Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

14 3/4 ounces canned tuna, drained and flaked
1/2 cup breadcrumbs
1/2 cup egg substitute
1/2 cup diced green bell pepper
1/2 cup onion, finely chopped
1/4 cup milk
1/2 teaspoon Worcestershire sauce
salt and pepper
1 dash Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, stir together tuna, breadcrumbs, egg, bell pepper, and onion. Then add milk, Worcestershire sauce and Tobasco, and salt and pepper, mixing with your hands.
  • Pack ingredients into a large, greased loaf pan.
  • Bake about 45-50 minutes, until top is golden brown and center is thoroughly cooked. Allow to cool about 10 minutes before slicing and serving. Enjoy!

This tuna loaf made with canned tuna, is an old Italian recipe: polpettone di tonno. It is one of my backup recipe I make when I am running out of food. It is made with ingredients I always have in my kitchen, plus it can be made ahead of time, stored in the fridge and served cold with a salad.

5 oz tuna canned in olive oil, drained (( I prefer the one in glass))
2 fresh eggs
1/2 cup breadcrumbs
1 tbsp freshly chopped parsley
1 peeled garlic cloves
1 tbsp freshly grated Parmesan
1/4 cup mayonnaise or aioli (for serving)
1 tsp capers (optional)

Steps:

  • Blend with an electric blender a cup of shredded breadcrumbs with basil or parsley leaves and a garlic clove
  • Add the grated Parmesan to the breadcrumbs
  • Stir with a fork to remove all the lumps
  • Strain the tuna from its olive oil
  • Mix the tuna, the prepared breadcrumbs and the eggs
  • Place the mix into a aluminium foil or cheese cloth
  • Roll it like a salami and tie the ends
  • Place the tuna wrapped in foil or cheese cloth in the steamer or in the boiling water
  • Steam for 20 minutes in the pressure pan or simply steam or simmer in water for 1 hour.
  • Once cooked, unwrap it and let it cool down completely.
  • Once cold cut it into slices and lay them on a serving dish.
  • Decorate with mayonnaise and any other garnish you have.

3 tablespoons mayonnaise
1 teaspoon prepared horseradish
1 teaspoon dried parsley
½ teaspoon paprika
¼ teaspoon cayenne pepper

1 (5 ounce) can tuna packed in water
1 cup soft bread crumbs
½ cup chopped onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a glass loaf pan with cooking spray.
  • Beat eggs, mayonnaise, horseradish, parsley, paprika, cayenne pepper, and black pepper together in a large bowl until smooth. Add tuna in water, bread crumbs, and onion; mix until evenly moistened. Pack tuna mixture into prepared loaf pan.
  • Bake in preheated oven until hot and fully cooked in the center, about 30 minutes.

2 (5 ounce) cans solid white tuna packed in water, drained
1 (10.75 ounce) can condensed cream of chicken soup
½ (10.75 ounce) can milk
1 (4 ounce) packet saltine crackers, crushed
3 slices white bread, crumbled into fine crumbs
½ onion, finely chopped
1 large egg
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large loaf pan.
  • Mix tuna, cream of chicken soup, milk, cracker crumbs, bread crumbs, onion, egg, and black pepper until thoroughly combined and spoon the mixture into the prepared bread pan. Smooth top.
  • Bake in the preheated oven until a toothpick inserted into the loaf comes out clean, 25 to 30 minutes.

During the summer we crave simple and fresh dishes like tuna loaf, a recipe I learned from my mother. She would mix all the ingredients and have this tasty snack ready in a jiffy. The trick is to prepare it in the microwave, saving a lot of time. In just 15 minutes you can have this appetizing summer treat that can be served with a portion of fruit or salad. You could even serve with toasted bread or crackers. Are you looking for a cool dish to ward off the hot days? This tuna loaf is a great option.

2 cans of tuna
4 eggs
4 tablespoons Muir Glen™ organic tomato paste
1 cup of heavy cream
1/2 cup of bread crumbs
Salt and pepper to taste

Steps:

  • Grease a microwavable container.
  • Mix all of the ingredients in another container and then transfer in to the prepared microwavable container.
  • Microwave for 15 minutes and let cool a bit once it's done.
  • Remove from mold and serve on a large plate or tray.
  • Serve with salad or fruit. You can also serve with crackers or toast.

