Many years ago, after I decided to stop eating meat (I am not a strict vegetarian now, though that's the way I usually eat), I walked down the street to look over whole grains at my local health food store in Austin, Tex. There wasn't much of a selection; still, it was all new to me, and I bought some of the grains sold in bulk bins: brown rice, millet, kasha and wheat berries.

1/2 cup amaranth
1 1/2 cups water
1/4 cup milk, almond milk or rice milk (more to taste)
2 teaspoons maple syrup or brown sugar or, if available, Mexican piloncillo
Pinch of salt

Steps:

  • Combine the amaranth and water in a small saucepan, and bring to a boil. Reduce the heat to low, cover and simmer 30 minutes. Stir every once in a while, as the amaranth may stick to the bottom of the pan.
  • Stir in the milk, syrup or brown sugar, and a pinch of salt. Stir vigorously until the porridge is creamy. Remove from the heat and serve.

Popped Amaranth and Toasted Wheat Berry Fool image

Here, tiny puffs of amaranth and crunchy, nutty toasted wheat berries are suspended in lightly sweetened, tangy whipped cream and yogurt, along with whatever fresh fruit you have on hand. Serve it as a special breakfast treat, or add a little more sugar and call it dessert.

Yield Serves 3 to 4

Number Of Ingredients 6

1/4 cup (45 g) raw wheat berries
1/4 cup (50 g) raw amaranth
1 cup (240 ml) heavy cream
Sugar or vanilla sugar to taste (about 1 1/2 teaspoons)
1 cup (240 ml) plain yogurt
1 1/2 cups (340 g) fresh berries, pitted cherries, or diced cantaloupe or honeydew melon

Steps:

  • Heat a small, heavy stainless-steel sauté pan over high heat. Add the wheat berries and cook, shaking the pan frequently, until they crackle and swell up and are just starting to color, about 2 minutes. Remove to a bowl.
  • To the same pan over high heat, add half of the amaranth, cover immediately, and cook until the grains are all popped, no longer than 30 seconds. Immediately dump them in the bowl with the wheat berries and repeat with the remaining amaranth. Toss to combine the grains, then divide them among serving bowls.
  • Whip the cream with about 3/4 teaspoon sugar until soft peaks form. In a separate bowl, whisk the yogurt together with about 3/4 teaspoon sugar until smooth. Gently fold the cream into the yogurt, then dollop the mixture onto the grains and cover the top with fruit. Serve, or gently fold the grains, cream, and fruit together before serving.

1 cup amaranth, grains
1 cup water

Steps:

  • Rinse grains in cool water, and let soak for as long as you can (a few mins to 24hrs ok!). I soak mine overnight, this way it is not necessary to toast the grains first. Less heat=more nutrients!
  • Toast grains (if not soaked) in coconut butter (yum) or oil (if you don't have this on hand use butter or grapeseed oil) lightly, until golden.
  • Add 1 cup of boiling water. Simmer for 15-20mins, you will notice the grains become slightly translucent.
  • Transfer to a bowl, add you favorite "nut" or oat milk, stevia or coconut nectar. You can also do a grits style version with butter and salt -- a thicker consistency will be polenta like.
