No Knead Rosemary Parmesan Skillet Bread features a super easy homemade dough that comes together in a matter of minutes! This bread has tons of flavor and a crispy cheesy crust.

2 1/4 teaspoons (1 package) instant yeast
2 cups lukewarm water
4 1/2 cups (574 grams) all-purpose flour
2 tablespoons chopped fresh rosemary, plus more for sprinkling
1 1/2 teaspoons fine salt
3 tablespoons olive oil, divided
1/4 cup grated parmesan cheese

Steps:

  • In a large mixing bowl, combine the yeast and water. Add half the flour in and stir with a wooden spoon. Add the rosemary, salt and remaining flour and stir until combined. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour. Or, you can let the dough rise in the skillet (next step).
  • Brush 2 tablespoons olive oil over the bottom of a 10 or 12-inch cast iron skillet. Sprinkle the dough and your hands with flour before shaping it into a disk. Dough will be sticky, it doesn't have to shape perfectly. Place in the skillet, cover loosely, let rise until puffy, about 30 minutes.
  • Meanwhile, preheat the oven to 400°F.
  • Drizzle additional olive oil over the top of the bread. Slash the dough with a sharp knife to create an X shape. Sprinkle with rosemary leaves. Bake for 20 minutes. Remove from oven and sprinkle all over with the Parmesan cheese. Return to oven and bake for an additional 20 minutes, or until golden brown.

4 large slice crusty bread, toasted and buttered

Steps:

  • Whisk eggs and cheese in a bowl until blended.
  • Melt butter in a nonstick skillet over medium heat.
  • When the butter sizzles, decrease heat to low; add in egg mixture. all at once; cook, stirring gently, until soft-set but still creamy, about 2 minutes.
  • Spoon the eggs onto the toast; sprinkle with the rosemary and a grinding of pepper; serve at once.

Another great version of Cook's Illustrated Almost No-Knead Bread. Makes an unbelievable loaf of bread! An enameled cast-iron Dutch oven with a tight-fitting lid yields best results, but the recipe also works in a regular cast-iron Dutch oven or heavy stockpot. Because of the high temperature required besure the pot (and lid) can handle the heat. You may have to improvise a new handle on the lid. I've also used my Romertofp clay baker and had wonderful results. This bread is so good, I'm tempted to invest in a La Cloche.

3 cups unbleached all-purpose flour, plus additional for dusting work surface (15 ounces)
1/4 teaspoon fast rise yeast
1 1/2 teaspoons table salt
4 ounces finely grated parmesan cheese
1 tablespoon minced fresh rosemary
3/4 cup water, plus
2 tablespoons water, at room temperature
1/2 cup chopped green olives (pitted)
1/4 cup mild-flavored lager beer, plus
2 tablespoons mild-flavored lager beer
1 tablespoon white vinegar

Steps:

  • Whisk together flour, yeast, salt, Parmesan, and rosemary in large bowl. Add water, olives, beer, and vinegar.
  • Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy ball forms. (The dough will be very wet.).
  • Cover bowl with plastic wrap and let sit at room temperature for 8 to 18 hours.
  • Line inside of 10 inch skillet with a 12- by 18-inch sheet of parchment paper.
  • Spray paper with nonstick cooking spray.
  • Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle.
  • Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray.
  • Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours. (I've also retarded the rising by placing dough in the refrigerator for up to 12 hours.).
  • About 30 minutes before baking, adjust oven rack to lowest position, place a large heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 500 degrees.
  • Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2-inch-deep slit along top of dough.
  • Carefully remove pot from oven and remove lid.
  • Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge).
  • Cover pot and place in oven.
  • Reduce oven temperature to 425 degrees and bake covered for approximately 30 minutes.
  • Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer.
  • Carefully remove bread from pot; transfer to wire rack and cool to room temperature, about 2 hours.

  • Put flour, salt, rosemary and yeast in a large bowl and mix thoroughly. Add olive oil to warm water and pour over dry ingredients. Add sliced olives. Using a wooden spoon, stir until all dry flour is incorporated, 2-3 minutes. Cover mixing bowl with plastic wrap and let it stand for 4-5 hours, until dough is approximately doubled in size.
  • Dough will be wet and bubbly. Using a rubber spatula, scrape the dough onto a generously-floured work surface. Let dough sit for about 5 minutes. Dust the surface of the dough with a sprinkling of flour (about a tablespoon). Fold the dough over and press it with the heel of your hand and flip it over and fold it again. Do this several times, allowing dough to absorbs some of the fresh flour, for 2-3 minutes until it firms up a bit and the outside loses most of its stickiness. (unlike traditional bread recipes, there is no need to deflate the dough or remove bubbles in this step) Rinse and dry the bowl. Lightly coat the bowl with olive oil. Return dough to bowl and roll it around to coat it with oil from the sides of the bowl. Cover with plastic wrap. Let sit for 1 1/2 -2 hours, until it is about 50% larger.
  • Again put dough on a floured surface. Flip and knead about 8-10 times, and form a ball. Put ball into a floured Banneton or colander with floured dish towel. (The final rise container imprints its design onto the bread. If you use a banneton, the bread will have beautiful ridges) Fit the banneton or colander back into the large bowl and cover with plastic wrap. (If it doesn’t fit into the glass bowl just cover it with a slightly damp dish towel) Let sit for about 1 – 1 1/2 hours.
  • About a half hour before dough is ready, place the empty Dutch oven, with its lid on, into the middle of the oven and preheat the oven to 500ºF. When the bread is ready (done rising), carefully take the heated Dutch oven out of the oven, set it on the stove or a heat-proof surface, and uncover it. Sprinkle cornmeal over the bottom of the pot. Flip the dough into center of the Dutch Oven, being careful to avoid contact with the sides of the pot, to get the ideal shape. (If the dough touches the side of the pot, you will need to use a spatula to position it into the center of the pot. It will taste just as good.) Cover pot, place into the hot oven and reduce temperature to 450ºF. Bake for 25 minutes. Remove the lid. Bake for an additional 20-30 minutes until the crust is nicely browned. Remove the pot from the oven, transfer the bread to a cooling rack and let it stand for 20 minutes before slicing.

  • In a large bowl, stir together the flour, salt, Parmesan, rosemary, and yeast. Stir the ingredients until the Parmesan is evenly coated with flour and everything is evenly mixed. Tip, when adding ingredients put the yeast and salt on opposite sides of the bowl. Never put the yeast and salt directly on top of each other because the salt could kill the yeast. Stir in the water using a wooden spoon until the mixture forms a shaggy but cohesive dough (see picture). Don’t overwork it. It won't look much like dough at this point and that’s ok.
