2 tablespoons olive oil
10 -12 cloves garlic
mozzarella cheese (shredded)

Steps:

  • Saute' garlic in oil (do not brown).
  • Add anchovies and cook/saute for a few minutes.
  • Put mixture in blender or food processor and puree.
  • Spread onto sliced French, Sour Dough or Italian bread.
  • Cover each slice with desired amount of cheese.
  • Place under broiler until the cheese becomes bubbly.
  • Note: if you are not terribly fond of anchovies (very salty fish) I would put on a thinner spread.

PASTA WITH A ANCHOVY, SPINACH AND PINE NUT SAUCE

Pasta With a Anchovy, Spinach and Pine Nut Sauce image

This recipe actually originated from a collaboration between my girlfriend (who lives in Italy) and myself one night. She was visiting, and after spending the day at the beach we were starving. Well, other than a few pantry items, a couple of slices of a baguette, 1 fresh tomato and not much else this was the end result. We came up with this amazing angel hair pasta, frozen spinach, pine nuts (yes, I always have them in the freezer), of course some parmesan, and lastly anchovies (yes, I keep those too, I add them to many sauces). Well we made this pasta which was great, grilled the baguette and broiled the tomato slices with nothing more than a little balsamic, olive oil, s/p and fresh basil. Dinner was amazing and so was this pasta. Now this is a light pasta dish, but has so much flavor. I actually like to serve this as a side dish sometimes if you don't want to serve it as a main dish. It is great as a side with grilled fish like, Halibut, Cod, Tilapia or even grilled scallops. I like use a lemon, olive oil, salt and pepper marinade for the seafood to keep it simple which goes well with the pasta. Give it a try, I know you will really enjoy it. I never really liked anchovies until I tried them toasted or sauteed - they get nutty and sweet. This is literally a 20 minute great dish and serves 4 for a pretty good price. As I said, some fresh tomatoes, grilled bread and dinner in a hurry for family or friends.

Time 20m

Yield 4 Plate Servings, 4-6 serving(s)

Number Of Ingredients 11

2 (10 ounce) boxes frozen leaf spinach (thawed and squeezed)
1 (1 lb) box angel hair pasta (you could also use thin spaghetti is you want)
4 teaspoons minced garlic
1 large shallot, thin sliced
8 anchovy fillets, chopped (canned)
5 tablespoons pine nuts, toasted (3 crushed, 2 whole)
1 teaspoon lemon juice
1 teaspoon lemon zest
4 tablespoons olive oil
3 tablespoons butter (no margarine)
grated parmesan cheese

Steps:

  • Spinach -- Just thaw and squeeze dry and set to the side. It will take only a couple of minutes to heat up in the sauce.
  • Pasta -- Again, takes just minutes for Angel Hair pasta to cook so make sure you sauce is done or at least started. This dish only takes minutes.
  • For the pasta cook according to directions - a large pot of salted water. when done, drain and set to the side to keep warm.
  • Sauce -- In a large saute pan, add the oil and and bring to a medium high heat. Add the pine nuts and toast until golden brown. They will only take a minute and stir often. Remove to a paper towel to let them drain. Then add the garlic and shallot and cook two minutes until they start to get golden brown, add the anchovies and cook another minute. Add the spinach breaking it up as you add it to the pan along with the butter and cook 2-3 minutes.
  • Pine Nuts -- I take about 1/2 or a little less and break them up a bit. You can just use the back of a fork or you can put them in a baggie and just hit them with the bottom of a pan or bowl to slightly crush them. You just want to break them up a bit.
  • Finishing -- Pasta should be done and drained. Simply add the pasta to the sauce pan along with the pine nuts, lemon juice and zest and toss well.
  • Garnish with fresh grated parmesan. Literally a 20 minute dish and absolutely delish! And if you think you didn't like anchovies, you will.

