BEER BRAISED ONIONS



Beer Braised Onions image

Tailgating season is upon us. What better way to top off some favorites like brats, burgers, or regular hot dogs with some beer braised onions?

Number Of Ingredients 4

4 large sweet onions, sliced
2 Tbsp butter
1 c amber ale or amber beer
salt & pepper

Steps:

  • 1. Heat a large skillet over medium-high heat and add the butter. Let the butter melt and then turn temperature down to medium-low heat.
  • 2. Add onions and let cook for about 10 minutes, stirring occasionally, until tender and translucent. Season with a little salt & pepper.
  • 3. Slowly add the beer and cover the skillet. Let simmer for about 10 minutes.
  • 4. Remove cover from skillet and cook an additional 5 minutes to allow some of the beer to evaporate.

8 oz Cool Whip (, lite is fine)
1/2 cup sour cream (, light is fine)
11 oz mandarin oranges (drained)
20 oz crushed pineapple (drained)
10 oz maraschino cherries (drained, halved, and patted dry)
1 cup sweetened coconut flakes
2 cups miniature marshmallows
3/4 cup chopped nuts (pecans, walnuts, cashews optional)

Steps:

  • Fold sour cream into Cool Whip in a large serving bowl.
  • Fold in remaining ingredients making sure the pineapple, oranges, and cherries have been properly drained.
  • Serve immediately or refrigerate until serving.

1 (20 ounce) can crushed pineapple, undrained
1 (3.4 ounce) package instant vanilla pudding mix
2 (15 ounce) cans fruit cocktail, drained
2 (11 ounce) cans mandarin oranges, drained
1 (8 ounce) container frozen whipped topping, thawed
2 tablespoons sweetened flaked coconut, or more to taste

Steps:

  • Mix pineapple and pudding mix together in a bowl until pudding mixture is smooth. Fold fruit cocktail and oranges into pudding.
  • Fold whipped topping into pudding mixture until smooth; top with coconut.
  • Refrigerate until chilled, at least 30 minutes.

1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) pineapple tidbits, drained
1 cup miniature marshmallows
1 cup sweetened shredded coconut
1 cup sour cream

Steps:

  • In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.

This is a flavorful coconut chicken with a twist! This recipe combines some of the ingredients used in traditional ambrosia salad for a tasty, baked chicken dish that is sure to please even the most discerning critics.

2 pounds skinless, boneless chicken breast, cut into 1 inch thick strips
1 ½ cups panko (Japanese bread crumbs)
1 ½ cups flaked coconut
3 cups fat-free plain yogurt
1 teaspoon almond extract
2 tablespoons orange marmalade
¼ cup crushed pineapple

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.
  • Toss together the panko and coconut in a bowl; set aside.
  • Stir together the yogurt, almond extract, and marmalade in a large bowl. Pour half into a separate bowl, and stir in the crushed pineapple to make a dipping sauce; set aside.
  • Coat the chicken strips in the remaining yogurt mixture and roll in the panko mixture. Place the chicken strips on the parchment lined baking sheet.
  • Bake the strips in the preheated oven for 15 minutes, then reduce the oven temperature to 350 degrees F (175 degrees C). Continue baking until the chicken is golden brown, no longer pink, and the juices run clear, about 15 minutes. Serve the hot ambrosian chicken strips with the pineapple-yogurt dipping sauce.
