Recipe is from my favorite chef Alton Brown. I also happen to love bananas foster, so two great things in one.

Number Of Ingredients 7

2 tablespoons unsalted butter
1/4 cup dark brown sugar
1/4 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
1 tablespoon banana liqueur
2 under ripe bananas, sliced in half lengthwise
1/4 cup dark rum

Steps:

  • Melt butter in a 10-inch heavy skillet over low heat.
  • Add brown sugar, allspice and nutmeg and stir until sugar dissolves.
  • Add banana liqueur and bring sauce to simmer.
  • Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking.
  • Remove bananas from pan to a serving dish.
  • Bring sauce to a simmer and carefully add the rum.
  • If the sauce is very hot, the alcohol will flame on its own.
  • If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes.
  • If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency.
  • Immediately spoon the sauce over bananas and serve.
  • Serve with waffles, crepes, or ice cream.

1/4 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
1 tablespoon banana liqueur

1/2 teaspoon finely grated orange zest

Steps:

  • Melt butter in a 10-inch heavy skillet over low heat. Add brown sugar, allspice and nutmeg and stir until sugar dissolves. Add banana liqueur and bring sauce to simmer. Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking. Remove bananas from pan to a serving dish. BOURBON BANANAS FOSTER

2 under-ripe bananas, quartered
2 tablespoons unsalted butter
1/4 cup dark brown sugar
1 tablespoon banana liqueur
1/2 teaspoon freshly grated nutmeg
1/4 cup bourbon

Steps:

  • Put the bananas in a 10-inch heavy skillet with the butter, brown sugar, liqueur and nutmeg and set over high heat. Once the sugar starts to dissolve, begin spooning the sauce over the bananas, flipping them after 1 minute. Remove from the heat when the sauce begins to thicken and bubble. Carefully pour the bourbon into the pan and ignite with a long match or stick lighter. Continue to cook until the flames die out and the sauce coats the back of a spoon. Serve immediately with ice cream, waffles or crepes.

2 bananas, sliced
1 cup light brown sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 pinch salt
2 scoops ice cream (vanilla or something more exotic like praline or wattleseed)

Steps:

  • Melt butter in a saucepan over medium heat.
  • Add sliced bananas and stir for 2 minutes.
  • Add brown sugar, vanilla, cinnamon, and salt.
  • Lower heat and continue cooking, stirring constantly for 2 more minutes.
  • Serve over a scoops of ice cream.
  • Note: 1 oz of booze may be added during the last 2 minutes of cooking (Rum works well), add with the pan off of the heat- Beware of flaming.

This recipe only takes 5 minutes to make one delicious dessert!While the bananas cook, scoop the ice cream into individual bowls so they are ready to go once the sauce has been flambeed. Before flambeing, make sure to roll up long shirt sleeves, tie back long hair, turn off the exhaust fan (otherwise the fan may pull the flames up), and turn off any lit burners (this is critical if you have a gas stove). 4 tablespoons unsalted butter
1/2 cup packed dark brown sugar
1 cinnamon stick
1 strip lemon, zest of, 1 to 2 inches long by about 1 1/2 inch wide
2 large firm ripe bananas, peeled and halved lengthwise and then crosswise
4 tablespoons dark rum
1 pint vanilla ice cream, divided among four bowls

Steps:

  • Melt the butter in a heavy-bottomed 12-inch skillet over medium heat.
  • Add the brown sugar, cinnamon stick, and lemon zest; stir to dissolve the sugar, about 1 minute.
  • (If the heat is too high, the butter and sugar will separate instead of combining to form a sauce).
  • Add the bananas and spoon some sauce over each piece.
  • Cook until the bananas are glossy and golden on the bottom, about 1 1/2 minutes.
  • Turn the bananas and continue cooking until they are very soft but not mushy or falling apart, about 1 1/2 more minutes.
  • Remove the skillet from the heat.
  • Add the rum and wait until the rum has warmed slightly, about 5 seconds.
  • Wave a lit match over the pan until the rum ignites, shaking the pan to distribute the flame over the entire pan.
  • When the flames subside (this will take 15 to 30 seconds), divide the bananas and sauce among the four bowls of ice cream and serve.
