Flour dumplings are added to a peach syrupy mixture to create a wonderful dessert. This is an Amish recipe. Using cream or canned milk instead of the milk gives this a creamier texture but also more calories. You can use fresh, frozen, or canned peaches.

2 cups hot water
1 cup sugar
1 tablespoon butter
2 cups sliced peeled peaches
1 cup flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk

Steps:

  • Stir water, sugar, and butter together in a pot over medium-high heat until sugar dissolves and mixture has a syrupy texture, 5 to 10 minutes. Add peaches to syrup; bring to a boil.
  • Whisk flour, baking powder, and salt together in a bowl. Stir milk into flour mixture until a stiff batter forms.
  • Drop batter by large spoonfuls into boiling peach syrup; cover the pot with a lid, reduce heat to medium, and cook until dumplings are set, about 20 minutes.

1 stick margarine
1 cup of sugar
1 cup of flour
1 1/2 teaspoon of baking powder
Dash salt
3/4 cup of milk
2 cups of diced (fresh peaches)
3/4 cup of sugar

Steps:

  • Melt margarine in 13x9 cake pan.
  • Mix together 1 cup sugar, flour, baking powder, salt, milk.
  • Pour over margarine.
  • Add fruit.
  • Do not stir.
  • Sprinkle 3/4 cup sugar over all.
  • Bake at 350ºF. for 35 minutes.

1 cup Amish Friendship Bread Starter
4 cups peaches (sliced)
¾ cup sugar
3 tablespoons flour
1 teaspoon cinnamon
1 cup flour
¾ cup sugar
1 teaspoon vanilla
1 teaspoon baking powder
2 teaspoon sugar for topping

Steps:

  • Preheat oven to 350° F (175° C).
  • Butter the bottom and sides of a 9" x 13" baking dish.
  • In a bowl, mix peaches with ¾ cup sugar, 3 tablespoons of flour and 1 teaspoon of cinnamon.
  • Pour peach mixture into baking dish.
  • In another bowl, mix together starter, flour, ¾ cup of sugar, vanilla and baking powder.
  • Spoon or pour starter mixture over peaches.
  • Sprinkle top of batter with 2 teaspoons of sugar.
  • Bake for 40-50 minutes or until the top is golden brown and a toothpick inserted in the center of the bread comes out clean.

The best peach cobbler ever! Filled with fresh, sweet juicy peaches and topped with a fluffy, buttery cake-like topping. A must on the to-do list every summer. Ditch the canned peaches and cake mixes and use this fresh from scratch recipe instead, it's 100 times better!

4 lbs fresh peaches ((firm but ripe) peeled, cored and sliced thick)
1 1/2 Tbsp fresh lemon juice
1/2 cup (100g) granulated sugar
1 Tbsp (8g) cornstarch
3/4 tsp ground cinnamon, ( divided)
1/8 tsp ground nutmeg
1 1/2 cups (200g) cake flour or all purpose flour* ((scoop and level to measure))
3/4 cup (150g) granulated sugar
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
10 Tbsp (143g) unsalted butter, ( cold and diced into small cubes)
1 cup (235ml) buttermilk
1 tsp vanilla extract
2 tsp (8g) granulated sugar, (for sprinkling over top)

Steps:

  • Preheat oven to 375 degrees F.
  • Butter a 13 by 9 by 2 3/4-inch baking dish then pour peaches into baking dish and toss with lemon juice.
  • In a small mixing bowl whisk together 1/2 cup sugar, cornstarch, 1/2 tsp cinnamon, and the nutmeg.
  • Sprinkle sugar mixture evenly over peaches then toss to evenly coat, set aside.
  • If using cake flour sift into a large mixing bowl, if using all-purpose flour just add to bowl (no sifting is necessary). Add 3/4 cup sugar, baking powder, baking soda, and salt and whisk to combined.
  • Cut butter into flour with a fork or pastry cutter until it resembles coarse meal then make a well in center of mixture.
  • Mix vanilla with buttermilk then pour buttermilk mixture into well in flour and fold and stir with a spoon just until combined (don't over-mix, it should be lumpy).
  • Dollop and just lightly spread spoonfuls of the mixture evenly over top of peaches (about 12 dollops across the top).
  • Whisk together remaining 2 tsp sugar with 1/4 tsp cinnamon and sprinkle evenly over top.
  • Bake in preheated oven until topping is golden brown and set and and filling is bubbling, about 40 - 45 minutes.
  • Remove from oven and let cool several minutes before scooping into bowls. Serve with vanilla ice cream.

Marcia Adams is an exceptional cook and author who hosted the PBS show, "Amish Cooking from Quilt Country". This is a delicious peach cobbler that is unusual in that the dry ingredients and peaches are layered and then boiling water is poured over all before it bakes into a lovely summer dessert. My Dad loves this and my Mom has phoned me many times over the years asking for this recipe when she has misplaced it. Now it's posted for all of us to share.

1 cup flour
1 1/4 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons butter, softened
1 cup granulated sugar
6 -8 peaches, peeled and sliced (depending on size)
1/2 cup brown sugar
1 teaspoon almond extract
1 cup boiling water
nutmeg, grated

Steps:

  • Preheat your oven to 350 degrees.
  • In a small bowl, combine flour, baking powder, 1 teaspoon nutmeg, and salt; set aside.
  • In a large mixing bowl, cream the butter.
  • Add 1/2 cup of the granulated sugar and blend well.
  • Beat in the flour mixture.
  • Grease a 9 x 9 metal pan (metal gives this a dessert a better texture).
  • Place half of the peaches on the bottom.
  • Sprinkle half the flour mixture over the fruit.
  • Add the rest of the peaches.
  • Sprinkle with the remainder of the flour mixture.
  • In a small bowl, combine the remaining 1/2 cup granulated sugar and the brown sugar.
  • Sprinkle the sugars over all.
  • Add the almond extract to the boiling water.
  • Pour over the cobbler but Do Not Mix!
  • Sprinkle with grated nutmeg.
  • Bake for 1 hour.
  • Serve warm.

1 stick unsalted butter (softened (1/2 cup))
3/4 cup sugar
1 tsp. vanilla extract
1/2 cup milk
1 cup UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
1/8 tsp. salt
1 tsp. baking powder
1/3 cup sugar
1/2 tsp. cinnamon
1 tbsp. cornstarch
1/4 cup boiling water

Steps:

  • Preheat oven to 375°.
  • Peel and slice peaches.
  • Set aside.
  • Spray a 9x9" glass baking dish with cooking spray.
  • Arrange peaches in the bottom of prepared baking dish.
  • Cream 3/4 cup sugar, butter and vanilla in a mixing bowl with an electric mixer until smooth.
  • Add milk, flour, salt and baking powder and continue mixing with mixer until creamy.
  • Spread batter evenly over the peaches in baking dish.
  • In a small bowl, combine1/3 cup sugar, cinnamon and cornstarch.
  • Sprinkle the cinnamon sugar mixture evenly over the batter.
  • Pour the boiling water over top.
  • Make sure all of the sugar is covered with water and no dry spots remain.
  • Bake at 375° for 40-45 minutes.
  • Cool slightly before serving.
