Blanched almonds give this creamy-crumbly cheese a rich texture.

1 cup whole blanched almonds
1/4 cup lemon juice
3 Tbs. plus 1/4 cup olive oil, divided
1 clove garlic, peeled
1 1/4 tsp. salt
1 Tbs. fresh thyme leaves
1 tsp. fresh rosemary leaves

Steps:

  • 1. Place almonds in medium bowl, and cover with 3 inches cold water. Let soak 24 hours. Drain soaking liquid, rinse almonds under cold running water, and drain again. 2. Purée almonds, lemon juice, 3 Tbs. oil, garlic, salt, and 1/2 cup cold water in food processor 6 minutes, or until very smooth and creamy. 3. Place large strainer over bowl, and line with triple layer of cheesecloth. Spoon almond mixture into cheesecloth. Bring corners and sides of cloth together, and twist around cheese, forming into orange-size ball and squeezing to help extract moisture. Secure with rubber band or kitchen twine. Chill 12 hours, or overnight. Discard excess liquid. 4. Preheat oven to 200°F. Line baking sheet with parchment paper. Unwrap cheese (it will be soft), and transfer from cheesecloth to prepared baking sheet. Flatten to form 6-inch round about 3/4-inch thick. Bake 40 minutes, or until top is slightly firm. Cool, then chill. (Cheese can be made up to this point 2 days ahead; keep refrigerated.) 5. Combine remaining 1/4 cup oil, thyme, and rosemary in small saucepan. Warm oil over medium-low heat 2 minutes, or until very hot but not simmering. Cool to room temperature. Drizzle herb oil over cheese just before serving.

Homemade Vegan and Dairy-Free Almond Cheese image

Enjoy this easy-to-make vegan and dairy-free almond cheese. It uses only five ingredients: raw almonds, lemon juice, olive oil, salt, and water.

1 cup whole raw unsalted almonds (skin removed; see blanching and/or soaking almonds below)
3 tablespoons lemon juice
3 tablespoons olive oil
3/4 teaspoon salt
1/2 cup water

Steps:

  • Gather the ingredients.
  • Blanched almonds are almonds that have their skins removed; you can have someone else do it for you or do it yourself. First, start by boiling water over the almonds and let the almonds soak for a few minutes.
  • Drain and rinse the almonds, and then rub the almonds with a towel or just use your fingers to peel and pop the skin off.
  • Removing the skin before making almond cheese gives the cheese a smoother texture and lighter color that looks like cheese. You can make the cheese with the skin on if you prefer.
  • Soak the blanched almonds in cold water for 24 hours before making the cheese. Cover and place in refrigerator.
  • Drain and rinse the almonds well.
  • Put the blanched almonds in a food processor or high-powered blender with the lemon juice, olive oil, salt, and water.
  • Blend until smooth, about 5 minutes.
  • Scrape the mixture into double-layered cheesecloth lining a colander.
  • Gather the cheesecloth tightly around the almond mixture and secure into a bundle by using a rubber band or string to tie the top. Give the bundle a few gentle squeezes to remove liquid. Leave the bundle in the colander and place in the refrigerator overnight over a bowl or rimmed plate to catch any liquid that might drain. Refrigerate for at least 12 hours. This helps the texture of the cheese become firmer.
  • Discard any liquid that drains out. Carefully peel the cheesecloth off of the almond "cheese." The "cheese" will have a consistency similar to cookie dough. At this point, the almond cheese can be eaten immediately as a spread or refrigerated for up to two weeks.

1 cup blanched almonds
1/2 cup water
1/4 cup lemon juice
5 tablespoons olive oil, divided
1 garlic clove
1-1/4 teaspoons salt
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon minced fresh rosemary or 1/8 teaspoon dried rosemary, crushed

Steps:

  • Rinse almonds in cold water. Place in a large bowl; add water to cover by 3 in. Cover and let stand overnight., Drain and rinse almonds, discarding liquid. Transfer to a food processor. Add 1/2 cup water, lemon juice, 3 tablespoons oil, garlic and salt; cover and process for 5-6 minutes or until pureed., Line a large strainer with 4 layers of cheesecloth and place over a large bowl. Pour almond mixture into prepared strainer; bring up corners of cloth and tie with string to form a bag. Refrigerate overnight., Squeeze out any liquid; remove cheesecloth and discard liquid from bowl. Transfer ball to a parchment-lined baking sheet; flatten slightly into a 6-in. circle., Bake at 200° for 35-40 minutes or until firm. Cool. Refrigerate until chilled., In a small skillet, heat the thyme, rosemary and remaining oil over medium heat for 2 minutes. Cool to room temperature. Drizzle over almond mixture. Serve with crackers.