BRAISED GREENS WITH ANCHOVIES, GOLDEN RAISINS, AND PINE NUTS

Braised Greens with Anchovies, Golden Raisins, and Pine Nuts image

Nope, this is not a recipe from my grandmother, but instead something I had at a neighborhood restaurant in Seattle many years ago. I came home and tried to recreate the awesome flavor and have been making it ever since. Think of this as a guideline rather than a recipe. The amount of anchovies, garlic, and red pepper flakes are all really up to you. I like to serve this in a bowl with a big piece of corn bread on top. Enjoy!

Provided by Ula Hedwig

Categories     Side Dish     Vegetables     Greens

Time 50m

Yield 4

Number Of Ingredients 14

1 (2 ounce) can anchovy fillets
1 tablespoon olive oil
1 cup golden raisins
1 lemon, zested and juiced
4 cloves garlic, finely chopped
½ tablespoon red pepper flakes
¼ pound kale, thick stems trimmed, leaves coarsely chopped
¼ pound Swiss chard, trimmed and chopped
¼ pound collard greens, tough ribs removed and leaves chopped
¼ pound radicchio, cored and chopped
1 cup dry white wine
1 cup chicken stock
½ cup pine nuts, toasted
salt and ground black pepper to taste

Steps:

  • Add anchovies and their oil to a large saute pan; pour in olive oil. Cook over medium heat, stirring with a wooden spoon, until anchovies melt into the oil, 3 to 5 minutes. Add raisins, lemon zest, garlic, and red pepper flakes. Cook until garlic starts to soften but not darken, about 2 minutes.
  • Place kale, chard, collard greens, and radicchio in the pan. Use tongs to move greens around so they're coated with oil. Cook until starting to wilt, about 2 minutes. Pour in white wine and chicken stock. Cover and simmer, stirring occasionally, until greens are tender, about 20 minutes.
  • Stir pine nuts into the greens. Season with salt and pepper. Stir in lemon juice as desired.

Categories     dessert

Time 1h15m

Yield 6 servings

Number Of Ingredients 13

1 1/3 pounds whole-wheat flour
1 pinch fine sea salt
5 egg yolks
1 cup white wine
4 1/2 ounces butter
3 tablespoons extra-virgin olive oil, divided
2 cloves garlic, sliced thinly
2 tablespoons rinsed salted capers
18 fillets salted anchovies, 1/2 chopped for sauce and 1/2 left whole for garnish
Salt and freshly ground pepper
1 bunch fresh marjoram, leaves for sauce and florets reserved for garnish
3 tablespoons pine nuts, toasted
3 1/2-ounce block Parmesan, for shaving

Steps:

  • Pasta: In a large mixing bowl, combine flour and salt. In a separate bowl, lightly beat egg yolks and add 1/2 cup wine. Make a well with the flour and pour the egg mixture into the well. Begin to make the pasta by incorporating the eggs and the remaining wine into the flour with a fork. When the pasta starts to form, discard fork and work the pasta into a dough. Kneed pasta until smooth. Wrap pasta in plastic film and let rest at room temperature for 20 to 30 minutes.
  • With a pasta machine, roll out the pasta to the second thinnest setting. Cut into desired shapes.
  • Bring a large pot of boiling salted water to a boil.
  • Sauce: In a large saute pan over low heat, add the butter and toast until golden brown. Add 1 tablespoon olive oil and mix well. Add the sliced garlic and sweat until translucent. Add capers and anchovies and continue to sweat. Add a drop of the pasta water to slow the cooking and to prevent the garlic from browning. Season with salt and freshly ground black pepper. At this point, drop the pasta into boiling salted water and cook until al dente, about 4 minutes.
  • Drain pasta and add to the sauce, tossing to coat. Add the remaining olive oil, marjoram leaves and a little pasta water. Finish with a drizzle of olive oil.
  • Divide pasta and sauce among 6 dishes. Top with anchovy fillets, marjoram florets, pine nuts and a shaving of Parmesan. Serve.
