I got this recipe from a friend. It is very easy, and doesn't take long to make.

Number Of Ingredients 6

2 cups warm water (110 degrees F/45 degrees C)
⅔ cup white sugar
1 ½ tablespoons active dry yeast
1 ½ teaspoons salt
¼ cup vegetable oil
6 cups bread flour

Steps:

  • In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  • Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  • Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

This is the ultimate white Amish bread, made with all of the ingredients necessary for a rich, sweet, yeasty dough. This is a bread suitable for Amish celebrations, using all of the best ingredients, milk, eggs, butter and sugar. Everyday table breads would use water instead of milk, vegetable oil instead of butter and no eggs....

1 1/2 c. milk
1/2 c. butter, softened
1/2 c. sugar
2 tsp. salt
2 packets of red star quick rise yeast
1/2 c. warm water (think warm bath water)
2 eggs, lightly beaten
7-71/2 c. flour, or amount needed to produce a dough that doesn't stick to your hands when handling, without being dry

Steps:

  • 1. *Prep time does not include rise times. Warm milk in a medium sauce pan until it just starts to bubble; remove from heat. Mix in butter, sugar and salt. Stir until melted. Cool to the temp of warm bath water.
  • 2. In small bowl, dissolve yeast in warm water. Let stand for 10 minutes until foamy. In mixer bowl of stand mixer, combine yeast mixture with lukewarm milk mixture (think warm bath water), 2 eggs and 2 cups of flour. Stir to combine. On setting 2 of stand mixer fitted with dough hook, gradually add remaining flour, 1/2 cup at a time, until the dough forms a ball and cleans sides and bottom of mixer bowl. If it climbs over the top of your dough hook, you need more flour. (Dough should not be sticky. The amount of flour can differ, depending on many things including humidity, brand, etc. Use your eyes and your touch as your guide. Keep feeling it. It should clean the sides of bowl, form a ball and not stick all over your hands when handled. Stop adding flour right when it is no longer sticky. Flour measurements in bread baking recipes are always approximate.) Once you hit the right consistency, knead on speed 2 for 5 minutes. (By hand 8-10 minutes.)
  • 3. Place dough in large buttered bowl, turning once. Cover with Saran Wrap sprayed with cooking spray. Heat oven to 250 degrees and place bowl on hot pad on back burner to rise until doubled, approximately 1 hour. Use a big enough bowl... it gets pretty big! This bowl is 11" in diameter and 5 1/2 " high.
  • 4. Punch down dough and form into desired loaves or rolls on very lightly floured counter. If forming into rolls, rolls should be placed so that sides are just touching. (For the nicest looking loaves and rolls, please check out some of the awesome online tutorials. Shaping the loaves or rolls correctly makes a huge difference in how your breads turn out.) Place in greased pans, cover with sprayed Saran Wrap and allow to rise until doubled, approximately 1 hour. For loaves, I like them to rise about 1 1/2-2 inches above pan. When just about ready, preheat oven to 350 degrees.
  • 5. Bake at 350 degrees. For rolls, approximately 15-20 minutes, or until golden. For bread, 20-25 minutes, or until you can tilt the bread partially out of the pan onto a hot pad covered hand and the bottom is golden, not doughy. Watch carefully as all ovens are different. Bread loaves should be removed from pan immediately and cooled on wire racks. Rolls can cool in the pan. Brush gently with melted butter. Try to wait until bread has cooled for the nicest slices, then slather with butter or jam and enjoy!

1 cup warm water (think warm bath water)
1 pkg. red star quick-rise yeast
1/4 cup sugar
3 tb. very soft butter
1 egg, beaten
3¼-3½ cups flour

Steps:

  • 1. Please Note: The original family recipe does not contain any additional salt because you are using salted butter both in the dough and on top. Feel free to add a small amount, if you wish. However, it's not really necessary. Place warm water and sugar in mixer bowl. Stir until sugar is dissolved. Add yeast and mix well. Let stand for 10 minutes until it gets foamy.
  • 2. Add very soft butter and beaten egg. Mix well. With dough hook, gradually start to mix in flour. Add flour until a ball of dough forms and cleans bottom and sides of mixer bowl. Dough should not be sticky to the touch. When you reach this point, set on setting 2 and knead for 5 minutes.
  • 3. Remove from mixer bowl and place in a large buttered bowl. Cover with saran wrap sprayed with cooking spray. Heat oven to 200 degrees. Place bowl on top of a hot pad and place on back burner. Allow to rise until doubled, about an hour.
  • 4. Punch dough down. Divide into 12 equal pieces and form into rolls. I just learned this method of forming rolls on my trip to an Amish community.   • 5. Place rolls in a greased 13x9 baking pan, sides gently touching. (Rolls may not fill pan at this point, but that's ok. As long as you keep them together, as a group, with sides lightly touching.) Cover with sprayed saran wrap and return to top of stove to rise, 35-45 minutes. When they are large, light and fluffy, bake at 350 degrees for approximately 20 minutes. (Watch closely as all ovens are different.)
  • 6. Remove from oven and gently brush with melted butter. Enjoy!
  • 7. For Crescent Rolls: After first rise, place dough on lightly floured counter (1-2 TB.) Form into a 13-14" circle. Using a pizza cutter, cut into 8 triangles. (For smaller crescents, you could cut into 10 triangles. Cutting into 8 makes a very large roll.)
  • 8. Starting at wide end, roll to pointed end. Use a few drops of water to seal tip. Bend slightly forming crescent, then place on greased baking sheet, tip tucked underneath.
  • 9. Let rise until doubled and then continue on as for round dinner rolls, brushing with melted butter when done. Baking time in my oven was approximately 15-18 minutes.
  • 10. This is how big they are if you make 8. They are big boys. Cutting into 10 equal pieces would make a smaller dinner roll.
