AMIGO DIP

Number Of Ingredients 10

1/2 cup avocado (2 ripe small) (about 1 1/2 lb. total), peeled and cut up
1 tomato ripe medium, peeled and cut up
1/2 onion small, cut up
1/2 cup mayonnaise
1 1/2 ounces green chilies chopped, drained (3 tablespoons)
2 tablespoons lemon juice
1 teaspoon salt
Cherry tomatoes (optional)
Parsley sprigs (optional)
Assorted raw vegetables or corn chips

Steps:

  • 1. Place avocados, tomato, onion, mayonnaise, green chilies, lemon juice, and salt in a blender container. Cover and blend until smooth. Pour into a serving bowl. Cover tightly and chill at least 1hour or up to 24 hours.2. To serve, place bowl on a platter. Garnish platter with cherry tomatoes and parsley for a festive look. Serve with vegetables.NOTE: If you don't have a blender, mash avocados with a fork, mince onion, then mix by hand.