From the Fab Five list in the April 2009 issue of Vegetarian Times. I never thought I'd have enough time to make vegan "cheese," but because this was one of the editors' picks I gave it a shot, and I'm so glad I did! Though it's called "feta cheese," in the title, it really is a creamy spread. I told my DH that it was an "almond spread" and he loved it! Asked what kind of cheese I used in it, and was surprised to learn there was none. The recipe is really easy, but takes lots of waiting time (not included in the times). I'm listing it exactly like in the magazine. But for the oil topping at the end, I think 1/4 cup oil is too much. Personally, I'm cutting it back to 2 tablespoons next time. Enjoy! Edited to add: The original recipe in the magazine says to bake it 200F for 40 minutes, but as several reviewers noted here (and I agree) it's better in a hotter oven. Try 400F and watch for it to brown. Baking is only needed to turn it from creamy to crumbly, so it's completely up to you.

  • Line baking sheet with parchment and transfer almond ball from cheesecloth. Shape to look like a 6" round of brie (about 3/4" thick). (Note, I just put it into a pretty pottery bowl and baked it. Then I could pour the oil on top and serve it. No parchment needed.).
  • Bake 40 minutes or until top is slightly firm. Cool. Then chill.
  • Combine 1/4 cup olive oil with herbs and heat over medium low heat until heated through but not simmering. Cool to room temperature and drizzle over almond spread just before serving.
  • Spread on crusty bread or crakers. You'll love it!

This garlic herb vegan almond cheese spread is bursting with flavour and can be used in so many ways. It's great on crackers, sandwiches, as a veggie dip, and more!

1 cup whole raw almonds ((see notes below))
1/2 cup water
2 tablespoons lemon juice
2 tablespoons nutritional yeast
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 cup finely chopped fresh herbs ((see note below))

Steps:

  • Place the raw almonds into a glass container and cover with water. Cover, and place in the refrigerator. Soak for 24 hours.
  • Drain and rinse the soaked almonds after the 24 hours have passed.
  • Place the soaked almonds, water, lemon juice, nutritional yeast, olive oil, garlic powder, and salt into a high speed blender. Blend until smooth.
  • Empty mixture into a bowl, add chopped herbs and mix until everything is combined.
  • Place in an airtight container and refrigerate for a few hours so the flavour can develop.
  • Store unused spread in the refrigerator in an airtight container for 4-5 days.

  • Soak the almonds for about 8 hours or overnight. After soaking, rinse well. The soaking makes the skins come off easier. The skins have a more bitter taste and there will be light brown flakes in your cheese. If you keep the skins on see notes below.
  • Place a strainer into a bowl with a coffee filter in it. You can use several coffee filters, slightly overlapped, to cover it the strainer (or you can skip the coffee filter and use a cheese cloth if you prefer). Pour the cheese mixture from blender into the coffee filter or cheese cloth. Cover coffee filter or if using cheese cloth twist into ball and tie with a rubber band. Let drain overnight or for 2 - 3 hours.

  • Place the flaked almonds in a large bowl and cover with plenty of boiling water. Set aside for at least half an hour to soak then drain well.
  • Place the drained almonds in a blender or food processor along with the lemon juice, olive oil, water, salt, garlic and nutritional yeast.
  • Blend at a high speed until very smooth and creamy. Scrape down the sides as needed to make sure that there are no lumps of almond left. If you need to you can add a drop more water but try not to add too much. If your blender has a tamper tool then I recommend using it!
  • Scrape the cheese into a bowl and cover. It is ready to eat right away but will firm up in the fridge and the flavours will mellow so I recommend refrigerating it overnight before eating.
