2 1/2 ts Orange juice
1/4 c All-purpose flour
1/2 c Granulated sugar
1 ts orange zest Grated
1 ts Baking soda
1 c almonds Sliced
1 Stick butter or margarine
2/3 c Orange juice
1 c light brown sugar Firmly packed
1 ts orange zest Grated
1 ts Baking Powder
3 tb Butter or Margarine Melted
1/2 ts Vanilla extract
2 c All-purpose flour

Steps:

  • 1. Preheat the oven to 350 degrees. Grease a 9- or 10-inch tube pan. 2. To prepare the streusel, in a medium bowl, mix together brown sugar, nuts, and flour. Stir in the butter and zest. 3. To prepare cake, in a large bowl, using an electric mixer set on medium speed, beat together butter and sugar until fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in zest and vanilla. 4. In a large bowl, mix together the flour, baking powder, and baking soda. 5. Reduce mixer speed to low. Alternately beat flour mixture and orange juice into egg mixture, beginning and ending with flour. 6. Spoon half of the batter into prepared pan. Sprinkle with half of the streusel. Top with the remaining batter and streusel. 7. Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes. Transfer pan to a wire rack to cool completely. 8. To prepare the glaze, in a cup, stir together confectioners sugar and orange juice until smooth. 9. Turn the cake out onto a serving plate, placing it right-side up. Drizzle with the glaze. Found this on landolakes.com and made it the same day, yesterday, and it is just awesome! I can't think of anything nicer as a coffee cake - it has the almonds baked throughout and it's just too marvelous for words. You can use Amaretto instead of almond extract in glaze and cake.

1 cup cake flour
1 teaspoon baking powder

1 cup unsalted butter or 1 cup unsalted margarine, softened
1/3 cup almond paste
5 eggs
1 teaspoon almond extract

1/4 cup milk
1 cup powdered sugar
1/2 teaspoon almond extract
1 -2 tablespoon milk
2 tablespoons sliced almonds

Steps:

  • Preheat oven to 360°F.
  • Butter and flour a 10" angel food cake(tube) pan or 12-cup Bundt pan.
  • Combine all filling ingredients in small bowl.
  • Beat at low speed until well mixed; set aside.
  • Combine flour, cake flour and baking powder in small bowl.
  • Combine sugar, 1 cup butter and almond paste in large bowl.
  • Beat at medium speed until creamy.
  • Continue beating, adding eggs one at a time, until well mixed.
  • Add almond extract and vanilla.
  • Reduce speed to low.
  • Beat gradually adding combined flour, cake flour and baking powder alternately with milk, until well mixed.
  • Pour half of batter into prepared pan.
  • Sprinkle filling over batter so filling does not touch sides of pan.
  • Spoon remaining batter over filling.
  • Bake 45-60 minutes or until toothpick inserted in center comes out clean.
  • Cool 15 minutes; remove from pan.
  • Meanwhile, combine powdered sugar, almond extract and enough milk for desired glazing consistency in small bowl.
  • Drizzle over warm cake; sprinkle with sliced almonds.
  • Cool completely.

This is a fabulous coffee cake! It has a crumbly sliced almond and brown sugar streusel topping plus a delicious glaze and a hint of orange throughout the cake. For variety, substitute a different type of nut in the streusel mixture. You can also use a Bundt cake pan if you don't have a tube pan. Absolutely irresistible!

1 cup whole almonds
¼ cup butter, softened
¼ cup brown sugar
¼ cup all-purpose flour

1 cup butter, at room temperature
2 cups white sugar
2 teaspoons vanilla extract

3 very ripe bananas, mashed
1 cup plain yogurt
½ cup confectioners' sugar
2 tablespoons milk

Steps:

  • Heat a heavy skillet over medium heat. Add almonds and toast slowly, watching carefully and stirring constantly until browned, 3 to 5 minutes. Remove from heat and allow to cool, about 5 minutes. Chop into coarse pieces.
  • Combine butter, brown sugar, flour, white sugar, and cinnamon for streusel in a bowl. Blend using a pastry blender. Stir in almonds gently and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease and flour a fluted tube pan (such as Bundt®).
  • Mix flour, baking soda, and salt together in a bowl and set aside.
  • Beat butter in a bowl using an electric mixer until fluffy. Add sugar and whip until fluffy. Add vanilla extract and mix well. Add eggs, 1 at a time, beating well after each addition. Mix bananas into batter on low speed until just blended. Alternate adding flour mixture and yogurt until batter is combined.
  • Place 1/4 cup of batter into the prepared cake pan. Layer with 1/2 of the streusel mixture. Add another 1/4 cup of batter and top with remaining streusel. Add remaining batter; pan will be very full, but should not overflow.
  • Bake in the preheated oven until a wooden skewer or long spaghetti noodle inserted into the center of the cake comes out very clean, 65 to 75 minutes.
  • Remove from the oven and let cool on a wire rack for 10 minutes. Invert the pan onto the rack to remove the cake.
  • While cake begins to cool, mix confectioners' sugar, milk, vanilla extract, and salt until icing is well blended. Poke the top and sides of the cake gently with a fork while still warm. Drizzle icing over cake. Serve warm or allow to cool completely before serving.

125g ground almonds
125g light muscovado sugar
350g gooseberries , fresh or frozen

  • Heat oven to 190C/170C fan/gas 5. Line a 27 x 18cm baking tin with baking parchment.
  • Rub the butter into the flour, almonds and sugar to make crumbs, then firmly press two-thirds onto the base and sides of the tin. Toss the gooseberries with the caster sugar, then scatter over the top.

  • For Streusel:
  • Mix first 5 ingredients in small bowl. Add butter and rub in with fingertips until well blended. Set aside.
  • For Cake:

  • For Glaze:
  • Stir powdered sugar, whipping cream and instant espresso powder in small bowl until well blended. Drizzle glaze over cake, allowing excess to run down sides. Sprinkle cake with sliced almonds.

⅓ cup Easy Homemade Marzipan or Almond Paste
1 large egg
½ cup buttermilk
1 teaspoon pure vanilla extract

½ teaspoon baking soda

2 cups fresh cherries, pitted and halved or canned cherries (drain first) or frozen cherries (thaw and drain first) *Fresh cherries strongly recommended as canned and frozen emit more liquid and can result in a soggy cake unless super thoroughly drained first.
For the Streusel Topping:
½ cup all-purpose unbleached flour
½ cup sugar
⅓ cup Easy Homemade Marzipan or Almond Paste (see recipe link above), crumbled
4 tablespoons butter, cut into small pieces
Powdered sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 inch springform.
  • To make the streusel topping: Combine the flour and sugar in a medium bowl. Add the almond paste and butter and use your fingers to combine the mixture until it resembles sandy clumps. Set aside.
  • Using an electric mixer, beat the butter and sugar together for several minutes until light and fluffy. Add the almond paste and vanilla extract and beat until combined. Add the egg and beat until combined.
  • In another bowl, combine the flour, baking powder, baking soda and salt. Set aside.
  • Using a rubber spatula, stir in half of the buttermilk followed by half of the flour mixture. Fold in the remaining buttermilk followed by the rest of the flour mixture. Be careful not to over-stir.
  • Spoon the mixture into the greased springform, smoothing the top. Place the cherries on the top, then sprinkle the streusel topping over it.
  • Bake on the middle rack for 45-55 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cake sit in the springform for 10 minutes before removing, then allow to cool completely on a wire rack. Once cooled, sift powdered sugar over the top. Serve plain, with whipped or ice cream.
  • This cake tastes even better the next day.
