Skin-on chicken breasts are stuffed with seasoned compound butter right under the skin for the juiciest, most flavorful chicken ever!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Using 2 fingers, loosen the skin on each chicken breast. Thinly slice compound butter and stuff under skin to cover as much of the chicken as possible.
- Layer onion slices on the bottom of a glass baking dish. Pour in chicken stock. Place chicken breasts on top of the onions, skin-side up. Season with salt and pepper.
- Bake in the preheated oven for 30 minutes. Start basting chicken with its juices and rotate if skin is not crisping evenly. Continue baking until chicken is no longer pink in the center and the juices run clear, about 25 more minutes, depending on the size of the chicken breasts. Baste chicken every 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat the oven to 425 degrees F (220 degrees C). Grease a shallow baking dish.
- Season chicken breasts. Coat chicken on all sides with mayonnaise, and roll in bread crumbs until coated. Place coated breasts into the prepared pan.
- Bake uncovered for 30 minutes in the preheated oven, or until chicken is no longer pink in the middle and the juices run clear.

- Add the salt and water to a large bowl and stir until the salt dissolves.
- Add the chicken breasts to the brine and let them rest for around 30 minutes (and no longer than 1 hour or the chicken will be salty)
- Remove the chicken from the water and pat it dry with paper towels.
- If the chicken is uneven in thickness, gentle pound the chicken into a more uniform thickness.
- Place the chicken in a baking dish and brush with melted butter or oil on both sides.
- Mix the additional salt, pepper, paprika, and garlic powder together in a small bowl. Season both sides of the chicken with the seasoning mix.
- Bake in a hot (450 F degree) oven for 15-20 minutes. Use a cooking thermometer to measure the temperature at the thickest part of the breast, it should be between 160-170 degrees F. (The FDA recommends 170 degrees F.)
- Once the chicken is cooked, remove the pan from the oven and loosely cover the pan with aluminum foil. Let the chicken rest for at least 5-10 minutes before serving.

- Preheat oven to 400°F. Season chicken breast with salt, pepper, paprika and set aside.
- In a small bowl mix together the butter, Italian seasoning, parsley, and garlic. Set aside.
- In a cast iron skillet, heat olive oil over medium heat. When the skillet is really hot add chicken breast. Sear until golden. It's about 1-2 minutes each side.
- Pour garlic butter mixture over the chicken breast. Place skillet in the oven and cook until cooked through. It's about 20-30 minutes or until chicken breasts gets to an internal temperature of 165F.
- Remove from the oven. Using a spoon, pour some of the butter sauce left in the skillet onto the chicken breast before serving.
