  • Beat almond flour, eggs, Greek yogurt, salt, and baking soda together in a bowl with a mixer at high speed until creamy.
  • Heat a skillet over medium heat; add just enough olive oil to cover the surface.
  • Ladle 1/4 cup of the batter into the center of the hot skillet; cook until browned, 1 to 2 minutes per side. Repeat with remaining batter.

3 cups almond flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons chilled butter (cut into small pieces)
1/3 to 1/2 cup unflavored Greek yogurt (very thick and cold)
2 large eggs (beaten)
3/4 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350˚F.
  • Stir first four ingredients together in medium bowl.
  • Add butter and cut into almond flour mixture until it resembles coarse oatmeal.
  • Combine eggs and smaller amount of yogurt in a separate bowl before adding to dry mixture. Add shredded Cheddar cheese and stir until all flour is lightly moistened. If dough seems dry, add slightly more yogurt.
  • Use an ice cream scoop or two spoons to dip biscuit dough onto a greased cookie sheet. With damp fingers, lightly tamp each biscuit to give it a flat top but don't flatten.
  • Bake for 15-20 minutes until golden brown.
  • Biscuits are somewhat fragile when warm, so give them time to cool.
  • These freeze well. Split in half and toast the cut half to make a delicious breakfast sandwich.

3 eggs (large)
1/2 cup Greek yogurt
1/3 cup any liquid or dry sweetener
1 tsp pure vanilla extract
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
3 cups almond flour
Cooking spray
3 tbsp cane (coconut sugar or erythritol)
1 1/2 tbsp cinnamon

Steps:

  • Preheat oven to 350 degrees F, line 9 x 5 loaf pan with unbleached parchment paper and spray with cooking spray. Set aside.
  • In a large mixing bowl, add eggs, yogurt, sweetener, vanilla, baking powder + soda, cinnamon and salt. Whisk well until combined.
  • Add almond flour (don't forget to skim the top of measuring cup with a knife) and mix gently with spatula to combine.
  • In a small bowl, whisk sugar and cinnamon. Set aside.
  • Pour half batter into previously prepared loaf pan and sprinkle with half amount of cinnamon sugar.
  • Pour remaining batter on top, sprinkle with cinnamon sugar and swirl with butter knife.
  • Bake for 50 minutes or until a toothpick inserted in the middle comes out clean. Bread will brown nicely on the outside because sugar plus brown cinnamon.
  • Remove from the oven and transfer to a cooling rack to cool off for 10 minutes. Holding onto the flaps of parchment paper remove bread from a loaf pan and let it cool off for another 30-60 minutes before slicing with sharp serrated knife. Because of crusty streusel like topping, bread might fall apart if you attempt to slice it whole hot.

¼ tsp sea salt
½ cup bittersweet chocolate, chopped ((4 oz))
2 TBS butter (or coconut oil, melted)
½ cup granulated sugar
¾ cup Vanilla Greek yogurt**
2 large eggs
1 tsp vanilla extract
¼ to ½ cup chocolate chips (to mix in)
½ cup 4 ounces bittersweet chocolate, chopped
½ cup heavy cream (or coconut cream, or half & half)
½ tsp vanilla extract

Steps:

  • Preheat oven to 350 degrees grease a 9x9" baking pan and set aside.
  • Mix almond flour, cocoa powder and sea salt in a small bowl; set aside.
  • Melt chocolate & coconut oil/butter together in the microwave. Mix until completely melted.
  • Mix in sugar, Greek yogurt and vanilla.
  • Mix in eggs, one at a time until the batter is completely smooth.
  • Add dry ingredients, whisk until just incorporated.
  • Add chocolate chips!
  • Pour batter into prepared pan and bake for 20 to 25 minutes until the top is just barely set and the edges are slightly pulling away from the sides of the pan. (20 = gooier brownies)
  • When brownies are finished baking, place the pan on a wire rack and cool.

¾ cup (150g) sugar
1 tablespoon lemon zest
1 cups (125g) all-purpose flour
1 cup (100g) almond flour
2 teaspoons baking powder
½ teaspoon salt
½ cup slivered almonds (optional)

Steps:

  • Preheat the oven to 350°F (177°F). Spray 8x5 bread pan with a cooking spray.
  • In a large mixing bowl with whisk attachment, beat eggs, yogurt, oil and almond extract until smooth.
  • Add sugar and lemon zest and continue beating until nice and smooth.
  • Sift flour, almond flour, baking powder and salt over the yogurt mixture. Gently fold until all the dry ingredients are incorporated.
  • Pour the batter into the prepared pan.
  • Sprinkle slivered almonds on top, if desired.
