HOMEMADE FRIED PIES



Homemade Fried Pies image

5 c all-purpose flour
1 tsp baking powder
1 tsp salt
1 tsp sugar
1 c shortening (softened)
2 lg eggs (slightly beaten)
1 13-oz can evaporated milk
2½ cups fruit filling of your choice
Shortening (for frying)

Steps:

  • COMBINE the flour, baking powder, salt, and sugar in a large bowl.
  • Cut the shortening into the dry ingredients.
  • MIX the eggs and evaporated milk together in a separate bowl, then add to the shortening-flour mixture.
  • Mix with a fork just until it holds together.
  • Roll out rather thin, to about ⅛-inch thickness.
  • Cut out rounds using a 7-inch saucer or circle as a pattern, rerolling the dough as needed.
  • Put ½-cup fruit pie filling on one-half of the circle, leaving a bit of space clear around the edge. Be sure your filling is fairly thick and cold or it will run.
  • Fold over the circle and seal the edges well.
  • HEAT shortening in a deep pan to a depth of about 2 inches until very hot.
  • Deep-fry the pies until golden brown on both sides, 2 minutes per side.
  • Put onto a baking sheet or cooling rack to cool before serving.

4 lbs powdered sugar
1/4 cup cornstarch
3 tablespoons evaporated milk
1/2 teaspoon vanilla
1 1/4 cups water

Steps:

  • Mix first set of ingredients like a pie dough -- cut a circle the size you want your pie.wet the edges with water and fill with your favorite pie filling -- about 1 heaping tablespoonful.
  • Fold over and crimp the edges -- with a fork.
  • Deep fry in crisco shortening until slightly brown --
  • Place on wire racks to drain.

  • To make these delicious fried apple pies, you’ll start first by making the homemade apple pie filling. First, peel, core, and dice 2 large apples into small cubes. I used 1 Granny Smith and 1 Red Delicious for the perfect sweet/sour combo.
  • Next, combine the apples, brown sugar, cinnamon, and vanilla in a saucepan and cook over medium heat until juices start to form for about 3 minutes. Next, combine the apple cider (or apple juice) and cornstarch in a small bowl. Pour into the saucepan and turn the heat up to high and cook for an additional 3 minute, stirring constantly, or until the mixture has thickened up. Remove from heat and set aside.
  • Next, it’s time to make the homemade pie dough. Start by sifting the flour in a large mixing bowl. Next, cut the cold butter into cubes and using a pastry cutter begin to work the flour until all the butter is tiny lumps. In a separate bowl, combine the egg yolks and salt together. A little at a time, begin to pour in the hot milk to the egg mixture and stir constantly.
  • Lastly, pour the milk and egg mixture into the flour mixture and stir until your dough has formed. Next, place the dough onto parchment paper and knead for about 1 minute or until the dough is smooth-looking.

  • To make the filling, combine the apples, brown sugar, cinnamon, and vanilla in a small sauce pan. Cook on medium heat until juices start to form, about 3 minutes. Make a slurry by whisking together the cider and cornstarch. Stir this into the pan, turn the heat up to high, and cook, stirring constantly, until mixture is thickened, about 3 minutes longer. Remove from heat and set aside.
  • For the dough, cut the butter into cubes then use a pastry cutter to work it into the flour. Continue to cut in the butter until it's in small pea-sized lumps. In a small mixing bowl, beat the egg yolks and salt together. Slowly pour in hot milk, stirring constantly. Pour the milk mixture into the flour mixture. Stir together until a dough begins to form. Turn the dough out onto parchment or wax paper, and knead it until it smooths out, about 1 minute.
  • Divide the dough into 6 equal sized pieces and roll them each into a ball. Use a rolling pin to roll them out to about 6 inch circles. Fill each circle with 2 Tablespoons of apple mixture. Fold the dough in half over the filling and pinch the edges together to seal. You can flute the edges or use a fork to crimp them. If the edges aren't sealing properly, wet them with a little water.
  • Heat the oil in a deep sauce pan to 350 degrees. You can test to see if the oil is ready by sticking a wooden spoon into the center of the pot. If small bubbles form around the handle, you're ready to go.

  • Combine your dry ingredients and add your cold butter. Pulse the machine (if using a food processor) or cut in the butter with a pastry blender (if going by hand) until you have a crumbly texture. Next, add the sour cream and lemon juice to the processor and keep it on constant speed (or mix and knead by hand) until a dough starts to form. If needed, add up to an additional tablespoon of water. Form the dough into a ball and wrap it in plastic wrap. Chill the dough for 10 minutes.
  • Roll out your chilled dough 1/16 inch thick and cut fifteen 4-inch circles. Chill any dough that you aren’t working on so the dough stays cold. Lay your circles on a baking sheet and add 1 level tablespoon of your favorite fruit preserves or other filling. Gently fold the circle over and pinch it closed with a flour dipped fork. If you find that your dough doesn’t fold without cracking, it is too cold. Let the dough warm up a bit before folding. When done, make 3 cuts in the top of the fold. Then place them on an ungreased baking sheet.
  • Bake the pies at 350˚ F for 12-13 minutes. The fruit filling will start to bubble and the bottom of the pie will be golden brown. Remove to a cooling rack.
  • Combine the powdered sugar and 2 1/2 T. of milk to form a glaze. Allow the pie to cool before basting on the glaze.
