Easy Tuna Patties image

These crispy tuna patties are paleo, gluten-free, and keto. They contain no breadcrumbs. Easy, affordable and delicious, it's the perfect weeknight dinner!

2 (5 oz) cans tuna in water (well-drained and flaked with a fork)
2 tablespoons avocado oil mayonnaise
2 tablespoons Dijon mustard
2 teaspoons minced fresh garlic
2 large eggs (lightly beaten)
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/2 cup chopped fresh parsley (or cilantro)
4 tablespoons olive oil for frying*

Steps:

  • Preheat the oven to the "keep warm" setting (150-170 degrees F).
  • In a medium bowl, use a fork to mix together the tuna, mayonnaise, Dijon mustard, minced garlic, eggs, kosher salt, black pepper, and parsley.
  • Heat the olive oil in a large nonstick skillet over medium heat.
  • Measuring 1/4 cup of the mixture for each cake, fry the patties until golden brown, about 3 minutes per side.
  • Fry 4 patties at a time, keeping the cooked tuna cakes in a warm oven while you fry the second batch.
  • Serve immediately.

1 (8 ounce) box whole wheat pasta
3 cups garbanzo beans
2 teaspoons salt
2 (4 ounce) cans tuna
2 teaspoons crushed pepper
1 small onion
1 teaspoon olive oil

Steps:

  • puree cooked garbanzo beans (the three cups indicated should be already cooked/canned) in a blender -- add water if necessary to get the blender to work.
  • chop onions and fry in olive oil.
  • add pureed beans, salt, crushed pepper, and tuna to fried onions. add water until the mixture is of sauce consistency and simmer 10 minutes.
  • boil pasta as directed on package and drain -- add to sauce mixture.

I discovered this when I didn't have any Dijonnaisse on hand so I was planning on putting half mustard and half mayo but after I just put the mustard in, I realized it tasted just as good. I eat this all the time now.

1 (12 ounce) can light chunk tuna in water
1/2 onion
black pepper
2 tablespoons yellow mustard
3 tablespoons valasic no-sugar-added relish

Steps:

  • Put 1/2 an onion in the food processor.
  • Add about 2-3 tablespoons of mustard.
  • Add relish to taste.
  • Empty can of tuna
  • Process for about 2 minutes or until completly combined.
  • Sprinkle pepper and spread eat it with bread or use it as a dip.
