EASY RUSTIC POPPY SEED SHORTBREAD COOKIES



Easy Rustic Poppy Seed Shortbread Cookies image

You can bake these cookies in a 9-inch cake pan, a 9-inch springform or tart pan. If you don't have any of those, move up to a 10-inch (8-inch will make the cookies too thick). If baked in a 10-inch pan, cookies will be thinner, so cooking time will be less. Watch closely!

Number Of Ingredients 6

1 cup good-quality unsalted butter (at room temperature)
3/4 cup icing/confectioners sugar
1 1/2 tsp. vanilla extract
2 cups all-purpose flour
1 1/2 Tbsp. poppy seeds
1/2 tsp. salt (reduce to 1/4 tsp. if you used salted butter)

Steps:

  • Prepare a 9-inch baking pan by greasing lightly with butter and lining the bottom with a round of parchment paper. (*Note: if using a pan without a removable bottom, I find it handy to leave a little 2-inch "tab" on the edge of the round of parchment that's going on the bottom of the pan, to make removal from the pan even easier!). Set aside.
  • Using an electric mixer, beat the butter and sugar until creamy and smooth, about two minutes. Add the vanilla and beat well.
  • In a separate medium bowl, combine the flour, poppy seeds, and salt. Add the dry ingredients to the butter mixture and mix until mixture is moistened and comes together into a rough dough.
  • Press dough evenly into prepared pan, then poke the dough with a fork 8-10 times, evenly around the dough. Cover with plastic wrap and place in the refrigerator for at least 2 hours to chill.
  • Preheat oven to 300° F. Remove pan from refrigerator and place directly into pre-heated oven. Bake until set and firm, about 40 minutes. (*Note: shortbread should look dry on top. Don't judge by the edges, as they will begin to brown quite early and don't necessarily reflect the done-ness of the rest of the pan. Look for the top of the shortbread to begin to turn ever-so-slightly golden).
  • Remove from oven and leaving shortbread in pan and using a sharp knife, immediately cut shortbread in to 12 wedges. Leave to cool completely in the pan, then remove shortbread from pan.

1 cup vegetable oil
1 1/2 teaspoons almond extract

1 1/2 teaspoons butter flavoring or 1 1/2 teaspoons additional vanilla extract
3 cups all-purpose flour
4 1/2 teaspoons poppy seeds
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/3 cup butter or 1/3 cup margarine, melted
3 cups confectioners' sugar
3 tablespoons milk

Steps:

  • In a mixing bowl, beat the eggs, sugar, milk, oil, extracts and butter flavoring.
  • Combine the flour, poppy seeds, baking powder and salt; add to the egg mixture and mix just until combined.
  • Spread into a greased 15 x 10 x 1" baking pan.
  • Bake at 350° for 20 minutes or until a toothpick inserted near the center comes out clean.
  • Cool on a wire rack.
  • In a mixing bowl, combine the frosting ingredients; beat until smooth.
  • Frost bars.

Sweet, nutty poppyseeds. Crunchy almondy goodness. Buttery shortbread. This recipe makes a small-ish batch (about 15 cookies), so be sure to double it if you're feeding a crowd.

Cookies
1/2 cup 1 stick unsalted butter, room temperature
1/2 cup confectioners' sugar
1/4 teaspoon salt
1/4 teaspoon almond extract
2 teaspoons poppyseeds + 1/4 cup for rolling
1 cup all-purpose flour
Topping
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
Small pinch salt
1/2 cup sliced almonds

Steps:

  • With an electric stand or hand mixer on medium speed, beat together the butter, sugar, almond extract, and salt until smooth.
  • Turn mixer to low and add the flour and 2 teaspoons poppyseeds, mixing just until the dough forms.
  • Place the dough on a piece of waxed or parchment paper sprinkled with a little flour. Put a little flour on your hands and gently roll the dough into a 1 1/2 inch diameter log.
  • Sprinkle the 1/4 cup poppyseeds on the paper and roll the log in the poppyseeds, pressing gently, until the log is well-coated with the seeds.
  • Wrap the log tightly in the paper and twist the ends.
  • Refrigerate until firm, about an hour.
  • Preheat oven to 350 degrees.
  • Unwrap the log, and slice with a serrated knife about 3/8 inch thick. If the dough is crumbly, wait a few minutes for it to soften slightly and try again.
  • Place slices about 1 inch apart on your baking sheet and bake until lightly golden around the edges, about 15 minutes.
  • Remove from oven and let sit for about five minutes, then move the cookies to a wire rack to cool completely.
  • Make the glaze. In a small bowl, whisk together the powdered sugar, milk, vanilla extract, almond extract, and salt until smooth.
  • Carefully dip the tops of each cookie in the glaze, then set back on the wire rack.
  • Grab a handful of almonds and, using your hands, crumble the sliced almonds directly over the tops of the cookies.
  • Allow glaze and almonds to set, about 30 minutes. Gently shake any excess almonds off the cookies, and serve.

1 cup plus 2 tablespoons canola oil
3 eggs
3 tablespoons poppy seeds
1-1/2 teaspoons lemon juice
1-1/2 teaspoons almond extract
1-1/2 teaspoons vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon salt
1-1/2 cups 2% milk
GLAZE:
3/4 cup confectioners' sugar
1/4 cup orange juice
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Steps:

  • In a large bowl, combine the sugar, oil, eggs, poppy seeds, lemon juice and extracts; beat until well blended. Combine the flour, baking powder and salt; add to sugar mixture alternately with milk, beating just until moistened. , Pour into two greased 8x4-in. loaf pans. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean., Combine glaze ingredients until smooth; drizzle over warm loaves. Cool 10 minutes before removing from pans to wire racks.

1 cup sugar
1/3 cup margarine, softened (stick)
2 tablespoons light corn syrup
1 1/2 teaspoons almond extract
1 egg
1 egg white
2 1/4 cups all-purpose flour
2 tablespoons poppy seeds
1 teaspoon baking soda
vegetable oil cooking spray

Steps:

  • Cream sugar and margarine at medium speed of a mixer until fluffy (about 3 minutes).
  • Add corn syrup, extract, egg, and egg white; beat well.
  • Combine flour, poppy seeds, and baking soda; stir.
  • Add to creamed mixture, beating well.
  • Drop dough by rounded tablespoons onto baking sheets coated with cooking spray.
  • Bake at 350° for 10 minutes or until lightly browned; let cool on pans 1 minute.
  • Remove from pans, and let cool completely on wire racks.
