THE PERFECT SUGAR COOKIE RECIPE - WITH A TWIST!

- To make the cookies: Using stand mixer fitted with paddle, mix flour, sugar, and salt on low speed until combined. Add butter, 1 piece at a time, and mix until dough looks crumbly and slightly wet, 1 to 2 minutes. Add cream cheese and vanilla and beat until dough just begins to form large clumps, about 30 seconds.
- Transfer dough to counter; knead just until it forms cohesive mass and divide in half. Form each half into disk, wrap disks tightly in plastic wrap, and refrigerate for at least 30 minutes or up to 2 days. (Wrapped dough can be frozen for up to 2 weeks. Let dough thaw completely in refrigerator before rolling.)
- Working with 1 disk of dough at a time, roll dough 1/8 inch thick between 2 large sheets of parchment paper. Slide dough, still between parchment, onto baking sheet and refrigerate until firm, about 10 minutes.
- Adjust oven rack to middle position and heat oven to 375°F. Line 2 baking sheets with parchment. Working with 1 sheet of dough at a time, remove top piece of parchment and cut dough into shapes with cookie cutters. Using thin offset spatula, transfer shapes to prepared baking sheet, spacing them about 1-inch apart.
- Bake cookies, 1 sheet at a time, until light golden brown, about 10 minutes, rotating sheet halfway through baking. Let cookies cool on sheet for 3 minutes, then transfer to wire rack. Let cookies cool completely before serving.
- To make glaze: Mix ingredients together. Coloring the glaze is optional.
- Editor's note: To each completely cooled cookie, apply a small dollop of glaze and spread out into a thin layer with the back of a spoon or offset spatula, careful not to spill over the edges. While glaze is still wet, add sprinkles. Allow to dry before serving.
BASIC GINGERBREAD COOKIES
Use this basic gingerbread recipe to make cutout cookies in various shapes. Our favorites are gingerbread boys and girls in different sizes, decorated with white royal icing and currant "buttons."

- In a large bowl, sift together flour, baking soda, and baking powder. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Mix in spices and salt. Add eggs and molasses; mix well. With the machine on low speed, gradually add flour mixture, and beat until combined. Divide the dough into thirds, and wrap each piece of dough in plastic. Chill at least 1 hour.
- Preheat oven to 350 degrees. Line baking sheets with Silpat nonstick baking mats or parchment paper. Set aside. On a lightly floured work surface, roll out dough to 1/8 inch thick. Cut into gingerbread boys and girls. Transfer to prepared baking sheets.
- To decorate cookies: Press currants into dough to create buttons. Bake cookies until crisp but not darkened, about 20 minutes. Transfer to a wire rack. Let cool completely.
- Decorate cooled cookies with Royal Icing.
AMERICA'S TEST KITCHEN GINGERBREAD COOKIES
Steps:
- In food processor workbowl fitted with steel blade, process flour, sugar, cinnamon, ginger, cloves, salt, and baking soda until combined, about 10 seconds. Scatter butter pieces over flour mixture and process until mixture is sandy and resembles very fine meal, about 15 seconds. With machine running, gradually add molasses and milk; process until dough is evenly moistened and forms soft mass, about 10 seconds. Alternatively, in bowl of standing mixer fitted with paddle attachment, stir together flour, sugar, cinnamon, ginger, cloves, salt, and baking soda at low speed until combined, about 30 seconds. Stop mixer and add butter pieces; mix at medium-low speed until mixture is sandy and resembles fine meal, about 1 1/2 minutes. Reduce speed to low and, with mixer running, gradually add molasses and milk; mix until dough is evenly moistened, about 20 seconds. Increase speed to medium and mix until thoroughly combined, about 10 seconds.
- Scrape dough onto work surface; divide in half. Working with one portion of dough at a time, roll 1/4-inch thick between two large sheets of parchment paper. Leaving dough sandwiched between parchment layers, stack on cookie sheet and freeze until firm, 15 to 20 minutes. (Alternatively, refrigerate dough 2 hours or overnight.)
- Adjust oven racks to upper- and lower-middle positions and heat oven to 350 degrees. Line two cookie sheets with parchment paper.
- Remove one dough sheet from freezer; place on work surface. Peel off top parchment sheet and gently lay it back in place. Flip dough over; peel off and discard second parchment layer. Cut dough into 5-inch gingerbread people or 3-inch gingerbread cookies, transferring shapes to parchment-lined cookie sheets with wide metal spatula, spacing them 3/4 inch apart; set scraps aside. Repeat with remaining dough until cookie sheets are full. Bake cookies until set in centers and dough barely retains imprint when touched very gently with fingertip, 8 to 11 minutes, rotating cookie sheets front to back and switching positions top to bottom halfway through baking time. Do not overbake. Cool cookies on sheets 2 minutes, then remove with wide metal spatula to wire rack; cool to room temperature.
- Gather scraps; repeat rolling, cutting, and baking in steps 2 and 4. Repeat with remaining dough until all dough is used.

- Stop mixer, add butter, and mix on low until mixture resembles damp sand, about a minute and a half. (If you have a plastic bowl guard that will help keep flour from flying out, it would be a good idea to add that before you turn the mixer on)
- While mixer is running on low, slowly add the molasses and milk. Spraying your measuring cup with cooking spray before adding the molasses will help it come out smoother and be easier to clean. Turn mixer to medium for about 10 seconds to thoroughly mix dough.
- Turn out dough onto a piece of parchment paper and pat into a ball. Cut dough into two pieces and roll each piece out to 1/4" thickness between two pieces of parchment paper. Don't roll it too thin or your cookie won't be as chewy!

- For the cookies: Whisk egg, vanilla, salt, and almond extract together in small bowl. Whisk flour, baking powder, and baking soda together in second bowl.

- For the royal icing: Using stand mixer fitted with whisk attachment, whip all ingredients on medium-low speed until combined, about 1 minute. Increase speed to medium-high and whip until glossy, soft peaks form, 3 to 4 minutes, scraping down bowl as needed.
- Spread icing onto cooled cookies. Let icing dry completely, about 1/2 hours, before serving.
