AMISH CASHEW CRUNCH



Amish Cashew Crunch image

An Amish Holiday Candy Classic. Just Mix, Cool, Chill & Crunch!

Number Of Ingredients 4

1 cup butter
1 cup granulated sugar
1 tbsp light corn syrup
2 cup cashews

Steps:

  • Lightly butter a cookie sheet.
  • In a heavy pan cook and stir the butter, sugar and corn syrup over low heat until the butter is melted and the mixture comes to a boil.
  • Cook until it starts to turn golden brown (290 degrees F on a candy thermometer) like peanut brittle.
  • Remove from heat. Quickly stir in cashews.
  • Pour out onto prepared cookie sheet. Cool completely.
  • Break up into pieces. Store in airtight container.

2 cups (50g) Rice Krispies

Steps:

  • Line an 8x8-inch square baking pan with foil or parchment paper. Set aside.
  • Add the chocolate to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
  • Add the Rice Krispies, and fold in until completely coated in chocolate.
  • Pour into the prepared pan and spread out evenly. Refrigerate for 1 - 2 hours until set. Slice into bars and serve cold or at room temperature.

I went to a friend's house recently and wanted to bring something with me, so I searched through my Amish cookbook and found this recipe for the bars. You will NOT be disappointed. The first day they are delicious, soft and oooey-gooey, but the second day, they are a bit firmer and lightly crunchy and, in my opinion, MORE...

1 c butter or margarine, softened (i used butter)
1 c brown sugar, divided
1/2 c sugar
1 Tbsp water
1 tsp vanilla
2 eggs, separated
2 c all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c semisweet chocolate chips
3/4 c finely chopped walnuts, optional (i made 12/ the pan with nuts, and 1/2 without as skippy does not like walnuts)

Steps:

  • 1. Preheat oven to 350*F. In mixing bowl, cream butter, 1/2 cup brown sugar, and white sugar until light and fluffy. Add water, vanilla, and egg yolks (reserve whites in separate bowl). Beat for 2 to 3 minutes.
  • 2. Beat in flour, baking powder, baking soda, and salt.
  • 3. Spread into lightly greased 9x13-inch baking pan. Sprinkle with chocolate chips.
  • 4. Beat egg whites until soft peaks form; add remaining 1/2 cup brown sugar and blend well. Carefully spread over chocolate chips.
  • 5. Sprinkle with chopped nuts. Bake for 35 minutes or until meringue is golden brown. Cut with a sharp knife while still hot. Yields 3 dozen bars. (HA! Not in my house it didn't!) lol

Homemade Crunch Bars are an easy candy bar made with Rice Krispies Cereal, chocolate chips and just a touch of sea salt made in just 10 minutes! You'll never buy the pre-made version again.

24 ounces chocolate chips (2 bags)
4 cups Rice Krispies Cereal
1/4 teaspoon kosher salt ((optional))

Steps:

  • Line an 8x8 baking pan with parchment paper.
  • Melt the chocolate in a microwave safe glass bowl in 30 second increments, stirring each time, until full melted.
  • Fold in the cereal until full coated then pour into your 8x8 baking dish.
  • Spread the mixture out evenly and sprinkle over the kosher salt.
  • Refrigerate for at least 20 minutes until the chocolate has completely hardened before slicing with a very sharp knife to avoid crumbling.

2 large eggs, beaten
3/4 cup flour
1/4 teaspoon baking powder
3/4 cup white sugar
1 teaspoon vanilla
1 tablespoon cocoa powder
1/4 teaspoon salt
1 cup peanut butter
1 cup chocolate chips
1 1/2 cups Rice Krispies

Steps:

  • Mix in order given and add 1/2 cup chopped nuts.
  • Spread in greased jelly-roll pan, and bake in 350° oven for 15-20 minutes.
  • Spread with 2 1/2 cups miniature marshmallows and bake 2-3 minutes longer.
  • To prepare ICING.
  • Put the following in saucepan over low heat and stir till melted: peanut butter, chocolate chips and rice krispie cereal.
  • Spread on top of marshmallows and cool and cut into squares.

THIS IS A DOUBLE RECIPE
1/2 c light corn syrup
1/2 c firmly packed brown sugar
1/4 c butter
1 tsp vanilla (or experiment like i did)
1/2 tsp baking soda
10 c pecan halves

Steps:

  • 1. Combine corn syrup, brown sugar and butter in microwave save bowl. Microwave on high for 1 1/2 minutes. Stir and microwave another 1/2 to 1 1/2 minutes (I did 1/2 only in new microwave) or until boiling.
  • 2. Add vanilla (or other flavor) and baking soda and stir thoroughly. It will begin to foam. Pour mixture over pecans. Stir until coated evenly.
  • 3. Spread on baking sheet lined with silpat or wax paper and bake at 250 degrees for 1 hour. Stir every 20 minutes. Cool before storing in container. Pecans will stick together but easily break apart into crunch size pieces.
