This chicken is so good, it will surprise you. I hate mayo, but you don't even know it's there!

4 skinless, boneless chicken breast halves
salt and pepper to taste
½ cup mayonnaise
2 cups Italian seasoned bread crumbs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a shallow baking dish.
  • Season chicken breasts. Coat chicken on all sides with mayonnaise, and roll in bread crumbs until coated. Place coated breasts into the prepared pan.
  • Bake uncovered for 30 minutes in the preheated oven, or until chicken is no longer pink in the middle and the juices run clear.

2 boneless skinless chicken breasts
2 ounces boursin cheese (or two wedges of laughing cow garlic and herb cheese)
2 slices bacon

Steps:

  • Flatten each chicken breast to 1/2 inch thickness.
  • Spread 1 ounce or 1 wedge of cheese onto each breast.
  • Roll up and wrap with 1 slice bacon per roll.
  • Place seam side down in baking dish and bake for 40 minutes at 400 degrees fahrenheit.
