1 ¾ cup (210 g) all-purpose flour
2 cups (400 g) granulated sugar
¾ cup (90 g) unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup (240 g) buttermilk, (room temperature)
2 large eggs, (at room temperature)
2 teaspoons vanilla extract
½ cup (112 g) vegetable oil
2 teaspoons baking soda
1 cup (237 g) freshly brewed coffee

Steps:

  • Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl and mix until combined.
  • In another bowl, combine the buttermilk, oil, eggs, and vanilla.
  • With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.
  • Pour the batter into two 8-inch round prepared pans and bake for 30-40 minutes at 350°F, until a cake tester or toothpick comes out mostly clean (not wet).
  • Cool in the pans for about 10 minutes, then turn them out onto a cooling rack and cool completely.

½ cup packed brown sugar
¾ cup white sugar
3 eggs
1 cup vegetable oil
1 tablespoon baking powder
2 ¼ cups all-purpose flour
1 teaspoon baking soda

1 teaspoon ground cinnamon
½ cup raisins
½ cup chopped walnuts

Steps:

  • Stir together flour, baking powder, baking soda, cinnamon, and salt.
  • In a mixing bowl, combine corn and sugars. Beat in eggs and oil till well blended. Mix flour mixture into batter. Stir in raisins and nuts. Pour batter into greased 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, or till cake tests done. Cool.

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

Steps:

  • Preheat oven to 350 degrees. Prepare an 8-inch baking pan with non-stick spray.
  • In a large mixing bowl, cream together the butter and sugar.
  • Add in the applesauce and mix well.

  • Fold in the walnuts and raisins.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cinnamon
3/4 teaspoon all spice
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 cup unsalted butter (softened to room temperature )
1 cup granulated sugar
3/4 cup light brown sugar (packed)
3 large eggs (room temperature)
1 1/3 cup buttermilk
8 oz cream cheese (softened to room temperature)
1 cup butter (softened but still slightly cold, can use salted or unsalted butter)
1 teaspoon vanilla extract
6 cups powdered sugar
3 tablespoons milk (*might need more to achieve desired consistency)

Steps:

  • Preheat oven to 350°F. Grease and flour 3-6 inch round cake pans. Set aside.
  • In a medium size bowl whisk the flour, baking powder, baking soda, salt, cinnamon, allspice, cloves, and nutmeg. Set aside.
  • Add the butter, brown sugar, and granulated sugar to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed for 2 minutes. Add the eggs. Mix until well combined, about 1-2 minutes.
  • Alternate adding the dry ingredients and the buttermilk, starting and ending with the dry ingredients.
  • Once all of the dry ingredients have been added, mix on low speed until JUST combined!
  • Divide the batter evenly amongst the 3 cake pans. Bake for 25-30 minutes. (Mine baked for 27 minutes).
  • Remove from the oven and allow the cake to cool in the pans for 10 minutes.
  • After 10 minutes, turn the cakes out onto a wire rack to cool until a bit warmer than room temperature. *
  • Frost the cake. Enjoy!

1 tablespoon softened butter (grease pan with it)
2 1/2 cups flour
1 1/2 cups dark brown sugar
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter
4 tablespoons dark molasses
4 tablespoons corn syrup (or golden syrup if you have it)
2 eggs

Steps:

  • Sift first 6 ingredients together in a bowl, set aside.
  • Heat all butter, molasses and golden syrup in a small saucepan, simmer until butter is melted, stirring continuously.
  • Preheat oven to 350 degrees
  • Pour the melted ingredients in a thin stream over flour mixture stirring constantly.
  • When smooth, add the eggs 1 by 1 stirring after each addition.
  • Put into 7 x 12 cake pan and bake for 35-40 mnutes until tester comes out clean (like a knife).

Steps:

  • Preheat oven to 350 degrees F.

  • Begin and end with flour.
  • Spread batter into a greased 8" square pan.

  • When cool, frost with your choice of frosting (I added some orange extract to vanilla buttercream).