3 can(s) tuna, drained, or 15 oz fresh cooked
1/2 c bread crumbs
2 eggs
1/2 c green bell pepper, diced
1/2 c onion, diced
1/4 c milk
1/2 tsp worcestershire sauce
salt and pepper, as desired
dash(es) tabasco sauce, as desired

Steps:

  • 1. Note about the tuna. I used 3 cans, drained well. Weight listed on each can was 185 grams net, 140 grams drained. For fresh cooked, go with 425 grams (15 oz).
  • 2. Preheat your oven to 180 C (350 F). Grease with butter or olive oil with an oil sprayer, a loaf pan.
  • 3. In a large mixing bowl, add all the ingredients, seasoning with salt and pepper as desired, as well as Tabasco sauce if desired.
  • 4. Use a large spoon and mix together.
  • 5. Pack mixture into the prepared loaf pan.
  • 6. Place in the oven and bake for about 45 to 50 minutes or until the top is golden brown.
  • 7. Cool for 10 minutes before slicing. Serve with sides of your choice and enjoy.

AMY'S CRUSTY ITALIAN LOAF

1/4 cup, (2 ounces) very warm water (105 to 115 degrees)
3/4 teaspoon active dry yeast
1 cup, (8 ounces) cool water ( 75 degrees)
1 1/2 cups, (12 ounces) Sponge Starter, recipe follows
3 1/2 cups, (16 ounces) unbleached allpurpose flour
1 tablespoon, plus 1 teaspoon Kosher salt

Steps:

  • Sponge Starter:
  • 1 1/2 cups (12 ounces) very warm water (105 degrees F to 115 degrees F)
  • 1/4 teaspoon active dry yeast
  • 3 1/2 cups (16 ounces) unbleached all-purpose flour
  • Mix all the ingredients together in a medium bowl and stir vigorously with a wooden spoon for 2 to 3 minutes until a smooth, somewhat elastic batter has formed. The batter will be very stiff; it gets softer and more elastic after it has proofed. You may find it easier to mix the sponge using an electric mixer, with a paddle or a dough hook, on medium speed for 1 to 2 minutes. Scrape the sponge into a 2-quart clear plastic container and cover with plastic wrap. At this point you have two options:
  • If you plan to make your dough later that same day, let the sponge rest at room temperature until it has risen to the point where it just begins to collapse. This may take 6 to 8 hours, depending on the temperature of the room and the strength of the yeast. The sponge will triple in volume and small dents will begin to appear in the top as it reaches its peak and then begins to deflate. The sponge is now in perfect condition to be used in a dough. It's best if you have already weighted or measured out all of your other recipe ingredients before the sponge reaches this point so you can use it before it collapses too much.
  • If you're not planning to make your dough until the next day or the day after, put the covered sponge in the refrigerator and let it rise there for at least 14 hours before taking it out to use in a recipe. Be sure to compensate for the cold temperature of the starter by using warm water (85 degrees to 90 degrees F) in the dough instead of the cool water specified in the bread recipe. Or let the starter sit out, covered until it reaches room temperature (this may take several hours), but don't let it collapse too much before you use it.
  • Yield: 28 ounces
  • Combine the warm water and yeast in a large bowl and stir with a fork to dissolve the yeast. Let stand for 3 minutes.
  • Add the cool water and sponge starter to the yeast mixture and mix with your fingers for about 2 minutes, breaking up the sponge. The mixture should look milky and slightly foamy.
  • Add the flour and salt and mix with your fingers to incorporate the flour, scraping the sides of the bowl and folding the ingredients together until the dough gathers into a mass. It will be wet and sticky, with long strands of dough hanging from your fingers. If the dough is not sticky, add 1 tablespoon of water.
  • Move the dough to a lightly floured surface and knead for about 5 minutes, until it becomes supple and fairly smooth. This is a sticky, wet dough; don't be tempted to add more flour to the work surface. Just dust lightly and use a dough scraper as necessary to loosen the dough from the table during kneading. Allow the dough to rest for 15 minutes, covered with oiled plastic wrap. (This rest period is the autolyse.)
  • Knead the dough 3 to 5 minutes, until it is stretchy and smooth, yet still slightly sticky. Shape the dough into a loose ball, place it in a lightly oiled bowl, and turn the dough in the bowl to coat with oil. Cover the bowl tightly with plastic wrap and let the dough rise at room temperature (75 to 77 degrees) for about 1 hour, or until the dough looks slightly puffy but has not doubled.
  • Place the dough in the refrigerator for at least 8 hours, or preferably, overnight to let it relax, develop flavor, and become more manageable.
  • Take the dough from the refrigerator and let it sit at room temperature for 1 to 2 hours, until it begins to warm up and starts to rise.
  • Flour a work surface well and gently dump the dough onto it. Divide the dough into three equal pieces, about 13 ounces each. Gently flatten one piece, pressing out some of the air bubbles, and stretch it into a rectangle. Fold the top third down and the bottom third up as if you were folding a business letter. Now form the loaf into a short baguette by rolling the dough over from left to right and sealing the seam with the heel of your palm. Fold the dough over about 1/ 3 of the way each time, seal the length of the loaf, then repeat. You want to gently draw the skin tight over the surface of the loaf while leaving some air bubbles in the dough.
  • Seal the seam, being careful not to tear the skin of the dough or deflate its airy structure. Do not elongate. These loaves are about 10 inches long. Cover an area on the work surface with a thick layer of flour and place the loaf, seam side down, on the flour. Repeat with remaining pieces of dough. The loaves will be loose and slightly irregular in shape. Leave plenty of space between the loaves they will spread as they rise. Cover the loaves with well oiled plastic and let them rise for 1 to 2 hours, until bubbly and loose.
  • Thirty minutes before baking, preheat the oven to 475 degrees. Place a baking stone in the oven to preheat and position an oven rack just below the stone.
  • Sprinkle a peel very generously with cornmeal. Line an upsidedown baking sheet with parchment paper and sprinkle very generously with cornmeal. Lift one loaf, flip it over so the floured side is on top, and gently tug on the ends to stretch the loaf to the full length of the peel, or about 14 inches on a pan. Repeat with the remaining loaves, placing 2 on the peel and 1 on the pan. Dimple each loaf with your finger in about 6 places, but don't deflate them too much. Be sure the loaves are loosened from the peel, then carefully slide them onto the baking stone. Place the pan of bread on the rack below the stone. Using a plant sprayer, quickly mist the loaves with water 8 to 10 times, then quickly shut oven door. Mist the loaves again after 1 minute. Then mist again 1 minute later.
  • Bake for about 10 minutes, then reduce the temperature to 450 degrees and bake 15 minutes longer or until the loaves sound slightly hollow when tapped on the bottom and the crust is a medium to dark brown. (If the crust is not brown enough, the loaves will soften as they cool.) Transfer the bread to a rack to cool for at least 30 minutes before serving.

