SICILIAN GELATO-STYLE ICE CREAM
Sicilian gelato, or ice cream made with starch (instead of eggs), makes for a perfect and versatile base for most flavours! Making it is easy and fairly "fail-safe", and the results are generally very smooth and pleasant.

Steps:
- Whisk together 200 ml (about 0.8 cup) of the cold milk with the corn starch, making sure that there are no remaining lumps. Set aside for now.
- Blend the remaining 500 ml (about 2.1 cup) of the milk/cream, the sugar, the salt and vanilla bean (with seeds scraped out and added) in a sauce pan. Warm until steaming hot (not boiling!) on medium heat.
- Blend the corn starch mixture with the rest of the ingredients in the sauce pan. While barely reaching a boil, cook and stir for about four- five minutes, or until the mixture has begun to thicken and any possible "floury" taste (from the starch) has disappeared [and don't overcook: that would reduce the thickening powers of the starch].
- Take the ice cream base from the heat and let the mixture cool down.
- Refrigerate for a couple of hours, discard the vanilla bean, and freeze according to the instructions of your ice cream machine.
- In case you have no ice cream machine, still-freeze the base in your freezer (see the link below the box!) - this base is perfect for still-freezing, by the way!
- After the churning, place the ice cream in a freezer-safe container, cover with plastic film and a lid, and store in the freezer.
SALTED CARAMEL SWIRL GELATO ICE CREAM

Steps:
- Make the custard base: Heat the milk and heavy cream in a 3-quart saucepan over medium heat, stirring occasionally, until small bubbles form and it starts to steam. This takes about 6 to 7 minutes.
- Meanwhile, in a medium bowl, combine the egg yolks and sugar. Whisk until the mixture is smooth and the sugar is dissolved.
- Whisk the egg yolks in a medium bowl. Gently heat the egg mixture by slowly adding ½ cup of the warmed chocolate cream to the egg mixture while continuously whisking. Add another ½ cup of the chocolate cream and temper the egg mixture again. This process is called tempering the eggs, and its purpose is to prevent the eggs from curdling while the custard cooks.
- Pour the warmed egg mixture back into the saucepan with the remaining milk. Bring the mixture to a simmer over medium heat (don't let it boil). Cook until the custard has thickened, stirring constantly, about 4 to 6 minutes. It should coat the back of the spoon and leave a trail when you draw your finger through it.
- Remove the pan from the heat and stir in the vanilla and almond extracts. Strain the custard through a fine mesh strainer into a clean bowl. If the custard boiled during thickening, straining it out will help remove any curdled bits of egg.
- Cool the base using an ice bath (½ ice cubes, ½ water, reaching halfway up the sides of the bowl). Stir the custard occasionally until it's cooled to room temperature (a digital thermometer should read about 80 °F).
- Place a piece of plastic wrap on the surface of the custard and refrigerate until chilled, at least 4 hours or overnight. Chilled custard can be kept in the refrigerator for several days. For the best results, make sure the base is about 40 °F prior to churning.
- Churn the gelato: Pour the cold base into an ice cream maker and freeze per the manufacturer's instructions, about 25 to 30 minutes. The finished gelato will have a soft consistency.
- Layer in the caramel sauce: Transfer ⅓ of the gelato to a freezer-safe container and drizzle ⅓ of the caramel sauce over it. Repeat layering with remaining gelato and caramel sauce, then smooth the top using a small offset spatula.
- Ripen the gelato: Freeze the gelato for 2 to 4 hours to allow it to firm up, a process called ripening. Serve and enjoy!

- Make gelato:
- Scrape seeds from vanilla bean with tip of a paring knife into a small heavy saucepan. Add milk and a pinch of salt and bring just to a boil, then remove from heat.
- Meanwhile, whisk together sugar and cornstarch, then add 1/2 cup hot milk, whisking until smooth. Whisk into milk in saucepan. Bring to a simmer, whisking, then simmer, whisking, 3 minutes. Immediately pour through a fine-mesh sieve into a metal bowl set in an ice bath. Cool to room temperature, stirring occasionally, about 10 minutes.
- Remove from ice bath and chill, covered, 1 hour.
- Prepare cherries:
- Pulse cherries, sugar, and extracts in a food processor until finely chopped, then chill, covered, 1 hour.
- Make ice cream:
- Stir cherries with their juices into gelato mixture and freeze in ice cream maker. Transfer to an airtight container and put in freezer to harden, at least 2 hours.
CHOCOLATE GELATO
This is a super-chocolaty Italian-style ice cream - gelato; use the best ingredients possible, because it really makes a difference. I use 70% chocolate for it.

- Heat milk, 1/2 the sugar, and cream in a heavy saucepan until simmering and sugar is dissolved, about 5 minutes, being careful not to scorch the milk. Remove milk from heat and whisk in cocoa powder and dark chocolate. Allow to cool slightly.
- Meanwhile, beat egg yolks and remaining sugar in a large bowl using a whisk or electric beater until thick and pale yellow. Add about 1 cup of the slightly cooled chocolate mixture in a slow stream to avoid cooking eggs, whisking constantly until well combined. Add the rest of the chocolate mixture and return to the saucepan over medium-low heat. Stir constantly until thickened enough to coat the back of a spoon, about 5 minutes more.
- Strain custard through a sieve into a bowl and cover with plastic wrap touching to mixture to prevent a skin from forming. Refrigerate 8 hours to overnight.
- Pour cold custard into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until hardened, about 1 hour.

Steps:
- 1. Heat the milk and cream in a medium saucepan set over medium heat until tiny bubbled fizz around the pan's inner rim. Adjust the heat so the mixture stays this hot but does not come to a boil. 2. Place the almond paste and sugar in a large food processor fitted with the chopping blade; process until the texture of find sand, about 1 minute. Stop the machine, add the yolks all at once, and process until light and thick, about 2 minutes. (note: if you don't process enough, the end result will taste grainy from the almond paste--still delicious, but a weird texture.) 3. With the machine running, dribble in about half of the hot milk mixture through the feed tube; process until smooth. Then whisk this mixture back into the pan with the remaining hot milk mixture. Instantly reduce the heat to very low--if you have electric burners, place the pan on a second burner just now set on low. Cook slowly, stirring all the while, until the mixture thickens to the consistency of wet but smooth pancake batter and can coat the back of a wooden spoon, a little less than 2 minutes. Strain through a fine mesh strainer into a clean bowl to get rid of any extraneous bits of scrambled egg (and almond paste debris); stir in the almond extract and salt. Refrigerate until cold, for at least 4 hours, or overnight. 4. Just before making the gelato, place the almond custard and your ice cream maker's dasher, if possible, in the freezer to shock them extra cold, for nor more than 10 minutes. (we're trying this on our second batch which is being made tonight and tomorrow--it took a long time for this gelato to set up the first time.) 5. Freeze the custard in your ice cream machine according to the manufacturer's directions.
