4 large egg whites
1/2 teaspoon cream of tartar
1 cup sugar
PARFAITS:
5 cups sliced peeled fresh or frozen peaches, thawed
1/4 cup sugar
1 tablespoon plus 1/4 cup Amaretto, divided
1/2 cup cream cheese, softened
1 cup confectioners' sugar
2 cups heavy whipping cream
Optional toppings: Toasted sweetened shredded coconut and/or sliced almonds

Steps:

  • In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. , Drop by heaping tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 250° for 32-38 minutes or until firm to the touch. Turn oven off; leave meringues in oven for 1 hour. Remove from the oven and cool on baking sheets., In a large bowl, combine the peaches, sugar and 1 tablespoon Amaretto. Cover and refrigerate for at least 30 minutes. In another bowl, beat cream cheese and confectioners' sugar until smooth. Beat in cream and remaining Amaretto until thickened., Crumble two-thirds of the cookies; place 2 tablespoons crushed cookies in each of 6 dessert dishes. Layer with half the peaches, Amaretto cream and remaining crushed cookies; repeat layers. Garnish with coconut and/or almonds if desired. Store leftover cookies in an airtight container.

2 tablespoons butter, softened and divided
2 tablespoons white sugar, divided
2 Bosc pears, halved and cored
½ cup heavy whipping cream
1 tablespoon amaretto liqueur

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Grease a 9-inch baking dish with 1 tablespoon butter. Sprinkle 1 tablespoon sugar into buttered dish.
  • Rub remaining butter onto cut sides of pear halves. Arrange pears into the prepared baking dish with the cut sides down. Sprinkle remaining sugar over the pears.
  • Stir cream and amaretto together in a bowl.
  • Bake pears in preheated oven for 10 minutes. Pour cream mixture over the pears and continue baking until the pears are tender, about 15 minutes more.

Steps:

  • Preheat oven to 425°F.
  • Mix Amaretto and vinegar in a 13- by 9-inch baking dish. Put pears, cut sides down, in dish.
  • Roast pears 15 minutes. Add water and roast until pears are tender but still hold their shape, 8 to 10 minutes more.

100g ricotta
½ tsp cinnamon
4 tbsp clear honey , plus extra to serve
8 crisp amaretti biscuits

Steps:

  • Cut each pear in half, then place on a large baking tray. Use a teaspoon to scoop out the cores and make a dip in the centre of each pear. If your pears are firm, you may need to use a sharp knife to do this. Dollop about 1 heaped tsp ricotta into each dip, then sprinkle over the cinnamon and drizzle with a little honey.
  • Heat oven to 190C/fan 170C/gas 5, then roast the pears for 10 mins. Tip the biscuits into a food bag and use a rolling pin to lightly crush them. 2 tablespoons unsalted butter
3 tablespoons sugar
3 large Anjou or Bartlett pears, peeled, cored, quartered, and cut into 1/4-inch-thick slices
3 sprigs fresh rosemary
8 ounces sour cream or creme fraiche
1 teaspoon light-brown crystal sugar, for garnish (optional)

Steps:

  • Melt the butter and sugar in a large saute pan over medium-high heat. Cook, stirring frequently until sugar begins to caramelize, about 2 minutes. Add the pears and rosemary, raise heat to high, and cook, stirring occasionally, until pears are browned and caramelized all over, 3 to 5 minutes. (If pears begin to burn, reduce heat to medium.) Remove the pears, and spread out on a plate to cool.
  • Place saute pan back on high heat, and add 1/4 cup water, stirring up the browned sugar and butter. Cook, stirring and swirling pan, until reduced to a thick syrup.
  • Layer pears in four small glasses, alternating with the sour cream for two layers of each. Drizzle some of the syrup over each serving, sprinkle with crystal sugar, and serve.

3/4 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon sugar
3 large eggs, lightly beaten
1 cup milk
1 tablespoon amaretto liqueur, or 1/4 teaspoon almond extract and an additional tablespoon milk
3 tablespoons melted butter
Clarified butter for cooking the crepes

Steps:

  • Sift the flour and salt into a large bowl and stir in the sugar. Make a well in the center of the mixture and add the eggs. Using a fork, gradually incorporate the flour into the eggs. Stir in the milk, amaretto and melted butter, stirring until smooth. Set aside for 30 minutes.
  • Strain the batter through a fine sieve. Place a 7- or 8-inch crepe pan over medium heat. When hot, brush the pan with clarified butter. Pour slightly less than 1/4 cup of the batter into the pan, tilting it to evenly cover the bottom. Cook until lightly browned, flip and cook the other side. Transfer the crepe to a plate lined with plastic wrap or waxed paper.
  • Continue until all the batter is used, placing the crepes between layers of paper towels. They will keep up to 3 days well wrapped in the refrigerator.

