BREAD MACHINE ALMOND BREAD
I wanted a bread with some extra protein for breakfast, so I came up with this. This is an excellent very faintly sweet breakfast bread with an unusual but satisfyingly 'bread' texture. The crust has a great flaky/chewy consistency while remaining soft. It is dense but not heavy and the extra protein from the almond flour keeps the mid-morning munchies away. It is very good with a slice of cheese and some fruit on the side. This is not (nor was it intended to be) a gluten-free recipe; the addition of vital gluten is critical to maintain cell structure for the rise. The xanthan gum is only in there because I like the ability to slice my homemade bread and use it for sandwiches.

HONEY WHEAT BREAD
This no yeast, quick whole wheat honey bread provides a crumb which is dense & soft that is just great toasted! This recipe is really too simple not to try.

- Preheat oven to 300℉ (150ºC).
- Spray 9" x 5" (2 L) loaf pan with non-stick spray.
- In a very large mixing bowl, whisk together the whole wheat flour, baking soda and salt. Set aside.
- In a medium bowl, whisk buttermilk, honey and oil together.
- Combine this mixture to the dry ingredients and mix only until combined with a wooden spoon.
- Place batter in a pan.
- If using, sprinkle top with sunflower seeds.
- Bake for approximately 55 minutes or until done.
- Remove from the oven and let cool on a wire rack for about 10 minutes before removing bread from pan. Cool completely before slicing.

- In a large mixing bowl, combine the lukewarm water and the dry active yeast. Whisk well to dissolve the yeast, and let sit for about 5 minutes to activate the yeast.In a small saucepan, combine the almond milk, oil, and honey. Heat gently over low heat. You don't want to cook the liquids, just gently warm them and whisk to dissolve the honey. Pour the liquids into the activated yeast water, and stir to thoroughly combine.
- Add the whole wheat flour, unbleached all purpose flour and salt to the bowl. Use a wooden spoon to combine all of the ingredients until a shaggy dough forms. Pour the mixture out onto a well floured work surface. Sprinkle the dough with a bit more flour, and knead for about 3 minutes, until you get a smooth soft dough. Place the dough ball back into the bowl, and cover completely with plastic wrap. Let rise at room temperature for 1 hour.
- Spray a large 9x5" loaf pan with nonstick cooking spray. Flour your work surface again, and remove the risen dough from the bowl and place on floured surface. Sprinkle with a bit more flour, and pat the gently dough out into a rectangle. Fold the dough in 1/3s like a letter, and shape the dough into a long rectangle that will fit into the loaf pan. Place the shaped dough into the prepared pan. Spray a large piece of plastic wrap with nonstick cooking spray, and place on top of the dough, so it doesn't stick. Let rise for about 1 hour 15 minutes, or until the dough has risen about 1/2" above the edge of the loaf pan. Preheat the oven to 350 degrees F.
- Bake The bread for 40-45 minutes, until golden brown on all sides. Allow to cool completely before slicing.

- In the bowl of a stand mixer or in a large mixing bowl, combine the water, yeast and 1/2 cup of the bread flour to form a smooth batter. Cover the bowl and allow the mixture to rise for 1/2 hour.
