Homemade Almond Joys with Dark Chocolate image

Rich, chocolatey and nutty with plenty of light, flaky coconut, Almond Joy candy bars are easier than you'd expect to make at home.

1 1/4 cup shredded sweetened coconut
1/4 cup sweetened condensed milk *
1/2 teaspoon vanilla
18-36 roasted almonds
2 cups dark chocolate chips (or the chocolate of your choice)
Optional: 2 tablespoons coconut oil
36 tiny cupcake liners (about 1" in size)

Steps:

  • Stir together the coconut, condensed milk and vanilla. It should be sticky and hold it's shape when pressed together.
  • Melt the chocolate (along with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at half power for about 2 minutes, stirring every 30 seconds or so.
  • Drizzle 1 teaspoon of chocolate into the bottom of each cup. Add 1 teaspoon of the coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner.
  • Top the coconut with an almond and then pour a teaspoon of chocolate on top. Chill in the refrigerator until ready to eat. Store in the refrigerator for up to a week or in the freezer for a couple of months. Enjoy!

1 package chocolate cake mix (such as Duncan Hines®)
1 cup water
3 eggs
⅓ cup vegetable oil
1 cup evaporated milk
1 cup white sugar
26 large marshmallows
1 (14 ounce) bag shredded coconut
½ cup evaporated milk
½ cup butter
½ cup white sugar
1 cup chocolate chips
½ cup whole almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch cake pan with cooking spray.
  • Combine chocolate cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on medium speed until smooth, about 2 minutes. Pour batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 26 to 31 minutes.
  • Mix 1 cup evaporated milk, 1 cup sugar, and marshmallows together in a large pot; cook and stir over medium-low heat until marshmallows are melted, about 5 minutes. Stir in coconut. Pour coconut mixture over hot cake.
  • Combine 1/2 cup evaporated milk, butter, and 1/2 cup sugar in a saucepan; bring to a boil, stirring constantly. Fold in chocolate chips and almonds. Spread over coconut layer.
  • Cool cake until coconut layer and chocolate layer are set, about 30 minutes.

3 cups milk chocolate morsels
1 (14 ounce) can sweetened condensed milk
¼ cup salted butter
½ cup chopped almonds
½ cup sweetened flaked coconut

Steps:

  • Combine milk chocolate, condensed milk, and butter in a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula, until chocolate is melted, about 5 minutes. Remove from heat.
  • Mix almonds and coconut into melted chocolate. Pour into a 9-inch pan and spread evenly. Pat down to make fudge even. Refrigerate until firm, about 1 hour. Cut into squares.

1 can (14 oz) sweetened condensed milk
12 oz. chocolate chips (about 2 cups)
1 cup shredded coconut
½ cup sliced almonds

Steps:

  • Place milk and chocolate chips in a double boiler. *(see notes) Stir until melted and smooth.
  • Remove from heat, add coconut and almonds.
  • Pour into a greased or lined 9x9 pan. Let cool. Cut into 36 squares.

for the Fudge Layer:
1 1/2 cups milk chocolate Hershey's Kisses, unwrapped
1 1/2 cups chocolate candy melts (like Wilton or Almond Bark)
1 - 14 oz can sweetened condensed milk
Coconut Layer:
1 - 14 oz bag sweetened shredded coconut
1 cup powdered sugar
1/2 cup + 1 tbsp. sweetened condensed milk
Chocolate Candy Layer:
20 whole raw almonds
1 cup chocolate candy melts (like Wilton or Almond Bark)

Steps:

  • Prepare a 9×9-inch baking dish by lining it with parchment paper and lightly spraying with non-stick cooking spray. Set aside. In a medium saucepan over low heat, stir together the Hershey's Kisses, the chocolate melting candy, and the whole can of sweetened condensed milk until melted and smooth. The mixture should start to pull away from the edges of the pan. Scrape fudge into the prepared baking dish and set aside. In a large bowl, mix together the 1/2 cup + 1 tbsp. sweetened condensed milk, the coconut, and the powdered sugar. It's best if you can use a stand mixer for this, as it really takes some "elbow grease" to mix it together thoroughly. If you choose to mix by hand, be aware, the mixture may appear dry at first, but as you continue to "work" the coconut, the consistency will improve. Spread out a piece of parchment or wax paper that is approximately the size of the 9×9-inch dish. Scrape out the coconut mixture onto the paper. Use a rubber spatula or clean hands to press the coconut into a square the size of the dish. Invert the coconut square on top of the fudge and gently press down. Spread the almonds evenly over top of the coconut layer. Microwave the remaining melting chocolate for one minute. Stir until smooth and pour as evenly as possible over the almonds. Use a rubber spatula to gently spread the chocolate in an even layer. Let fudge cool completely to set, about 4-6 hours at room temperature or an hour in the refrigerator. Cut into 1 inch squares to serve. (I found that inverting the dish onto a cutting board and cutting from the bottom, the soft layer, down to the hard chocolate layer made the cutting a little less messy.)

  • Preheat the oven at 300 degrees F.
  • Prepare the brownie mix according to package directions, using only 3 tablespoons of vegetable oil.
  • Pour the mixture into a greased 9x13" pan.
  • Spread the condensed milk on top of the mixture and sprinkle with chopped almond candy bars and toasted almonds.
  • Bake at 35 to 38 minutes.

1 1/3 cups sugar
2/3 cup sweetened condensed milk
1/4 cup butter or 1/4 cup margarine
2 cups mini marshmallows
2 pinches salt
1 (11 1/2 ounce) package chocolate chips
1/2 teaspoon vanilla extract
1 1/2 teaspoons almond extract
1 cup sweetened flaked coconut
1 cup chopped almonds
1 whole almonds, for the top

Steps:

  • Blend together in a stainless saucepan the first five ingredients.
  • Bring to a boil over medium heat, stirring constantly.
  • Boil for 4 minutes being careful not to let the mixture scorch the bottom of pan.
  • Remove from heat and add chips, coconut, vanilla and almond extract, and chopped almonds.
  • Blend thoroughly with rubber spatula.
  • Pour into a foil lined 8x8 pan.
  • Sprinkle more coconut on top and press into fudge then top with whole almonds.
  • Chill in refrigerator till firm, about 2 hours.
  • Cut into bite size pieces.

2 teaspoons vanilla extract
2 cups mini almond joy candy bars, cut into 1/2 inch pieces (16 pcs)

Steps:

  • Butter an 8" square baking pan and line with wax paper to overhang two sides by 2 inches.
  • In pan, combine chips and milk over medium heat and cook, stirring constantly until melted& smooth.
  • Remove from heat and stir in vanilla.
  • Cool 1 minute.
  • Stir in candy bars and spread mixture evenly in pan.
  • Refrigerate until firm for at least 2 hours.
  • Use wax paper to help remove from pan.
  • Peel off paper and cut into 36 squares.
