The America Sandwich image

All true patriots love this thick, tender meat sandwich. For anyone who loves meat and America. This is a serious recipe my great great grandfather William Abersworth created while exploring the California coast in the late 1800's. Best served with a side of curly fries.

1 pound bacon
4 (1 pound) loaves sourdough bread
8 ounces processed cheese, sliced
1 pound sliced cooked roast beef
1 pound sliced smoked ham
8 ounces sliced American cheese
2 sticks butter, sliced
1 cup Dijon mustard
1 cup mayonnaise
4 cups canned gravy, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Cut a slit down the center of a loaf of bread, and use a spoon to scoop out the interior, leaving a pocket in the loaf. Line the pocket with 2 slices of processed cheese food. Divide the cooked bacon slices in 4, and stuff each bread loaf with 1/4 of the bacon.
  • Place sliced roast beef and ham onto microwave-safe plates, and top slices with a pat of butter. Cook in microwave oven set on High until the butter has melted, about 30 seconds. Lightly stuff each loaf with 1/4 of the buttered meat slices. Top with sliced American cheese, and stuff a couple of pats of butter into the top of each loaf.
  • Use remaining butter to spread over the outside of each loaf. Generously drizzle dollops of Dijon mustard and mayonnaise over the top of the stuffing.
  • Place loaves on a baking sheet, and bake in the preheated oven until the bread is toasted and the filling is hot and melted, about 30 minutes. Watch carefully to avoid burning bread.
  • Heat the gravy to a simmer over low heat; remove sandwiches from oven, slice into serving portions, and top each serving with a generous helping of hot gravy.

1 lb sub bread
1/2 lb shaved turkey
1/2 lb shaved ham
1/4 lb thin sliced salami
1/4 lb thin sliced white American cheese
1/4 lb thin sliced lorraine swiss cheese
crisp lettuce leaf
2 tomatoes, in thin slices
1 yellow sweet onion, in thin slices
mayonnaise
honey mustard
salt & fresh ground pepper

Steps:

  • Cut loaf of bread (french, Italian, or grain bread) in half, lengthwise.
  • Spread one half with mayonnaise the other with mustard.
  • Cover each bread half with lettuce.
  • Layer meats, cheeses and top with veggies. Salt and pepper to taste.
  • Place top half on securing with party toothpicks.
  • Cut into serving slices.

This comes from The New Best Recipe (published by the editors of Cook's Illustrated), although I found it on http://annieseats.wordpress.com. This got the seal of approval at my house - great for sandwiches!! I make two loaves every weekend, freezing the second for later in the week.

Number Of Ingredients 8

3 3/4 cups all-purpose flour
2 teaspoons salt
1 cup warm whole milk (about 110 degrees, I use 2%)
1/3 cup warm water (about 110 degrees)
2 tablespoons unsalted butter, melted
3 tablespoons honey
2 1/4 teaspoons instant yeast (1 envelope)
1 tablespoon butter or 1 tablespoon margarine, softened

Steps:

  • Mix milk, water, butter, honey and yeast together.
  • Combine 3 1/2 cups flour and salt in bowl of stand mixer.
  • Gradually add milk mixture to flour.
  • Increase mixer speed to medium, mix for 10 minutes, until dough is smooth. (You may need to add extra flour to get dough to the right consistency. I always do.).
  • Turn dough out onto floured surface, knead briefly to form a small, round ball.
  • Place dough in a greased bowl, turn to coat.
  • To Proof: Original recipe suggests while you are making the dough, heat an oven to 200 for 10 minutes, then turning off. Place bowl covered with plastic wrap in oven to proof. However, I cover with a towel and use my warming burner. Let rise 40 - 50 minutes, or until doubled in size.
  • Turn onto floured work surface, gently roll dough into a 1 x 9 inch rectangle. Roll the short side into a tight cylinder. Pinch the seams closed. Place the seam-side down in a greased 9×5-inch loaf pan.
  • Cover with plastic wrap or towel; set in a warm spot until the dough almost doubles in size, 20-30 minutes.
  • Preheat oven to 350. Placing a glass dish with boiling water inside.
  • Bake 40 -50 minutes or until an instant-read thermometer reads 195°.
  • Brush with melted butter, cool on wire rack.
  • To freeze: Cool completely, cover with plastic wrap or foil. Place in freezer bag. Thaw on counter overnight.
