For the brownies
10 tbsp. unsalted butter (1 1/4 sticks)
1 1/4 c. sugar
3/4 c. plus 2 Tbsp. unsweetened cocoa powder
1/4 tsp. kosher salt
1 tsp. pure vanilla extract
2 large eggs
1/2 c. all-purpose flour
For the topping
2 c. sweetened shredded coconut
1/2 c. sweetened condensed milk
1/4 c. sliced almonds, toasted
1/3 c. chocolate chips, melted

Steps:

  • Preheat oven to 325°, then line an 8"-x-8" baking pan with foil, leaving overhang on the sides, and spray with cooking spray.
  • In a large microwave-safe bowl, combine butter, sugar, cocoa, and salt and heat on high power to melt, about 45 seconds. Stop to stir, then heat in 10-second bursts until mixture has melted and can be stirred smooth.
  • Add vanilla and eggs and stir vigorously until batter is thick, shiny, and well blended. Add flour and stir until just combined, then pour batter into prepared pan and spread evenly.
  • Bake until a toothpick in the center emerges slightly moist with batter, 22 to 25 minutes. (Check with a toothpick; your batch may need a few minutes longer, but do not bake longer than 30 minutes.)
  • While brownies cool, prepare coconut mixture. In a bowl, stir together shredded coconut and sweetened condensed milk, then spread the mixture evenly over cooled brownies. Sprinkle almonds over coconut.
  • Add melted chocolate to a Ziploc bag, then snip a small hole in the corner and drizzle over brownies.
  • Let set in the refrigerator at least 30 minutes before cutting into squares. (Brownies can be stored in an airtight container in the fridge up to 4 days.)

brownie batter (homemade or a box mix)
4 cups sweetened flaked coconut
14 ounces sweetened condensed milk
4 dozen almonds
chocolate almond bark

Steps:

  • Preheat your oven according to brownie recipe directions and generously spray two mini muffin pans with nonstick spray.
  • Fill cups about 1/2 full with brownie batter and bake according to directions. When brownies are done, place pans on a cooling rack and remove brownies once cooled completely.
  • In a medium bowl, combine coconut and sweetened condensed milk.
  • With clean hands, roll coconut mixture into balls and press onto tops of brownie bites.
  • Press an almond into the top of each.
  • Place brownies in the freezer to harden for about 15 minutes.
  • Melt almond bark or candy melts according to directions.
  • Remove brownies from freezer and dip the tops in the chocolate.
  • Place dipped brownies on a wax paper lined baking sheet and refrigerate until chocolate is set.

3 tablespoons vegetable oil
1 cup Eagle Brand Condensed Milk
1 (14 ounce) package miniature Almond Joy bars, coarsely chopped
1/2 cup toasted almond

Steps:

  • Prepare mix according to brownie package directions, except only use 3 tablespoons
  • of vegetable oil.
  • Pour into a greased 9 x 13" pan.
  • Pour and spread 1 cup of condensed milk.
  • Sprinkle with chopped candy bars and toasted almonds.
  • Bake at 350 for 35-38 minutes.
  • Let cool completely before cutting into 2 dozen bars.

1/3 cup milk chocolate chips (melted)
1/3 cup slivered almonds

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9 x 13 inch baking pan.
  • Melt margarine then stir in cocoa.
  • Mix sugar and eggs into the mixture.
  • Add vanilla, flour, and salt.
  • Bake 25 to 30 minutes, or until cooked through.
  • Let the brownies cool for about 40 minutes.
  • In a separate bowl, combine the coconut and sweetened condensed milk. Stir until well combined.
  • Spread the mixture over the cooled brownies.
  • Drizzle the melted chocolate over the brownies and top with slivered almonds.

4 ounces almond joy candy bars (4 whole regular sized candy bars or 8 miniature candy bars)
1/2 cup butter (I prefer butter, but original recipe called for shortening) or 1/2 cup shortening (I prefer butter, but original recipe called for shortening)
1 cup sugar
1 teaspoon vanilla
2 eggs
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup chopped almonds

Steps:

  • Heat oven to 350°F.
  • Grease 9-inch square pan.
  • In medium saucepan over low heat, melt candy bars and shortening, stirring occasionally until chocolate and shortening are melted.
  • Add sugar and vanilla; blend well.
  • Add eggs 1 at a time, beating well after each addition.
  • Stir in flour, salt and chopped almonds; mix well.
  • Spread in greased pan.
  • Bake for 25 to 30 minutes or until top springs back when touched lightly in center.
  • Cool completely; cut into bars.
