ALMOND FLOUR MACADAMIA NUT COOKIES
These almond flour macadamia nut cookies are perfect for satisfying your sweet tooth while still staying gluten free. They're easy to make, healthy, and absolutely scrumptious.

Steps:
- Preheat your oven to 350 degrees.
- In a medium bowl whisk the egg, add the vanilla, coconut oil, salt, and sugar.
- Lastly mix in the baking soda, almond meal, & macadamia nuts.
- Line a baking sheet with parchment paper.
- Scoop out the cookie dough onto the parchment paper.
- Flatten the cookie dough.
- Makes 8 medium cookies.
- Bake for 10 minutes or until golden.
- Leave the cookies on a cookie tray for about 5 minutes, then remove the warm cookies from the cookie tray and place them on a cooling rake to fully cool.

MACADAMIA-ALMOND CHRISTMAS COOKIES
Nancy Fuller's Christmas cookies are filled with macadamia nuts and almonds and finished with a red-and-white striped chocolate kiss candy.

- Put the macadamia nuts in a food processor and process until smooth and buttery (this should measure about 1 cup). Add the sugar, butter and shortening and pulse until blended. Add the eggs and vanilla and almond extracts and pulse until blended. Add the flour, baking soda and salt and pulse until just incorporated. Transfer the cookie dough to a medium bowl and fold in the white chocolate chips, pistachios and cranberries. Cover and refrigerate the dough for 30 minutes. Adjust the oven racks to the upper and lower thirds and preheat the oven to 375 degrees F. Coat 2 baking sheets with cooking spray.
- Scoop out heaping tablespoons of dough, roll into balls and space about 2 inches apart on the prepared baking sheets. (You will need to bake the cookies in batches; be sure to allow the baking sheets to cool in between batches.)
- Bake until the bottoms and edges of the cookies are golden brown but the middles are still soft, about 10 minutes. (The cookies will bake a bit after they come out of the oven) Press a chocolate candy kiss into each warm cookie. Allow the cookies to cool on the baking sheet for a few minutes and then transfer to a rack to cool completely. Store at room temperature in an airtight container for up to 3 days.

I was served this cookie at a restaurant in Springfield, MO during a business conference. Went home and made up this recipe which has been a hit at any church gathering when I take them...better than the one I had at the conference.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the macadamia nuts and white chocolate. Drop dough by teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 minutes in the preheated oven, or until golden brown.
