BEEF TORTILLA TACO CASSEROLE
This cheesy Mexican-inspired taco casserole is a simple freezer-friendly dinner you can make ahead of time and heat up later. - Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix, water and bell pepper strips. Simmer 3 to 4 minutes, stirring frequently, until thickened. Stir in salsa and corn.
- Spray 13x9-inch (3-quart) baking dish with cooking spray. Cut tortillas in half; place 6 tortilla halves in bottom of baking dish.
- Top with half of beef mixture (about 3 1/2 cups). Sprinkle with 3/4 cup of the cheese and remaining tortilla halves. Top with remaining beef mixture and cheese.
- Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil sprayed side down. Bake 35 to 40 minutes or until heated through and cheese is melted.
- To Make Ahead:Wrap foil-covered casserole in double layer of plastic wrap; label and freeze up to 3 months. To thaw and bake:Thaw overnight or until completely thawed in refrigerator. Remove plastic wrap. Bake 1 hour to 1 hour 10 minutes or until center is hot (165°F) and cheese is melted. To bake from freezer (no thawing):Heat oven to 350°F. Remove plastic. Bake 1 hour 30 minutes to 1 hour 40 minutes or until center is hot (165°F) and cheese is melted.

- Preheat oven to 350°F.
- Brown ground beef with onions, garlic, cumin, salt and pepper.
- You can also add a ccan of Rotel or diced tomatoes with the meat for more color and flavor, but it is delicious with or without them.
- While meat is cooking, lightly spray 9x13 baking pan with non-stick spray.
- Crush plenty of corn chips and thoroughly cover the bottom of dish.
- Mix together the corn and your choice of 2 cans of the beans, drained (except the Ranch Style Texas beans if you use those) in a medium mixing bowl.
- Layer the bean mixture evenly over the corn chips.
- Layer the meat evenly over the beans.
- Add the cheese evenly on top of the meat.

TACO BAKE CASSEROLE
Steps:
- Preheat oven to 350 degrees
- Cook 1 lb. of meat in a skillet over medium high heat until cooked.
- Add in taco seasoning. Mix and set aside.
- Spray a 9 X 13 baking dish with cooking spray
- Place the taco meat mixture in the baking dish
- Add eggs, 1/4 cup fresh salsa, and any optional ingredients (salsa, beans, etc.) right into the baking dish and gently mix until combined.

- Cook your ground beef with your diced onions, drain fat, add packet of taco seasoning to coat. Put in a bowl.
- Add your cream of mushroom soup, canned diced chiles, and salsa in with your ground beef and stir well. Shred your cheeses and mix in another bowl.
- Spray non stick spray inside your pie plate and push 1 large tortilla inside. A bit of tortilla will lay up on the sides which is good.
- Spread 1/3 of your ground beef mixture on the tortilla, followed by 1/3 of your cheeses.
- Lay another tortilla down and continue to layer, on the last tortilla add the remaining third of beef mixture and cheese on the very top.
- Put in the oven at 350 degrees for 20 minutes just so everything can meld together. Allow to sit when done for 10 minutes to solidify a bit.
- Cut like a pie and serve topped with more salsa, salsa verde, sour cream, guacamole, avocado or anything else you like on top!
