CRANBERRY PEAR ALMOND CHUTNEY
A gorgeously coloured Cranberry Pear Almond Chutney that is perfect with ham, turkey or a warmed brie cheese.

- Add raisins to the hot water and let sit for 20 min. to plump, then drain reserving a 1/2 cup of liquid. Set raisins aside.
- In a large pot add the reserved water along with the sugars and vinegar. Cook, stirring slowly to dissolve sugar and then bring up to a boil. Cook syrup for about 15 min. without stirring. Add the orange zest, orange juice, ginger, and cranberries. Bring back up to a boil and cook for 10 min. until mixture starts to thicken enough to mound onto a spoon. The cranberries should have popped for the most part.
- Add in the pears, almonds, raisins, cinnamon and nutmeg. Boil for an additional minute. Soak lids in hot water for 5 min. Ladle into sterilized jars, leaving a 1/2" head space. Wipe down rims with a clean cloth. Apply the lids and close with the rims to finger tip tight. Process in a water bath. Cover the jars with at least 1-inch of water. Bring to a rolling boil and process for 10 minutes. Then turn off heat and let the jars sit in the hot water for 5 minutes. Remove to a towel lined counter and let rest until lids have sealed and the jars are cooled. If any don't seal place in the fridge and use within 3 weeks.
ALMOND PEAR CHUTNEY
My sweet, chunky chutney-flavored with orange, almond and ginger-is great with chicken, turkey or pork. You can prepare it a couple of days in advance and use it to dress up a plain weekday supper.

- In a large saucepan, combine the pears, orange, water and lemon juice. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, for 10 minutes. Stir in sugar and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until thickened, stirring occasionally. , Remove from the heat; stir in almonds and ginger. Serve warm or cold. May be refrigerated for up to 1 week.

PEAR CHUTNEY RECIPE

Spicy pear chutney is one such recipe that is religiously followed by many families during summer when ripe and juicy pears available in abundance. Apart from pear, sugar and vinegar, this recipe also uses apple, ginger, cinnamon and clove for complex sweet, sour and spicier flavor.

- Directions:Peel, core and chop pear into small 1/2-inch pieces. Peel apple, remove stems and cores and finely chop into small pieces. (You can use red delicious apple or granny smith apple according to your choice.)Heat 1 teaspoon oil in a pan. Sauté onion until it turns light brown.Add chopped apple, chopped pear, raisins, ginger, sugar, ground cinnamon, ground cloves, cayenne pepper, cider vinegar and salt and cook over medium heat. Stir to combine all ingredients. When mixture starts to boil, reduce to simmer.Simmer until mixture thickens or for around 40 minutes. Stir in between occasionally. If mixture is still runny after 40 minutes, then simmer it for 10-15 minutes more.Turn off heat and let it cool at room temperature. Store prepared pear apple chutney in refrigerator and consume within 2 weeks.

- Put the sugar, cider vinegar, perry, star anise, cumin, red onions and ginger in a large saucepan and bring to the boil.
- Add the pears and chillies and simmer for 40 mins until the liquid is syrupy and the pears are just cooked. Stir in the sultanas, remove from the heat and leave to cool, then spoon into sterilised jars.

GINGER PEAR CHUTNEY
Great way to use up pears, including recent windfalls as they've got to be peeled and chopped anyway. Nice with pork or as a condiment with curry. Very gingery. It gets better as it ages.

- In large preserving kettle or dutch oven, combine all ingredients and bring to a boil, stirring frequently.
- Reduce heat and simmer, uncovered, for about 1 1/2 hours, continuing to stir occasionally.
- Remove from heat and pour into hot, sterilized jars, leaving 1/8 inch headspace. Add lids and rings and process jars in a boiling water bath in a canner for 15 minutes. Take the canner off the heat and let water stop boiling before removing jars. Carefully remove jars and let sit. As they cool, the jars will seal themselves with a"pop". Label, and store in cool, dry, dark place.
- To prepare the jars, I first wash them in the dishwasher, or in the sink with very hot, soapy water, then rinse them well and put them in a warm oven, taking the jars out one or two at a time when filling them.
- I soak the lids in very hot water and put them immediately from the hot water onto the filled jars, making sure the rims of the jars are clean, then add the rings (which I've also soaked in hot water) and screw them on the jars just finger tight.
