REAL ANCHOR BAR BUFFALO WINGS
The Anchor Bar is famous for their buffalo wings. Copy them at home with this recipe. The secret to the restaurant version is in the seasonings!

- Combine the hot sauce, margarine, vinegar, celery seed, cayenne, red pepper, garlic salt, black pepper, Worcestershire sauce, and Tabasco in a saucepan over low heat. Cook, stirring occasionally, until the margarine has melted. Keep the sauce warm while you prepare the wings. Heat oil in a deep fryer to 375 degrees F. Separate the flappers and drummies and discard the wing tips. Add the wings, in batches as needed, to the hot oil and cook for 8-10 minutes or until crisp and cooked through. Remove the wings from the oil and let drain on paper toweling for a couple of minutes. Place the fried wings in a large bowl. Pour the buffalo sauce over the wings and toss them gently to coat them in the sauce. Make sure they are completely coated. If desired, place the wings on a rimmed baking sheet and place them under the broiler for 3-5 minutes for a crispier coating. Serve the wings with blue cheese or ranch dressing, celery sticks, carrot sticks, and cold beer.

- Gather the ingredients.
- Dry wing pieces well with paper towel.
- Heat a large pot filled with 2 to 3 inches of the cooking oil to 350 F. Set the oven to warm.
- Place a few wings at a time in the hot oil to fry. Do not crowd the pot.
- Fry for 10 to 12 minutes until they are golden brown and crispy.
- Remove with a slotted spoon to a baking sheet and place in the oven to keep warm while you cook the remaining wings.
- After all of the wings are cooked, transfer to a large mixing bowl. Pour the hot sauce over the hot wings and toss with a spoon or spatula to completely coat.
- Serve immediately with celery and blue cheese dressing on the side. Enjoy.

This is the original spicy Buffalo chicken wings recipe from the Anchor Bar in Buffalo, NY. You can adjust the heat by adding more or less cayenne and Tabasco. There are many Buffalo chicken wing recipes out there, but if you want to taste the "real" thing give this a try. The chicken wings are deep-fried in the original recipe, but the hot oven works fine for the home version. Makes 6 Servings of Buffalo Chicken Wings (6 per person)

- If necessary, cut whole wings into two pieces. In a bowl toss the wings with the oil, and salt. Place into a large plastic shopping bag, and add the flour. Shake to coat evenly. Remove wings from the bag, shaking off excess flour, and spread out evenly on oiled foil-lined baking pan(s). Do not crowd. Bake for about 20 minutes, turn the wings over, and cook another 20 minutes, or until the wings are cooked through and browned.
- While the wings are baking, mix all the ingredients for the sauce in a pan, and over low heat bring to a simmer, stirring occasionally, and then turn off.

- The Sauce: This makes enough for about 30 "wingettes." Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted. Stir occasionally.
- The Wings: Fry the wings in a deep fryer set at 375 degrees F using vegetable or peanut oil. Fry 15 wings at a time for 12 to 15 minutes. Drain the wings for a few minutes then put them in a bowl. After all the wings have been fried, pour the sauce over them, cover the bowl, and shake to completely coat the wings.
- They can be eaten now, or you can put them on a baking sheet and bake them for a few minutes to get an extra-crispy coating.

BUFFALO HOT WINGS-ANCHOR BAR STYLE
These are the best hot wings IMHO. I don't like my hands to be really sloppy and the trip through the oven after frying solves this. Add as much heat as you like. I prefer the flavor of Red Hot sauce, but use your favorite. Add some Cayenne pepper to kick it to your desired heat level. Serve with my blue cheese dressing. Serves one hungry wing-lover or up to 4.

- Preheat oven to 350 and preheat oil in a deep fryer to 375.
- Fry wings for 8 minutes. (Do this in batches so you don't over crowd).
- Transfer to a tray lined with paper towels to drain.
- Season with salt and pepper.
