AMISH WHITE BREAD
This is my favorite home baked bread recipe. I got it from an Amish cookbook years ago and no other bread recipe I have tried beats it. It is a standard in our house with beef stew.

AMISH BREAD
My husband's ancestors were Amish and Mennonite. This delicious recipe is adapted from an old Amish recipe, but made in the bread machine.

WHITE BREAD
This makes four loaves of lovely, homemade bread that's great for freezing. I remember this bread fondly as the perfect base for open-faced hot sandwiches. The prep time is approximate, depending on how fast your yeast takes to rise.

- Gently warm milk, water, butter and sugar on the stove until they're 90 to 100 degrees. Be careful not to over heat the pot, and if you do, make sure it cools to a comfortable skin temperature before proceeding.
- Add the yeast to the warm milk mixture, ensuring it's no more than 100 degrees or you'll kill the yeast. Allow the yeast to dissolve for 5-10 minutes.
- Stir in the salt and then begin adding the flour a few cups at a time. Once you've added about 4 cups remove the spoon and begin to knead the remaining flour into the dough.
- Knead the dough until it comes together, about 3-5 minutes. Allow the dough to rest for 5 to 10 minutes before kneading again until the bread dough forms a smooth dough, about 5-8 minutes.

- If you are hand kneading mix in the flour until you have a sticky dough, turn the dough out onto a lightly floured surface and knead for 10 minutes or until the dough is smooth and elastic - adding flour as needed.
- For a soft crust butter the tops and place a clean tea towel over the baked loaves as soon as you take them out of the oven. Let them cool for about 5 minutes and then take them out of the pans to finish cooling, covering them back up with the tea towel.

- In a large bowl, combine the warm water, the sugar and the yeast. Stir and let stand for about 10 minutes–this is “proofing” the yeast. If you get a bubbly foam on the top of the water, your yeast is active and you may proceed.
- Add the flour, one cup at a time until a soft dough forms. You may have to use more flour depending on weather conditions. For instance, today I needed close to 3 3/4 cups of all-purpose to get this right. The dough should be soft but NOT sticky.
- Turn dough out on a floured surface and knead for about 5 minutes. If using a stand mixer with a dough hook, knead for about 3 minutes.

- Proof Yeast Mixture: Dissolve the sugar into the warm water. Mix in the yeast, and let the mixture proof for 5-10 minutes or until foamy.
- Mix: Equip your mixer with the dough hook. Pour the yeast mixture into the bowl of your mixer along with the salt, vegetable oil and 2 cups of the flour. Mix at medium speed until everything is well incorporated.
- Add Remaining Flour: With the mixer still running, add the remaining flour 1 cup at a time until the dough is smooth, elastic, and pulls away from the side of the mixing bowl. The dough is soft, but not sticky and it’s ready when it comes clean from the side of the bowl.
- First Rise: Place the dough into a large oiled bowl. Cover the bowl with plastic wrap and allow the dough to rise in a warm, draft-free environment until doubled in size. About 1 hour.