8 Small peaches, halved and pitted
1 cup mascarpone

Steps:

  • In small saucepan, combine sugar with 1 cup water. Place over low heat until sugar has dissolved. Raise heat to medium-high, and without stirring, allow syrup to bubble until it begins to caramelize and turn golden, about 20 minutes.
  • Mix amaretto and lemon juice together. Reduce heat under saucepan to low. Standing back from pan, slowly pour in mixture; it will spit, then simmer. Stir to dissolve any sugar strands that have formed.
  • Place peach halves in pan, in batches if necessary. Poach until just tender, 2 to 3 minutes, then transfer to plate. When all peaches have been poached, raise heat to medium-high, and boil caramel down until it is thick but still can be poured; there should be about 1 cup.
  • Place 4 peach halves on each of four plates. Drizzle with caramel. Garnish each plate with a dollop of mascarpone sprinkled with splintered pistachios.

Steps:

  • For pastry cream:
  • Combine cream and milk in medium saucepan; bring to simmer. Remove from heat. Whisk sugar, egg yolks, flour, amaretto, vanilla, and salt in large bowl until smooth (mixture will be thick and pasty). Gradually whisk hot cream mixture into yolk mixture. Return mixture to saucepan. Whisk over medium heat until pastry cream boils, thickens and is smooth, about 6 minutes. Transfer pastry cream to bowl. Press plastic wrap directly onto surface of pastry cream; refrigerate overnight.
  • For pears:
  • Position rack in center of oven and preheat to 400°F. Toss pear halves, 1/3 cup sugar, and lemon juice in large bowl. Place pears, cut side down, on heavy large rimmed baking sheet; pour sugar mixture from bowl over pears. Roast pears until tender and golden brown in spots, turning occasionally, about 40 minutes. Cool. Cut pears into 1/2-inch pieces; place in bowl along with any juices from baking sheet. (Pears can be made 1 day ahead. Cover and chill.)
  • Arrange 13 to 14 ladyfingers in bottom of 8-inch-diameter, 3-quart trifle bowl, trimming to fit tightly. Sprinkle 1/2 cup crushed amaretti cookies over. Dot with 1/4 cup fruit spread. Top with 1 cup roasted pears. Drizzle 1 tablespoon brandy and 1 tablespoon amaretto over. Spread 1 cup pastry cream over. Repeat layering 2 more times with ladyfingers, amaretti cookies, fruit spread, pears, brandy, amaretto, and pastry cream. Top with 13 to 14 ladyfingers; sprinkle with remaining brandy and amaretto. Spread remaining pastry cream over top. Cover and refrigerate until cold, about 4 hours.
  • Beat cream, powdered sugar, and vanilla in large bowl until peaks form. Spread 1 1/2 cups whipped cream over top of trifle. Spoon remaining whipped cream into pastry bag fitted with medium star tip. Pipe whipped-cream rosettes around top of trifle. Garnish with sliced almonds and mint sprigs, if desired. Refrigerate up to 6 hours.
  • Amaretti cookies are available at Italian markets and some supermarkets.

6 cinnamon sticks, broken into 4 pieces

  • Peel and halve pears; scoop out core.
  • Place in a solution of 1/4 cup lemon juice in 4 cups water.
  • Prepare 5 500 ml (1 pint) preserving jars.
  • In a large saucepan, combine orange and pineapple juices, sugar and cinnamon stick.
  • Bring to a boil and simmer 5 minutes.
  • Drain pears; add to hot liquid; simmer 5 minutes.
  • Remove from heat, add amaretto.
  • Place section of cinnamon stick in each jar.
  • Pack hot fruit snugly in jars; fill with boiling syrup to within 1/2 inch of top rim.
  • Remove air bubbles.
  • Readjust headspace.
  • Apply lids and screwbands.
  • Process 500 ml (1 pint) jars in boiling water canner 20 minutes.
  • Remove jars from canner.
  • Check seals when cool.
