Steps:
- Saute bacon until crisp.
- Add cream, salt, pepper and nutmeg.
- Mix in macaroni and potatoes.
- Layer into a baking dish.
- Sprinkle with cheese and bake for 10 minutes at 350 degrees.
- Meanwhile saute onion in butter until golden.
- Serve sprinkled with the onion.

- In a large skillet, cook bacon; drain. Reserve 1 tablespoon drippings in skillet. Add the tomato sauce, tomato paste, 2 tablespoons parsley, sugar, garlic powder and pepper to drippings; cover and simmer for 8-10 minutes. Stir in macaroni; heat through, stirring occasionally. Combine cheese and remaining parsley; sprinkle over casserole. , Microwave Directions: In a 2-qt. microwave-safe baking dish, heat bacon on high for 2-1/2 minutes; discard fat. Microwave on high 2-3 minutes more or until bacon is crisp. Steps:
- Heat oven to 350*F.
- Lightly butter a large ovenproof gratin dish.
- Cook the macaroni and potatoes in boiling salted water for 10 minutes, until just tender.
- Dry fry the bacon in a large non stick pan until lightly golden.
- Pour in the cream and season with nutmeg and fresh ground pepper.
- Drain the macaroni and potatoes well and stir them into the bacon and cream.
- Spoon half into the prepared dish, sprinkle with half the parmesan, then spoon remaining mixture on top, finishing off with remaining parmesan.
- Bake for 10 to 15 minutes until golden and bubbling.
- Meanwhile melt the butter ina frying pan, and cook sliced onion for 5 to 6 minutes til golden.
- Serve the baked macaroni with the onion slices scattered on the top.
ALPINE MACARONI
This is a traditional Swiss dish served on the slopes of the Alps. I like to top it with chunky apple sauce and crunchy onions to serve.

Steps:
- Place the potatoes in a large pot and fill with enough water to cover them. Bring to a boil and cook until tender enough to pierce with a fork. Drain and cool slightly, then remove the peels, and slice into 1/4 inch thick slices.
- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x9 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook until barely tender, about 6 minutes. Drain and set aside.
- Melt the butter in a large skillet over medium-high heat. Add onion; cook and stir until onion starts to turn translucent. Stir in the garlic, and cook for a few more minutes. Remove from the heat and set aside.
- Layer the macaroni, onions and potatoes into the prepared baking dish. Season with salt and pepper. Sprinkle the shredded Gruyere cheese over the top, and drizzle cream evenly over the entire dish.
- Bake in the preheated oven until the top is golden brown, 15 to 20 minutes.

A recipe for Älplermagronen (Swiss Alpine Macaroni)! Layers of pasta, potatoes, cheese, and cream are baked until golden, topped with caramelized onions, and served with applesauce.

- Preheat oven to 375˚F. Lightly grease a large casserole dish.
- In a large frying pan, melt butter over medium low heat. Add the onions, season with a pinch of salt, and cook, stirring occasionally, until golden brown and caramelized. This will take about 30 minutes.
- Bring large pot of salted water to a boil.
- Once water comes to a boil, add the cubed potatoes. As they begin to soften, after about 5 minutes, add the dried penne. Continue to cook, stirring occasionally, until potatoes are tender and pasta is barely tender, about 7 minutes. The pasta will cook a little further as it bakes. Drain and set aside.
- In a medium bowl, season cream with salt, pepper, and about 1/4 teaspoon freshly grated nutmeg.
- Add 1/3 of penne and potatoes to the bottom of prepared dish. Evenly cover with 1/3rd of the grated cheese. Top with another 1/3 of penne and potatoes. Top with another 1/3rd of the cheese, then remaining penne and potatoes. Top evenly with the remaining shredded cheese. Pour the seasoned cream over the layers.
- Bake in preheated oven until heated through and the cheese is melted and bubbly, about 15-20 minutes. Remove from the oven and evenly top with the caramelized onions.
- Serve the Älplermagronen hot either over the applesauce or with the applesauce on the side. If desired, top with a little fresh parsley or chives.
