AMISH OATMEAL PANCAKES

Steps:
- The night before combine oatmeal and 2 c buttermilk. Cover and chill overnight. Next morning sift together the flours and sugar, baking pwdr, baking soda and salt. Set aside. In large bowl,beat the Large eggs until frothy. Add in the butter and blend, add in the oatmeal mix. Quickly blend in flour mix. The batter will be very thick so you may have to add in a few more spoons of buttermilk. Fry pancakes in electric skillet at approx. 345, using 1 tbsp batter for each cake and pat out a bit. They will puff up when turned over. AMISH BAKED OATMEAL
I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- Mix oats, brown sugar, milk, oil, eggs, baking powder, salt, and cinnamon together in a bowl using an electric mixer. Pour into the prepared pan.
- Bake in the preheated oven until set, 25 to 30 minutes, making sure not to let brown.
