PLUM & ALMOND PUDDING
British plums are one of the great late-summer treats. Enjoy them warm from the oven in this comforting pudding

Steps:
- Heat oven to 180C/160C fan/gas 4. Toss the plums, cinnamon, lemon zest and brandy, if using, together in a bowl, then leave to macerate while you make the batter.
- Cream the butter and sugar with an electric whisk until pale and fluffy, add the eggs one at a time, then tip in the flour and ground almonds. Mix until completely combined.
- Tip the fruit into a buttered shallow baking dish, spoon over the cake batter, then sprinkle over the flaked almonds. Bake for 35-40 mins until browned and cooked through. Test if the pudding is ready by inserting a skewer. If it comes out clean, the pudding is ready; if there is some batter on the skewer, then give it a few mins more. Remove from the oven and serve warm with clotted cream.

Since this recipe was given to me many years ago by the proprietor of the Sign of the Angel in Lacock, it has become really popular with readers, as I know from their many letters.

- Place the apples in a saucepan with the brown sugar and approximately 2 tablespoons of water, simmer gently until soft, and then arrange them in the bottom of the prepared baking dish. In a mixing bowl, cream the butter and caster sugar until pale and fluffy and then beat in the eggs a little at a time. When all the egg is in, carefully and lightly fold in the ground almonds. Now spread this mixture over the apples, and even out the surface with the back of a tablespoon. Then bake on a highish shelf in the oven for exactly 1 hour. This pudding is equally good served warm or cold - either way, it's nice with some chilled pouring cream. Once cooled, it will keep in the fridge for 3 or 4 days.
PURIN: A JAPANESE CUSTARD PUDDING
Here's a recipe to make purin, a flan-like cold custard dessert in Japan. It's a very basic silky, creamy, rich, and smooth dessert served chilled.

Steps:
- Gather the ingredients.
- Butter individual pudding molds.
- Heat 2 tablespoons of water in a saucepan then add 6 tablespoons of sugar, and simmer until the sauce is browned. Carefully add 1 tablespoon of warm water to thin the sauce.
- Pour sauce into the molds.
- Put milk in a medium pan, and heat to about 140 F.
- Dissolve 2/3 cup sugar in the milk, and add vanilla extract.
- Remove from heat.
- Lightly beat eggs in a bowl.
- Gradually add warm milk to the egg mixture.
- Run the egg mixture through a strainer.
- Scoop out some bubbles from the surface of the strained egg mixture.
- Pour the remaining egg mixture over the sauce in the molds.
- Place the pudding molds in a steamer, and steam on low heat for about 15 to 20 minutes or until cooked through.
- Turn off the heat and let them cool.
- Remove pudding from the molds and serve on plates.

A recipe that was handed down through the years from Mother to Daughter. It's just a simple and easy 'Apple Pudding' recipe. When you are in a hurry and have very few staples on hand, you may want to give this dessert a try. That is the basic recipe and good for the times of depression when extras are scarce. Serve either hot or cold. It is good plain but better with milk, cream, whipped cream or lemon sauce.

- Preheat the oven to 350 degrees.
- In an electric mixer, beat the egg yolks until foamy. Add the sugar and mix until the egg yolks are very pale and fluffy. Add the almonds and the extract, if using, and mix until well blended.
- In another bowl, beat the egg whites until stiff peaks form.
- Fold the egg whites into the yolk mixture and turn into an 8-inch souffle dish or springform pan that has been greased and then floured with matzoh meal. Bake for 30 to 35 minutes, or until golden. The pudding will rise slightly during cooking; it will settle as it cools. Let cool slightly.
- Top with fresh strawberries or strawberry puree and serve.

ALMOND PUDDING
This is a milk pudding that is served in India at open houses or for dessert. To keep a "skin" from forming on the top of the pudding while it is cooling, carefully place a piece of clear plastic wrap or waxed paper directly on the surface of the hot pudding. After the pudding has cooled, remove the paper and spoon the pudding into dessert dishes. Chilling time is not included in cooking or prep time.

- In a heavy 3 quart saucepan, combine the milk or light cream, rice, and cardamom. Bring to boiling. Reduce heat. Cook, uncovered over low heat, stirring occasionally about 1 hour or until the milk mixture is reduced to about 2 cups. Remove from heat.
- Stir in the sugar and chopped almonds or pistachio nuts, continue stirring till the sugar has dissolved. Cool for 30 minutes; stir pudding. Stir in the rose water, if desired.

This is a traditional french-Canadian dessert that was made during the depression era. The ingredients are simple and were cheap and it is one of those staple desserts in french-canadian homes. I got this recipe online a while back. I did a search for it when I was craving this dessert I had when I was young. I tried it and it tatsted just as I remembered it. Delicious and sweet as with all french-canadian desserts.

- In a bowl sift flour and baking powder together.
- In another bowl, cream butter and sugar and add vanilla.
- then slowly add the milk and flour mixture in alternating 1/4 cup increments until all together and smooth.
- Spread in a buttered baking dish.
- For the sauce: In a sauce pan, mix all the sauce ingredients together and bring to a boil.
- Boil for a few seconds and then pour over the cake batter (do not mix).
