ALMOND JOY BREAD
I came up with this recipe while trying to use up buttermilk which I don't usually keep on hand...but with the way my family loved this bread, buttermilk may become a pantry staple! Its a dense, sweet bread perfect for holiday gatherings and get togethers. I hope you enjoy it.

Steps:
- Preheat the oven to 350F. Line a 9-inch loaf pan with parchment paper and set aside.
- In a small mixing bowl, combine almond flour, coconut flour, baking powder, cinnamon, and salt; mix well.
- In a separate larger bowl, combine butter, cream cheese, erythritol, and stevia, mixing until smooth. Add in the eggs, one at a time, then milk and banana extract, mixing until well combined. The mixture will look curdled, but that's alright.

- Bake the banana bread for 45-50 minutes, removing the tin foil around the 40 minute mark, to allow top to brown. Remove from the oven once the center is mostly set.
- Let the bread cool in the pan completely, before slicing.

- Pulse the shredded coconut a few times in a blender, just to make it a finer texture. (This step is optional, but I liked the results.)
- **If you aren't concerned about making this a healthier treat, then add in the 3/4 cup powdered sugar. It adds a nice sweetness and texture to the coconut layer. I had it without though and thought it tasted great!
