This Herb Garlic Mashed Potatoes Recipe infused with a buttery rosemary and thyme mixture is so luscious and creamy. They're the perfect side dish for any occasion.

Number Of Ingredients 7

6 large Yukon gold potatoes
1 cup carnation milk (evaporated milk) (warmed whole or 2%; plus 2 or more tablespoons)
1/2 tbsp kosher salt (to taste)
1/4 cup butter
3-4 cloves garlic (kept whole)
2 sprigs rosemary (fresh)
2 sprigs thyme (fresh)

Steps:

  • Using a paring or steak knife, peel the skin from each potato. Chop the potatoes into cubes about 1-1/2 inch thick and place in a large pot of cold water. Make sure the water level is at least a few inches above the potatoes. Add salt and boil until potatoes become fork-tender about 25 to 30 minutes. Pierce a few potatoes with a fork and if the fork cuts through the potato smoothly they're done. If not, continue to cook. You do not want under-cooked potatoes.
  • Use a colander to drain the potatoes from the boiling water. Allow the potatoes to sit in the colander until they're completely drained. This may take a few minutes.
  • Meanwhile, make the butter herb mixture. Melt butter in saute pan. Add fresh herbs and garlic until fragrant. Then, remove garlic and fresh herbs from the melted butter and discard. In a separate pot, heat the canned carnation milk.
  • Place the drained potatoes in a large bowl and begin mashing them with either a sturdy wire whisk or potato masher. Add the heated carnation milk and melted butter mixture. Continue mashing until smooth and season with kosher salt.
  • Garnish with extra melted butter and fresh herbs (optoinal) and serve.

  • Add rest of ingredients and enough potato water or milk to make softconsistency.
  • Put into greased casserole dishes.
  • Bake at 350 for 45 minutes to an hour or freeze until needed.
  • This amount serves 25.

6 c cauliflower (1 medium head)
4 oz cream cheese
1 tsp garlic or garlic powder
1/2 tsp black pepper

Steps:

  • 1. Cut cauliflower into pieces and rinse with water.
  • 2. Put cauliflower pieces in a microwave safe dish, cover and cook on high for 8 to 10 minutes or until soft.
  • 3. Drain off moisture from cooked cauliflower.
  • 4. Place hot cauliflower in a blender and blend untl smooth.
  • 5. Add cream cheese, garlic, and pepper. Blend to combine ingredients.
  • 6. Remove from blender and serve hot.

3 pounds potatoes (small red potatoes or gold potatoes)
1 cup chicken broth (or vegetable broth for vegetarians)
½ cup milk
¼ cup heavy whipping cream
4 tablespoons butter (unsalted )
1 teaspoon seasoning (Weber garlic and herb seasoning, or similar)
1 teaspoon salt
½ teaspoon black pepper
¼ cup parsley (fresh chopped)

Steps:

  • Wash and scrub the potatoes. I like to use this handy vegetable scrubber HERE.
  • Open the Instant Pot lid and place the Instant Pot trivet rack inside the stainless-steel inner pot. (The trivet rack isn't required - but it keeps the potatoes above the liquid in the pot, so they're steaming instead of boiling.)
  • Add the potatoes inside the pot.
  • Pour the chicken broth over the potatoes.
  • Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 10 minutes.
  • When the cooking time is finished, allow a natural pressure release for at least 10 minutes.
  • To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
  • Use an oven mitt to remove the trivet rack from under the potatoes.
  • Mash the potatoes inside the inner pot, mashing until you reach the desired consistency. Be careful not to overwork the potatoes, so they don't lose their fluffy texture.
  • Add the milk, whipping cream, butter, seasoning, salt, pepper, and parsley to the mashed potatoes.
  • Use a rubber spatula to fold in and combine all the ingredients carefully.
  • Serve Black folks creamy mashed potatoes from inside the Instant Pot inner pot or transfer to a serving dish, and enjoy!
