COUNTRY BUTTER (SOFT SPREAD)



Country Butter (Soft Spread) image

A creamy, tasty and budget-stretching butter mixture. At one time my hubby & I had seven children living with us! In an effort to cut expenses I bought a book called Cheaper & Better (Homemade Alternatives To Storebought Goods). This recipe for a soft spread quickly became a family favorite. Tattered and stained, this is the page to which the book still falls open.

Number Of Ingredients 3

1 lb margarine (not the spreadable kind)
1 cup corn oil
1 cup buttermilk

Steps:

  • Whip ingredients together in a food processor or mixer (the consistency will be rather soft, but useable).
  • For best consistency refrigerate overnight.
  • Store in a tightly covered container in the refrigerator.
  • Keeps well for 1 month.

Many many people have tried to recreate this chive butter, including myself & there are so many rumors flying around about what all is in this spread. But I am here to set the record straight, it's not Boursin cheese, it's not cream cheese, it's SOUR CREAM mixed in with the butter!!

1 stick(s) unsalted butter
2 tablespoon(s) dried chives
1/4 cup(s) sour cream
1 clove(s) (large) garlic, grated
1 dash(es) salt (season to taste)

Steps:

  • Place butter in mixing bowl & beat on high for 1 minute.
  • Add chives & sour cream & mix on medium til til incorporated.
  • Finally add garlic & salt to taste
  • Serve immediately or place in refrigerator. Be sure & serve at room temperature.

3 Tbsp butter
1/2 c all purpose flour
1 small onion, chopped
1/3 - 1/2 c chicken stock
8 oz velveeta cheese
1/3 c heavy whipping cream
10 oz frozen chopped spinach (thawed ? squeeze out excess water)
1 dash(es) tobasco
sour cream to add to top

Steps:

  • 1. Over medium high heat, melt butter, then saute onions until golden brown. Add flour to make a roux. Add the chicken stock until you have a creamy consistency. Slowly add the Velveeta (cut in small pieces) until melted. When the cheese is melted, add the whipping cream. Stir in the drained spinach. Add the tobasco until you get the desired flavor. Top with sour cream.

1/2 c butter
2 1/2 c (10 ounces) assorted finely shredded cheeses
1 Tbsp or to taste: brandy (could use beer, or milk)

Steps:

  • 1. In food processor, cream butter until light and fluffy.
  • 2. Add cheeses and brandy. Beat until smooth
  • 3. Chill in tightly covered container 3 days to blend flavors.
  • 4. Bring to room temperature before serving. Makes about 2 cups.
  • 5. Note: You can dress it up a little with chives, or garlic, or hot peppers... or anything you can think of.

When I went out on my first date I ate at the American Cafe restuarant. They had this great butter spread that I loved. They served it with pumpernickel bread. I could never find the recipe, but this one is really good.

1 (4 ounce) package cream cheese (you can try lowfat, but I never have)
1/2 cup unsalted butter
1 garlic clove
1/2 teaspoon salt
2 tablespoons scallions or 2 tablespoons chives

Steps:

  • With an electic mixer combine the cream cheese and the butter until light, fluffy and pale in color.
  • Begin to chop the garlic roughly and than add the salt to the garlic to release the oils. Chop until very fine and almost like a paste.
  • Add the garlic and chives (or scallions) to the butter creamcheese mixture.
  • Mix by hand and store in the refrigerator for an hour or two to let the flavors meld together. Bring out to soften at room temperature when ready to serve.
  • Enjoy.
