AMERICAN BEAUTY CAKE WITH DEANNA'S FROSTING
This is an old family recipe. Don't tell your kids the secret ingredient, or they'll make oogy faces. This is a very moist rich cake with a lovely color, and the frosting is wonderful.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, mix 1 3/4 cup flour, 1 1/2 sugar, cocoa, baking powder and soda.
- Whisk in buttermilk, 1/2 cup butter, eggs, and vanilla. Stir in shredded beets and pour batter into cake pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes or until a toothpick inserted in the center of cake comes out clean.
- For the frosting: Combine milk and 5 tablespoons flour in a small saucepan, heat to a boil. Stir constantly for 2 to 3 minutes. Stir in 1 cup sugar, 1/3 cup butter and shortening. Cool resulting mixture to room temperature and beat for 10 to 12 minutes until light and fluffy. Spread on cooled cake. This frosting is also excellent on spice or applesauce cake.

AMERICAN BUTTERCREAM
Steps:
- Cream the butter/shortening until completely smooth. Beat in vanilla extract. (If using all shortening, add 1/4 teaspoon fine sea or kosher salt.)On low speed, add sifted sugar, about 1 cup at a time, alternating with 1 tablespoon of milk. Stop frequently to scrape down the sides and bottom of the bowl. After the last addition of the sugar, evaluate the consistency of the frosting before adding more milk. Beat for 2 more minutes, on medium-high speed if a very fluffy frosting is desired. The frosting should be thick and not fall off a spatula unless tapped on the side of the bowl. Adjust consistency by adding more milk or powdered sugar as needed. Use immediately, or press plastic wrap onto the icing and refrigerate. Before using from refrigeration, stir vigorously to a spreading consistency. Frosting may be tinted if desired.

- The butter should be room temperature, about 70 degrees. You should be able to press your finger into the stick of butter easily.
- In a standing mixer with a paddle attachment (the rubber scraper paddle is preferable), slowly mix the butter and the vanilla bean paste together just until combined. Add the powdered sugar slowly while the mixer is set to its lowest setting.
- As soon as the butter and powdered sugar are mixed, add the warm or room temperature whole milk and pinch of salt. Mix using the lowest speed for 10 seconds, scrape down the sides of the bowl, and mix on low for another 10 seconds.
- Lift the standing mixer. The frosting should easily separate from the paddle. If it’s still too firm, add 1 additional tablespoon of warm milk and mix until combined.