1/2 cup almonds
1/2 cup sunflower seeds
1 carrot, peeled
2 celery stalks
1/8 cup chopped red onion
1 teaspoon dried parsley or 1/4 cup minced fresh parsley leaves
1 tablespoon fresh lemon juice
1 tablespoon extra-virgin olive oil
1/8 teaspoon garlic powder
1/2 teaspoon kelp powder
1/2 teaspoon Celtic sea salt
Leaf lettuce, for serving
1 scallion, chopped, optional
1/2 ripe avocado, sliced, optional
1/2 ripe tomato, sliced, optional
1/2 red bell pepper, sliced, optional

Steps:

  • Soak almonds in water for at least 8 hours and sunflower seeds for 6 hours.
  • Drain almonds and sunflower seeds. Grate carrot and celery in a food processor. Add the onion, parsley, lemon juice, olive oil, and seasonings and process until desired consistency. Remove the mixture from the food processor bowl and form it into a loaf. Using a loaf pan makes this easier. Cover the loaf with plastic wrap and let rest for at least 1 hour so that the flavors to mingle.
  • Serve on a bed of leaf lettuce, sprinkled with scallions and accompanied by the vegetable slices, if using.

I was looking for a tuna loaf recipe and found Carol Junkins 'Tuna Cakes~Flavors of Cape Cod.' I made few changes and additions, and on Carol's suggestion, here it is. Loaf will be on the dry side, since it's tuna and therefore, no fat, so you may want to serve with tartar sauce, a dill mayo, or any of your choice.

5 can(s) tuna, packed in water, drained
1 1/2 - 2 c ground oatmeal (i used my food processor)
1/2 green pepper, finely chopped
4 stalk(s) celery, finely chopped
6-8 baby carrots, finely chopped
3 eggs
4 Tbsp light cream cheese (i had whipped, so that's what i used)
2 Tbsp minced garlic
1 Tbsp lemon juice
1 Tbsp dill
seasoning (such as mrs. dash)
few turns of fresh ground pepper

Steps:

  • 1. Chop oatmeal in food processor. Set aside. Chop celery, pepper, and carrots.
  • 2. Mix all ingredients together until well blended; shape into loaf. Place in 8x8 baking dish sprayed with cooking spray.
  • 3. Bake at 350 for 30-45 minutes. Let rest 15 minutes before slicing.
  • 4. Serve with tartar sauce or a dill mayo.
