STRAWBERRY RHUBARB JAM WITH JELLO
This three ingredient Strawberry Rhubarb Jam with Jello is the perfect way to make a yummy refrigerator jam in less than 15 minutes.

Steps:
- Wash rhubarb and cut into 1 inch chunks.
- Add rhubarb and sugar into a food processor bowl. Pulverize until the rhubarb and sugar make a wet paste.
- Pour rhubarb mash into a small saucepan over medium heat.
- Bring to a rolling boil, and continue to boil for 5 minutes. Remove from heat.
- Stir in Strawberry Jello until completely mixed.
- Pour into a clean quart mason jar or heat proof container. Let cool before covering with lid.
- Refrigerate overnight so the jam can set up. Enjoy!
- Makes one quart of jam, one Tablespoon is a serving.

AMISH RHUBARB BARS
The recipe is from the Kalona, IA Historical Village Cookbook published in 1971, so it is almost an antique recipe. The contributor, Marilyn Svoboda, calls it Rhubarb Delight. An Amish farm that has a market stall sells these and calls them Rhubarb Dream Bars. My mom calls them Rhubarb Bars. So take your pick of names!

Steps:
- Mix together crust, press into 9x13 or 9x9 pan.
- Bake at 375 degrees for 10-12 minutes.
- Remove crust and reduce heat to 350 degrees.
- Combine filling ingredients; eggs beaten first, gradually whisk 1 cup sugar into the eggs, then add rhubarb and flour.
- Once mixture is completely combined, spoon into crust and evenly distribute
- Bake an additional 35-45 minutes at 350 degrees.
- Once cooled, cut into squares. I use a 9x13 pan and cut into 21 squares.

I found this recipe in an Amish cookbook that was published by a local Amish restaurant by the employees. My kids love this jam and always ask for it every year when rhubarb is in season.

- Combine rhubarb, sugar, and pineapple in a 3 qt saucepan.
- Bring to a boil.
- Reduce heat and simmer 15 minutes.
- Remove from heat and stir in jello until dissolved.
- Pour into jars and refrigerate.
- Makes 48 tablespoons or 1 1/2 pints.

- Place the rhubarb in a large bowl. In a smaller bowl, stir together the eggs and melted butter. In another small bowl, mix together sugar and flour and then stir it into the egg mixture. Mix until well combined. Add to the rhubarb and mix well.
- Mix together the flour, sugar and cinnamon. Using a pastry cutter, cut in the butter until the mixture looks like coarse crumbs.
- Spoon rhubarb mixture into a pastry lined pie shell. Sprinkle the crumb topping evenly over the pie. Bake at 425ºF for 15 minutes, then reduce the heat to 350ºF and bake for 35 to 40 minutes longer until the filling is set and the topping is golden.
