Almond Delights image

This simple recipe is made with almonds and pantry staple ingredients. They are so tender and have the perfect buttery crumb. I love these bars!

1 1/2 cups sugar
3/4 cup melted butter
2 large eggs
1 teaspoons almond extract
1 1/2 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups flour
3 tablespoons sliced lightly toasted almonds
1 tablespoon sugar for garnish

Steps:

  • Grease and flour 9 inch cake pan. Preheat oven to 350.
  • Toast almonds on a cookie sheet for 3 - 5 minutes while mixing batter.
  • Blend melted butter and sugar, and beat in the eggs. Add extracts. Add salt and flour and mix well. Spread into pan. Sprinkle with almonds and 1 tablespoon sugar.
  • Bake 30-35 minutes until golden and toothpick comes out clean.

1/4 Cup Brown Sugar
1/2 Cup Butter
1 Cup Flour
3/4 Cup Coconut
2 Small Bag Siliced Almonds
1 Large Cool Whip
2 Large Pkg Vanilla Instant Pudding
2 2/3 Cup Milk

Steps:

  • Melt butter in cake pan add brown sugar, flour, coconut, almond mix well and bake in oven 350 degrees 15 -20 minutes till brown stirring a few times. Take out and cool. mix pudding and milk till thick than add cool whip until blended. Pour 1/2 pudding mixture into glass 8x12 dish sprinkle 1/2 almond mixture and then repeat finsih with the almond topping and chill.

1/4 c brown sugar, firmly packed
1/2 c margarine, melted
1/2 c sliced almonds
1 c flaked coconut
1 c flour

Steps:

  • 1. Filling: 2 (3 oz) boxes instant coconut pudding 2 cups cold milk, 8 oz. Whipped Topping
  • 2. Stir brown sugar, margarine,almonds, coconut, and flour until blended. Pour into shallow baking pan and bake at 350 degrees for 30 minutes, stirring several times while baking. (will resemble granola). Remove the crumb mixture from oven to cool. Combine pudding, milk, and whipped topping and set in refrigerator to thicken (about 10 minutes). In a 9" square pan, sprinkle 3/4 of crumb mixture; cover with thickened filling, and top with remaining crumbs! DELISH!

Almond pulp, left over from making almond milk, can be made into these tasty, gluten-free, refined-sugar-free, and vegan cookies.

8 pitted dates
2 cups moist almond pulp from making almond milk
⅓ cup rolled oats
¼ cup almond milk
3 tablespoons blanched almond flour
2 tablespoons coconut flour
2 tablespoons coconut oil, melted
1 tablespoon applesauce
1 tablespoon vanilla extract
1 tablespoon cacao nibs, ground
4 pinches ground cinnamon
4 dashes salt
1 dash ground nutmeg
¼ cup water
⅓ cup chopped vegan dark chocolate

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with lightly greased parchment paper.
  • Soak dates in hot water until soft, 6 to 10 minutes. Drain.
  • Combine dates, almond pulp, oats, almond milk, almond flour, coconut flour, coconut oil, applesauce, vanilla extract, cacao nibs, cinnamon, salt, and nutmeg in a food processor. Process to the consistency of cookie dough, adding water if needed.
  • Roll 1 tablespoon of cookie dough with your hands. Pinch sides with your fingers to form a square. Place on the prepared baking sheet and press down with your fingers or a fork to flatten slightly. Repeat with remaining dough.
  • Bake in the preheated oven until golden brown, about 20 minutes. Let cool.
  • Melt dark chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 2 minutes. Drizzle melted chocolate over cookies.

I want to give a very big thank you to a Chef from here on " ZAAR " , who's recipe inspired me to make up my own recipe. :). The Chef who inspired me wants to remain nameless, so that's the way it will be. If you like almonds as much as I do, you really are going to enjoy this cookie.If you are using whole almonds chop them before measuring. Also if you like a cookie that has a sweet/salty thing going on, use the roasted and salted almonds. To flatten the cookies,use the flat bottom of a glass dipped in sugar.The way that this recipe is written gives me 32 cookies, depending on how big you make yours you might get more or less. The time for each cookie sheet is the time for baking. Please let cookies cool on cookie sheet for 2 to 3 minutes before removing, let finish cooling on wire racks. 1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup shortening
1/4 cup margarine
1/2 cup brown sugar
1/2 cup white sugar
1 egg, beaten
1 teaspoon almond extract
1 cup chopped almonds

Steps:

  • Preheat oven to 350 degrees.
  • Sift together flour,soda, and cream of tartar, set aside.
  • In a large bowl, cream together both sugars,shortening, and margarine mixing well.
  • Add egg and extract,mix well.
  • Then add flour to creamed mixture a little at a time until well blended.
  • Stir in almonds.
  • Take 1 Tablespoon of cookie dough and shape into balls, placing on cookie sheets.
  • Flatten each slightly with the bottom of a sugar coated glass.
  • Bake for 10 to 12 minutes, or until just lightly browned, ( Don't let the cookies burn ).

200 g butter
150 g caster sugar
4 eggs
120 g plain flour
1 teaspoon baking powder
30 g ground almonds
100 g baking chocolate

Steps:

  • Cream butter and sugar together.
  • Add in egg yolks.
  • Whisk egg whites until smooth.
  • Fold in sieved flour, ground almonds, egg whites and the melted cooking chocolate.
  • Bake in a loaf tin for 350 degrees Fahrenhit or 180 degrees celcius for about 30 minutes.
  • For the topping, melt 200g cooking chocolate over hot water and pour onto cake.
  • Decorate with almond flakes and cherries.
