1/2 cup butter, cubed
6 medium unpeeled tart red apples, sliced
3/4 cup sugar, divided
3/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. Cover and cook over low heat for 20 minutes or until apples are tender, stirring frequently. , Add cinnamon and remaining sugar. Cook and stir over medium-high heat 5-10 minutes longer. If desired, serve with ice cream.

Amish Apple Fritters Recipe - (4.1/5) image

2 tablespoons granulated sugar
2 large eggs
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup milk
2 teaspoon fresh lemon juice
2 1/2 cups peeled, cored and chopped Granny Smith or Gravenstein apples
Vegetable oil for deep-frying (enough to come halfway up sides of pan or skillet)
1 1/4 cups powdered sugar
1/4 teaspoon vanilla
3 to 4 teaspoon warm water (thin enough to make the glaze "paintable")

Steps:

  • In a large bowl (or the bowl to a stand mixer), cream the sugar and eggs for 1 to 2 minutes with a mixer. Add the flour, baking powder, cinnamon, salt and milk to the same bowl. Mix these ingredients well. In a separate bowl, mix the chopped apples with the lemon juice. Using a spoon, add the apple mixture to the batter and stir well, to combine. Heat vegetable oil to 375°F (use a deep-fry thermometer or use an electric skillet with a temperature control). It is very important to make sure the temperature is hot enough to fry the fritters correctly. Once the oil is at 375°F, scoop out really large tablespoonfuls of the fritter batter (as big as you can get 'em!) and carefully and gently slide the fritter into the hot oil. When they get to a true golden brown color, carefully turn the fritters over to the other side (I used two spoons to carefully flip them) and continue cooking. (This should take approximately 2 to 3 minutes on each side). When the fritters become brown on both sides (you might have to flip them over again to make sure both sides are brown), then you know they will be ready and cooked through. Using a slotted spoon, remove the fritters, one at a time, to a paper-towel lined plate to drain and cool. To make a glaze for the tops of the fritters, mix together the powdered sugar, vanilla and water in a small bowl until you have a nice "paintable" glaze. Using a pastry brush, brush this glaze over the entire top of the fritter. Let glaze harden slightly, turn it over and "paint" the glaze on the bottom. Place glazed fritters on wire rack; let glaze harden, then serve. Note: If you do not like glaze on your fritters, you can sprinkle the fritters with powdered sugar and cinnamon as soon as they come out of the oven. For mine, I used the glaze option and they were perfect.

5 c all-purpose flour
1 tsp baking powder
1 tsp salt
1 tsp sugar
1 c shortening (softened)
2 lg eggs (slightly beaten)
1 13-oz can evaporated milk
2½ cups fruit filling of your choice
Shortening (for frying)

Steps:

  • COMBINE the flour, baking powder, salt, and sugar in a large bowl.
  • Cut the shortening into the dry ingredients.
  • MIX the eggs and evaporated milk together in a separate bowl, then add to the shortening-flour mixture.
  • Mix with a fork just until it holds together.
  • Roll out rather thin, to about ⅛-inch thickness.
  • Cut out rounds using a 7-inch saucer or circle as a pattern, rerolling the dough as needed.
  • Put ½-cup fruit pie filling on one-half of the circle, leaving a bit of space clear around the edge. Be sure your filling is fairly thick and cold or it will run.
  • Fold over the circle and seal the edges well.
  • HEAT shortening in a deep pan to a depth of about 2 inches until very hot.
  • Deep-fry the pies until golden brown on both sides, 2 minutes per side.
  • Put onto a baking sheet or cooling rack to cool before serving.

For the Dough:
1 large apple, peeled, cored and diced small (1 cup)
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
2 teaspoons apple cider, apple juice or water
1 teaspoon cornstarch
2 cups flour
4 tablespoons cold butter
1/3 cup milk
2 egg yolks
1/4 teaspoon salt
For the Glaze:
1 cup powdered sugar
2 tablespoons apple cider or water
1 teaspoon vanilla
3 cups vegetable oil for frying

Steps:

  • For the Filling: Place apples, brown sugar and flavorings into a small saucepan over medium heat and cook, stirring occasionally until apples are tender and juices form in the bottom of the pan. Mix the cider (or other liquid) with the cornstarch in a small bowl and stir into the apples, continuing to cook for 3 minutes until thick and apples are completely tender. For the Dough: While apples cook, place flour and butter into a food processor and pulse until butter is in small chunks. Heat the milk in the microwave for 30 seconds, then quickly whisk in the egg yolks and salt. Pour the milk mixture into the processor with the machine running. Mix just until it forms a crumbly dough and begins to clean the sides of the bowl. On a lightly floured work surface knead the dough together until it is smooth. Form into a 6-inch long log and cut into 6 even pieces. Form each piece into a ball and roll out with a rolling pin into a 6-inch circle, using only as much flour as necessary to keep it from sticking to the pin or work surface. Place 2 tablespoons apple mixture in the center of each circle and brush the edges with water. Fold to make a half-moon and crimp the edges well with the tines of a fork. In a deep 10-inch pan place enough oil to create 1 inch of depth. Heat the oil to 350 and fry the pies, three at a time, for three minutes on each side, turning carefully with a slotted spatula, until golden brown. Remove from the oil with a slotted spatula and drain on paper towels. While the pies are frying, whisk the powdered sugar with the cider and vanilla to form a light glaze. While still warm, use a pastry brush to coat the pies on one side; let them dry for a minute and then turn and glaze the second side. Enjoy while warm, or store at room temperature covered only lightly so that they stay crispy.
