CHERRY ALMOND BARS
In between a pie bar and a crumb bar, these cherry almond bars have a delicious buttery almond base and are bursting with fresh cherries.

- Preheat the oven to 375F degrees. Grease an 8x8 inch square pan.
- In a medium mixing bowl, whisk together the flour, ground almonds, 1/2 cup sugar, baking powder and salt. In a small bowl whisk together the egg, vanilla and almond extract. Then, using a pastry cutter or fork, blend the cold butter and egg mixture in with your dry ingredients.
- Press 2/3s to 3/4s of the mixture into the bottom of your prepared pan.
- Toss your cherries with the granulated sugar, cornstarch and water. Then sprinkle evenly over the base layer, then crumble the remaining dough over the cherries. Optionally, sprinkle additional tablespoon of sugar on top of your bars.
- Bake in your pre-heated oven for 35-40 minutes. The top crumbs should be just lightly browning.
- Allow to cool completely, then cut into 9 large squares or 16 bite-sized.

- Heat oven to 375°F. Make pie crusts as directed on box for Two-Crust Pie, using 9-inch glass pie plate. Shape almond paste into a disk. On lightly floured surface, roll or pat into 8-inch circle. Place in bottom of pie crust.
- In large bowl, mix pears, 2 tablespoons sugar, the flour, apple pie spice and lemon juice; mix well. Spoon over almond paste in crust. Place top crust over pears. Seal edges and flute. Cut slits in crust to vent steam. Brush top crust with egg. Sprinkle with almonds and 1 teaspoon sugar.
- Bake 55 to 65 minutes or until pears are tender and crust is deep golden brown. Cool at least 1 hour before serving.

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, stir together the flour, 1/2 cup sugar and salt. Make a well in the center and add the egg yolks and butter. Work into the dry ingredients with your hands until well blended. Press dough into an unprepared 9x9 inch baking pan.
- Bake 15 to 20 minutes in the preheated oven. When the crust cools a little bit, spread with the jam or jelly, and set aside.
- In a clean bowl, whip the egg whites until they reach soft peaks. Gradually add the remaining 1/4 cup of sugar, then the almond extract. Continue to whip until the whites hold stiff peaks and sugar is dissolved. Fold in the coconut and spread the mixture over the jam layer. Sprinkle the almonds over the top, and return to the oven.
- Bake for 8 to 10 more minutes until the top is lightly browned. Cool slightly and cut into bars.

- Preheat oven to 350 degrees F (175 degrees C). Spread almonds onto a baking sheet.
- Bake in the preheated oven until almonds start to turn golden brown and become fragrant, 10 to 15 minutes.

- Heat oven to 375°F.
- Combine graham crumbs, 1/3 cup sugar and butter; press onto bottom and up side of 9-inch pie plate. Bake 10 min. Remove from oven; reduce oven temperature to 350°F.
- Combine 1/2 cup of the remaining sugar and cornstarch in small bowl. Stir in 1/2 cup milk. Beat egg yolks until blended; stir into cornstarch mixture. Bring remaining milk just to boil in medium saucepan on medium heat. Gradually add cornstarch mixture, mixing well after each addition. Cook on low heat 5 min. or until thickened, stirring frequently. Remove from heat. Stir in almond extract. Pour into crust.
- Beat egg whites in large bowl with mixer on high speed until foamy. Gradually add remaining sugar, beating constantly until stiff peaks form. Spread over pie filling, sealing egg white mixture to edge of crust.
- Bake 12 to 15 min. or until lightly browned. Cool completely. Refrigerate 3 hours.

- In a small heavy saucepan, melt butter over low heat until golden brown. Cool. In a large bowl, beat eggs blended. Add the sugar, corn syrup, honey, extracts, salt and melted butter. - Prepare the Crust:.
- Preheat the oven to 375°F.
- Place the sifted flour, salt and butter in a bowl and use your fingertips to rub the butter into the flour until the mixture has an even, granular texture. Add the powdered sugar and blend. Sprinkle with the water, mix gently and gather together to form a ball. Cover in plastic wrap and refrigerate for 15 minutes.
- Butter a 20.5 cm (8 in.) tart pan with a removable bottom.
- Roll out the dough to a thickness of .5cm and place it over the pan without stretching. Press well into the bottom and up the sides, then roll the rolling pin firmly over the top to trim the excess. Prick with a fork and bake for 10 minutes.
- Prepare the filling:.
- In a saucepan over medium- low heat, make a roux by melting the butter and stirring in the flour with a wooden spoon. In a separate saucepan, bring the milk, salt and sugar to a boil.
- Add the hot milk to the roux a little at a time, whisking constantly until the mixture is smooth. Continue whisking and cooking over low heat for 5 minutes, until thick.
- Remove from heat and add the egg yolks and powdered almonds, whisking briskly. Do not allow the filling to boil after the egg yolks are added, or it will separate.
- Pour the filling into the pre-cooked pie shell. Sprinkle the sliced almonds over the top and bake for 20 minutes, or until the top is nicely browned. Cool completely and sprinkle with powdered sugar, if desired.

- Preheat oven to 350F with rack on lower middle position. Grease a 9x13 pan and set aside.
- Make the Crust: In a large bowl, combine the butter and powdered sugar; using electric (or stand) mixer fitted with paddle attachment, mix together on medium high speed until light and fluffy, 3-4min. Gently add flour and mix on low speed just until combined. Mixture will be crumbly, so use hands to form a dough ball. Press evenly into prepared glass pan to form bottom crust (I use bottom of a flat glass cup to press down evenly.) Bake 18 minutes or until lightly browned and set. Remove from oven, but leave oven on.
- While the crust is baking, make Filling: In a large bowl, combine eggs, very-soft cream cheese, and sugar. Whisk together until creamy and no lumps remain (it really helps if your cream cheese is quite soft to start with.) Add almond extract and mix to combine. Evenly pour the filling over crust, using rubber spatula to scrape all filling. Bake 15-20 min or until set. Let dessert cool completely on wire rack.
- Frost the Bars: In a bowl, combine all frosting ingredients. Whisk until smooth and no more lumps. Evenly frost over cooled dessert bars (be sure bars have cooled completely before frosting.) Cover, chill, and serve with almond slices on top.
ALMOND BARS
This Almond Bars recipe is a sweet treat that has a shortbread-like texture and a delicious almond glaze on top! You'll want to make extra and freeze them for later!

- Preheat oven to 325 degrees F. Generously butter (or use baking spray) on a half sheet pan (approximatedly 18"x13"). Set aside.
- In a medium bowl, combine flour, baking powder, and salt. Set aside.
- In a mixing bowl, beat butter and sugar until light and fluffy, about 3-4 minutes. Add in eggs and almond extract. Beat until combined. Slowly add in flour mixture. Mixing until well blended.
- Press this dough into the bottom of your prepared baking dish. Use your fingers or a pastry roller to smooth the top of the dough.
- Using a pastry brush, brush the milk to the top of the dough (you may not need to use all of it). Sprinkle with sliced almonds, pressing them lightly into the dough.
- Bake for 20-22 minutes until done. You don't want to brown these bars.
- Cool for about 5 minutes, then cut them with a knife into bars. If they are too soft to cut, allow to cool a little bit more. Carefully remove them to a wire rack to continue cooling.
- Once cooled, you can make your glaze by whisking the sugar with the almond extract and milk. Drizzle over the bars and allow to set.
