The Best Breakfast Casserole is a thick and creamy egg base with shredded potatoes, chunks of ham and flavorful cheese blends that bakes up in no time. Make ahead or enjoy the morning of during the holidays!

24 ounces frozen shredded potatoes
salt and pepper
12 eggs
2 cup half and half
1 teaspoon season salt
1 1/2 cup cheddar cheese (grated)
1 1/2 cup pepper jack cheese (grated)
2 cup chopped ham (Or your preferred meat, sausage would also be great)

Steps:

  • Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
  • In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
  • Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
  • Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

This is a great dish to make for Christmas, Easter or any special morning. It is easy and can be prepared ahead of time and then just pop it in the oven and enjoy. I like to prepare mine the same morning. The first time I made this everyone raved about it and asked if I would make it very year. I would suggest spliting it up into two smaller dishes if you have children that do not like peppers and onions. Make one for adults and the other one a little bit more kid-friendly with just ham and cheese.

2 tablespoons unsalted butter
1 cup finely chopped yellow onion
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped red bell pepper
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 teaspoons minced garlic
1 tablespoon minced fresh parsley leaves
6 ounces Canadian bacon or 6 ounces baked ham, trimmed and diced
2 links smoked sausage or 6 ounces hot smoked sausage, chopped
8 large eggs
3 cups whole milk
1/2 cup heavy cream
1 1/4 teaspoons creole seasoning
8 cups stale French bread or 8 cups Italian bread, cubed
8 ounces grated gouda cheese (about 2 cups) or 8 ounces Fontina cheese (about 2 cups)
1/2 cup fine dry breadcrumb
1/2 cup freshly grated parmesan cheese
2 tablespoons melted unsalted butter

Steps:

  • Preheat the oven to 350 degree F. Lightly grease a 3-quart (9 by 13-inch) baking dish with 1 tablespoon of the butter and set aside.
  • In a medium skillet, melt 2 teaspoons of the butter over medium-high heat. Add the onions, green and red bell peppers, 1/4 teaspoon of the salt, and 1/8 teaspoon of the pepper and cook, stirring, until soft, 3 minutes. Add the garlic and cook, stirring, until fragrant, 30 seconds. Add the parsley, stir, and remove from the heat. Let cool.
  • In a medium skillet, melt the remaining 1 teaspoon butter over medium-high heat. Add the Canadian bacon and cook, stirring, for 3 minutes. Remove with a slotted spoon and drain on paper towels. Add the sausage to the skillet and cook, stirring, until lightly browned, 5 to 6 minutes. Drain on paper towels and let cool.
  • In a large bowl, beat the eggs. Add the milk, cream, 1 teaspoon of the Essence, remaining 1/2 teaspoon salt, and remaining 1/8 teaspoon pepper and whisk to combine. Add the bread cubes and let sit for 5 minutes. Add the cooked Canadian bacon and sausage, the onion mixture, and the Gouda cheese and stir to incorporate the ingredients. Pour into the prepared dish, cover with aluminum foil, and bake until almost completely set, 50 to 55 minutes.
  • (Alternatively, the bread pudding can be assembled up to this point, covered, and refrigerated 8 hours or overnight, and then baked. Let sit at room temperature while preheating the oven, before baking. ).
  • In a small bowl, combine the bread crumbs, Parmesan, melted butter, and remaining 1/2 teaspoon Essence. Uncover the pudding and sprinkle the bread crumb mixture evenly over the top. Return to the oven, increase the heat to 375 degrees F and bake until the pudding is completely set in the center, puffed, and golden brown on top, about 20 minutes.
  • Let sit for 15 minutes before serving.

My mom makes this recipe on Christmas eve so that we have a wonderful breakfast baking in the oven while we open up Christmas presents in the morning. I absolutely love this casserole! We use the Pepperidge Farm seasoned bread cubes that are readily available during the holidays.

3 cups seasoned croutons
1/2 cup shredded swiss cheese
4 eggs
3 cups milk, divided
2 cups shredded cheddar cheese
2 lbs pork sausage, fried and crumbled
3/4 teaspoon mustard
1 (10 ounce) can cream of mushroom soup

Steps:

  • Cover the bottom of a 9x13 inch baking dish with the seasoned croutons.
  • Sprinkle with the cheeses and sausage.
  • Mix together the eggs, mustard, and 2 1/2 cups milk.
  • Pour over the crouton mixture.
  • Cover with foil and refrigerate overnight.
  • When ready to bake, mix can of soup with 1/2 cup milk.
  • Pour on top of casserole.
  • Bake at 300 degrees for 1 1/2 hours.

3 cups frozen country style shredded hash brown potatoes, thawed
3 tablespoons butter, melted
⅛ teaspoon salt
⅛ teaspoon pepper
6 eggs, lightly beaten
2 cups shredded 4-cheese Mexican blend cheese
¼ cup chopped red bell pepper
chopped fresh chives or green onion

Steps:

  • Prepare sausage according to package directions. cool slightly and cut into 1/2-inch pieces; set aside.
  • In a bowl, combine hash browns, butter, salt and pepper; divide evenly into 12 greased muffin cups. Press mixture onto sides and bottom of muffin cups.
  • Bake at 400 degrees F for 12 minutes or until lightly browned. Remove from oven; divide sausage pieces into muffin cups.
  • In a bowl, combine eggs, cheese and bell pepper. Spoon mixture evenly into muffin cups. Sprinkle with chives or onion. Return to oven, bake 13-15 minutes or until set. Serve.
