Steps:
- Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
- Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
- Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
- In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

Steps:
- Filling: Add the butter to a large saute pan and melt. Add the apples, sugar, cinnamon and lemon juice. Cook over medium heat until the apples are soft, about 15 minutes. Remove from the heat and cool.
- When the filling is cool, roll the biscuits out on a lightly floured surface so that each biscuit forms a 7 to 8-inch circle. Place 2 to 3 tablespoons of the filling on each biscuit circle. Brush the edges of the circle with water. Fold the circle over the filling to make a half-moon shape. Seal by pressing the edges with the tines of a fork.
- Preheat deep-fryer with oil to 350 °F.
- Carefully add the pies to the oil, 1 at a time, and fry until golden brown, turning the pies as necessary for even browning, about 5 to 8 minutes. Drain on paper towels. Sprinkle with powdered sugar immediately.

Steps:
- For the Filling: Place apples, brown sugar and flavorings into a small saucepan over medium heat and cook, stirring occasionally until apples are tender and juices form in the bottom of the pan. Mix the cider (or other liquid) with the cornstarch in a small bowl and stir into the apples, continuing to cook for 3 minutes until thick and apples are completely tender. For the Dough: While apples cook, place flour and butter into a food processor and pulse until butter is in small chunks. Heat the milk in the microwave for 30 seconds, then quickly whisk in the egg yolks and salt. Pour the milk mixture into the processor with the machine running. Mix just until it forms a crumbly dough and begins to clean the sides of the bowl. On a lightly floured work surface knead the dough together until it is smooth. Form into a 6-inch long log and cut into 6 even pieces. Form each piece into a ball and roll out with a rolling pin into a 6-inch circle, using only as much flour as necessary to keep it from sticking to the pin or work surface. Place 2 tablespoons apple mixture in the center of each circle and brush the edges with water. Fold to make a half-moon and crimp the edges well with the tines of a fork. In a deep 10-inch pan place enough oil to create 1 inch of depth. Heat the oil to 350 and fry the pies, three at a time, for three minutes on each side, turning carefully with a slotted spatula, until golden brown. Remove from the oil with a slotted spatula and drain on paper towels. While the pies are frying, whisk the powdered sugar with the cider and vanilla to form a light glaze. While still warm, use a pastry brush to coat the pies on one side; let them dry for a minute and then turn and glaze the second side. Enjoy while warm, or store at room temperature covered only lightly so that they stay crispy.

- To start, make the filling. Combine the apples, brown sugar, cinnamon, salt, and vanilla in a saucepan over medium heat. Cook until the apples are slightly softened and have released their juices, about 5 minutes. Whisk together the water and cornstarch in a small bowl until a slurry forms. Pour into the apple mixture, stirring constantly, and increase the heat to high. Continue to stir and cook until the mixture thickens and the apples are softened to your desired consistency, about 3-6 more minutes. Stir in the lemon juice. Remove the filling mixture from the heat and set aside to cool.
- As the filling cools, prepare the dough. Add the flour to a large bowl. Use a dough blender or two knives to cut the butter into the flour until coarse crumbs form, no larger than a pea. In a small, separate bowl, beat together the eggs and the salt. Pour the hot milk (and make sure it’s very hot!) slowly into the egg mixture while whisking constantly. It’s important to do this slowly or else you’ll wind up with scrambled eggs. Add the milk mixture to the flour mixture and stir until well-combined and the dough begins to pull away from the sides of the bowl.
- Lightly flour a flat surface and turn the dough out on top. Knead the dough until it’s smooth, about 2-3 minutes.
- Cut the dough into 8 (for large) or 12 (for small) equal sized pieces. Roll each piece into a ball, smoothing them out as much as possible. Using a rolling pin, roll the dough out into thin circles.

- To make these delicious fried apple pies, you’ll start first by making the homemade apple pie filling. First, peel, core, and dice 2 large apples into small cubes. I used 1 Granny Smith and 1 Red Delicious for the perfect sweet/sour combo.
- Next, combine the apples, brown sugar, cinnamon, and vanilla in a saucepan and cook over medium heat until juices start to form for about 3 minutes. Next, combine the apple cider (or apple juice) and cornstarch in a small bowl. Pour into the saucepan and turn the heat up to high and cook for an additional 3 minute, stirring constantly, or until the mixture has thickened up. Remove from heat and set aside.
- Next, it’s time to make the homemade pie dough. Start by sifting the flour in a large mixing bowl. Next, cut the cold butter into cubes and using a pastry cutter begin to work the flour until all the butter is tiny lumps. In a separate bowl, combine the egg yolks and salt together. A little at a time, begin to pour in the hot milk to the egg mixture and stir constantly.
- Lastly, pour the milk and egg mixture into the flour mixture and stir until your dough has formed. Next, place the dough onto parchment paper and knead for about 1 minute or until the dough is smooth-looking.
