¼ cup sliced almonds

1 teaspoon chopped fresh thyme
½ teaspoon salt, or to taste

Steps:

  • Preheat oven to 425 degrees.
  • Toss beans, garlic, almonds, oil, thyme and salt in a large bowl. Spread out on a large rimmed baking sheet and roast, stirring the beans once or twice until the beans are softened and blistered in spots and the almonds are browning, 15 to 17 minutes.

  • Place green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 10 minutes; drain.
  • Meanwhile, melt butter in a skillet over medium heat. Saute almonds until lightly browned. Season with lemon pepper. Stir in green beans, and toss to coat.

12 oz raw green beans (ends trimmed)
1 tablespoon olive oil
Sea salt and cracked black pepper (to taste)
2 garlic cloves (minced)
2 tablespoons sliced almonds

Steps:

  • Preheat the oven to 425 degrees.
  • Place the green beans in a large bowl and drizzle with olive oil. Stir to coat, making sure oil is evenly distributed on the beans. Sprinkle with salt and pepper.
  • Spread the green beans across a baking sheet in a single layer. Place the baking sheet in the oven for 15 minutes. Remove the beans from the oven and sprinkle the minced garlic and sliced almonds over top of the green beans. Stir to mix together and then spread to a single layer again. Place the baking sheet back in the oven and roast for an additional 5 minutes until green beans are cooked through and the garlic and almonds are lightly golden.

3 lbs raw green beans (fresh or frozen)
1 1/2 sticks salted butter
or use unsalted butter and add 3/4 tsp salt when you begin to melt the butter in the skillet
1 1/2 cups sliced almonds
Grated Parmesan to taste - optional

Steps:

  • Rinse green beans. Snip the bases off on all the green beans.
  • Fill a large soup pot 2/3 with water and bring to a rapid boil. Add 2 Tbsp salt. Add beans and boil 6 to 7 minutes, until crisp-tender.
  • Drain beans immediately and rinse them with cold water to stop the cooking process, then place them in your serving dish.
  • In a large skillet, over medium heat, melt 1 stick of butter. Add shaved almonds to the skillet and stir them until they are golden. Watch them closely once they start to golden because they can burn quickly beyond this point.
  • Melt in the rest of the butter (1/2 stick), stir and pour the buttery almonds evenly over the green beans.
  • Use tongs to lightly toss the beans with the buttery almonds, but not too much because the almonds tend to escape to the bottom of the dish.

1 pound green beans, trimmed
1 tablespoon butter
1/2 lemon, juiced
Salt and pepper

Steps:

  • In a medium pan, toast almonds over medium heat. Remove from pan and add 1/2 inch water. Bring water to a boil, add beans and cover pan. Reduce heat. Cook beans 4 or 5 minutes until just tender yet still green. Drain beans and return pan to stovetop. Melt butter over moderate heat. Add lemon juice to butter (juice lemon half right side up to keep seeds with lemon, rather than in your beans). Add beans to lemon butter and coat evenly. Season with salt and pepper, to taste. Transfer green beans to dinner plates or serving plate and top with almonds.

7 tablespoons butter (can use a bit less)
1 cup almonds, coarsley chopped (or sliced)
1 tablespoon minced lemon peel (use the yellow part only, can use a bit more lemon peel)
1/3 cup finely chopped parsley
salt and pepper

Steps:

  • Cook the green beans in a pot with salted water until JUST tender (about 5 minutes, you can steam the also) drain and transfer to a large bowl of ice water to cool; drain and pat dry with a paper towel (this can be done a day ahead).
  • Melt butter in a skillet over medium heat.
  • Add in chopped almonds, and toss with butter; saute the nuts until they are lightly browned and crisp (about 2-3 minutes).
  • Add in beans, and toss to combine with the nuts until heated through (about 3-4 minutes).
  • Mix in the lemon peel; cook 1 minute.
  • Mix in the chopped parsley.
  • Season with salt and pepper, and transfer to a bowl.
  • Delicious!

1/4 cup slivered almonds
1 pound green beans, (trimmed)
3 cloves garlic, (sliced)
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons lemon juice ((approximately 1/2 medium lemon))
1/4 cup freshly grated parmesan, (or to taste)
Optional: 1/4 cup basil, (sliced thin)

Steps:

  • Place an oven rack on the center shelf and preheat the oven to 350 degrees F. Line a baking sheet with foil or parchment.
  • Toast the almonds until fragrant and golden, approximately 7-10 minutes, shaking the pan every 3-4 minutes to ensure even cooking. Remove the almonds from the oven, and increase the temperature to 450 degrees F.
  • Place the green beans and garlic on the baking sheet. Drizzle with olive oil and toss to coat, then season with the salt and pepper. Spread the ingredients out evenly, and roast for approximately 25 minutes, using a spatula to stir the vegetables halfway through. The green beans are ready when they're caramelized and crunchy on the outside, but still slightly toothsome when you bite into them.
  • Remove from the oven and top with lemon juice, almonds, parmesan, and basil, if using. Serve immediately.
