3/4 unsalted butter, softened
1 cup sugar
1 egg
1 tablespoon vanilla
1/2 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup coarsely chopped almonds
1/4 cup whole unpeeled almonds
1/4 cup cocoa powder
1/4 cup confectioners sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream butter and sugar together until fluffy. Beat in the egg, vanilla, and almond extract. Sift the flour over the top, add the salt and the chopped almonds and fold to combine.
  • Pull off little pieces of the dough and roll them into balls about 1-inch in diameter, enclosing a whole almond in the center of each one. Place on an ungreased baking sheet and bake on the center rack of the oven for 15 to 20 minutes, until light brown. Transfer to racks to cool slightly. When cool enough to handle, roll 1/2 the cookies in the cocoa powder, and the remaining 1/2 in the confectioners' sugar. Serve warm or return to the rack to cool.

2 cups butter, softened
6 ounces cream cheese, softened
2 cups sugar
2 large egg yolks
1 teaspoon almond extract
1/2 teaspoon vanilla extract
4-1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
FILLING:
1 can (8 ounces) almond paste
1/4 cup sugar
1 large egg white
1/2 teaspoon vanilla extract
Confectioners' sugar

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolks and extracts. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well., Divide dough into fourths; cover and refrigerate for 2 hours or until easy to handle. In a small bowl, combine almond paste, sugar, egg white and vanilla until blended., Roll one portion of dough to 3/8-in. thickness. Working quickly, place scant teaspoonfuls of filling 2-1/2 in. apart over half of dough. Fold dough over; press down around filling to seal. Cut out cookies using a scalloped round 2-1/4-in. cutter. Reroll scraps if desired; repeat with remaining dough and filling., Bake at 350° for 10-14 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks. Sprinkle with confectioners' sugar.

1 tablespoon milk
1 egg yolk

Steps:

  • Preheat the oven to 350 F. Cream sugar and butter in a large bowl. Mix in egg yolk, milk and almond extract. Blend in the flour a little at a time, until well combined and chunky. Cover an place in refrigerator to cool. In a mixing bowl combine all filling ingredients. Beat until well combined and the mixture comes together. Using a medium cookie scoop, scoop balls of the cookie dough. Roll and flatten the balls in the palm of your hand. Take a scant tablespoon of filling (or 5 oz) roll in a ball and place in the middle of the cookie dough. Wrap the cookie dough around the filling and roll until even. Place ball on parchment lined sheet pan and press flat with the palm of your hand. If you want clean edges use a round cookie cutter to clean the edges. Repeat with the remaining dough. Bake the cookies for 15-20 minutes. Keep an eye on the cookies you don't want them to brown. Let cook on cookie sheet, dust with powdered sugar. Serve.
