Forget-Me-Nots (Forgotten Cookies) image

I've always referred to them as Forget-Me-Nots. Great for the holiday table, cookie swap or as a gift.

Number Of Ingredients 6

1 1/2 cups chopped pecans
1 cup milk chocolate chips
2 egg whites
2/3 cup cups sugar
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 350 degrees. Line baking sheet with foil or parchment paper. Do not grease.
  • Beat egg whites until stiff peaks form.
  • Stir together salt and sugar then gradually beat into the beaten whites.
  • Stir in vanilla and fold in the chocolate chips.
  • Drop by mounded teaspoonfuls on the lined baking sheet and place in preheated oven. Immediately turn oven off. Let cookies dry over night. Resist peaking so as not to let out the heat.

1 CUP SOFTENED BUTTER
1 CUP SUGAR
1 1/2 t. VANILLA SUGAR
1 t. BAKERS AMMONIA (CRUSHED FINE)
2 CUP FLOUR

Steps:

  • MIX ALL INGREDIENTS INTO A DRY CRUMB MIXTURE PRESS AND FORM INTO BALLS IN YOUR HAND PLACE ON COOKIE SHEET BAKE 300 DEGREES 20 MIN. (THE VANILLA SUGAR CAN BE FOUND IN THE ETHNIC AISLE OF LARGER STORES THE BAKERS AMMONIA IS AVAILABLE BY ASKING YOUR PHARMACIST)

These are delightful... and easy.... meringue cookies. I think I got the recipe from Seventeen magazine, oh, about 35 years ago!

3 egg whites
1 cup sugar
1 (6 ounce) bag butterscotch chips
1 1/2 cups chopped walnuts

Steps:

  • Preheat oven to 400 degrees. Beat egg whites until stiff. Add the sugar gradually and beat well. Fold in the butterscotch bits and the walnuts. Grease two cookies sheets (or easier, yet, line the cookie sheets with parchment paper and apply a little shortening to the paper). Drop mixture by teaspoonfuls onto sheets in peaks, leaving a space between each. Put sheets in oven. TURN OFF HEAT. Leave in oven a minimum of four hours, or overnight for best results.
