AMISH VANILLA CORNSTARCH PUDDING



Amish Vanilla Cornstarch Pudding image

Creamy Amish homemade pudding is very easy to make and tastes so delicious! You can use this pudding in any recipe as a substitute for instant pudding.

4 qt. milk
1 3/4 c. sugar
1 1/2 tsp. salt
4 whole eggs
1 1/3 c. cornstarch
1 c. milk
3 1/2 Tbs. unflavored gelatin
1/3 c. cold water
2 tsp. vanilla extract
1 Tbs. butter
2 - 3 c. cool whip or whipped cream

Steps:

  • Pour 4 quart of milk into a large pot. Place on the stovetop over medium-low heat. Sprinkle sugar and salt over the top. Do not stir. Heat to boiling.
  • Whisk together the eggs and cornstarch. Add 1 c. of milk and whisk until smooth and creamy.
  • In a cup or small bowl, mix gelatin and cold water. Set aside.
  • Once your milk is getting hot, you will want to keep your eye on it, because when it comes to the boiling point it will begin to rise. When the milk begins to rise, turn off the burner and slowly pour in your egg/cornstarch mixture, whisking as you are pouring.
  • Remove from the burner and add the gelatin mixture, butter, and vanilla. Whisk until the gelatin is dissolved and the pudding is creamy-looking.
  • Cool. To avoid having a skin form on the top, place a piece of plastic wrap on top of the pudding.
  • Cool completely and add cool whip or whipped cream, if desired. It makes it more creamy.

This is my Amish grandmother's recipe and I've never tasted any chocolate pudding that compares to it.

2 cups milk, or more as needed
2 cups white sugar
⅓ cup cocoa powder
4 tablespoons all-purpose flour
4 egg yolks
1 teaspoon vanilla extract

Steps:

  • Combine milk, sugar, cocoa, and flour in a saucepan over medium-low heat, stirring constantly. Add egg yolks and turn heat up to medium-high, continuing to stir, until thick, about 15 minutes. Remove from heat and stir in vanilla extract. Serve warm or chilled.

I have not tried this recipe, but it sounded good...Supposedly this is an old Kentucky recipe that is really a cake, but it has always been called a pudding..It is very moist, dark and a bit fruity..and finely grained. The sauce is supposed to be excellent.

1/2 cup butter, room temperature
1 cup granulated sugar
3 large eggs, at room temperature
1 cup blackberry jam
1 teaspoon baking soda
3 teaspoons sour milk (milk with drop or 2 of vinegar 1 1/2 cups all purpose flour 3/4 tsp ground cinnamon 1/2 tsp grated n) or 3 teaspoons buttermilk butter (milk with drop or 2 of vinegar 1 1/2 cups all purpose flour 3/4 tsp ground cinnamon 1/2 tsp grated n)
1/2 cup packed dark brown sugar, packed
1/2 cup granulated sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
salt

Steps:

  • Preheat the oven to 325*. cream the butter and sugar for 7 minutes in a stand mixer bowl on medium.
  • Add the eggs, one at a time, blending well.
  • After each addition, then blend in the jam.
  • Add the baking soda to the sour milk and stir, then add to the egg mixture and blend well. In small bowl,whisk together the flour, cinnamon, nutmeg and salt.
  • Add the flour mixture to the egg mixture and combine until all the ingredients are just blended.
  • Pour the batter into a greased 8x8" pan and bake for 45 minutes -- or the top of cake is golden brown and springs back when touched with your finger.
  • Remove from the oven and cool on wire rack. Prepare the saue; in a medium saucepan, melt the butter over medium heat.
  • Add the sugars and cream and bring to a boil, stirring frequently.
  • Boil and stir for 1 minute. cool slightly, then stir in the vanilla and salt.
  • To serve, cut the pudding into squares and serve with the hot sauce.

  • Cream butter and sugar. Add eggs and blackberry jam. Mix well. Add flour, cinnamon, and allspice and continue mixing. Pour in buttermilk and add soda. Mix well and pour into a sprayed 9 x 13 baking dish or a 10 inch bundt pan. Bake in preheated 325 degree oven for 45 to 50 minutes.
  • Combine sugar and flour in saucepan. Add boiling water and salt. Mix well with spoon or whisk. Bring to a boil on stove. Cook to desired thickness, about five or six minutes.
